Albondigas Soup

Serves 6-8

Meatballs

1/2    pound lean hamburger
1/2    pound lean ground pork
3      tablespoons long grain rice
1      egg lightly beaten
2      tablespoons minced parsley
1/4    teaspoon dried mint leaves
1/2    teaspoon salt
1/8    teaspoon pepper

Mix together well and form into 1 inch balls.

Soup

1     large onion chopped
1     clove garlic minced
3     tablespoons oil
3     10 1/4 ounce cans condensed chicken broth
3     cans water
1     cup sliced carrots
1     cup sliced celery
1     cup sliced green beans
2     tablespoons chopped cilantro or parsley
1     tablespoon chopped green chiles fresh or canned


Saute onion and garlic in oil until tender. Add remaining ingredients and bring to a boil. Add meatballs to soup. Cover and reduce heat to simmer for 30 minutes.
