Cajun Shrimp and Corn Soup

1 stick butter
1 onion
3 cloves fresh garlic, minced
2 cans cream-style corn
1 can stewed tomatoes, diced
2 lbs. small shrimp, peeled
1 1/2 pints half and half
1 1/2 pints whipping cream
1 lb. Velveeta
salt
freshly ground black pepper
Chives for garnish

Heat butter in a large pan and saute onion and garlic until onion is transparent.  Add the corn, tomatoes, shrimp and boil for 10 minutes.  Reduce heat to medium and ad the half and half, whipping cream, cheese, salt and pepper.  When cheese melts remove from heat.  
Serve soup hot and garnish with freshly chopped chives.
