Messages that are not recipe related

I don't mind messages being sent but it has come to my attention(me approving message and other e-mails from other people about their groups)that some messages sent are being considered spam.I will not approve these messages.These groups are for recipes and questions or comments about recipes, not about stuff that has nothing to do about recipes or the kitchen.If I recieve 2 or more of these from the same person I will do what I don't like to do, that is unsub you and ban you from the groups.I hope you underatand and so by this rule. Thank you

If for any reason you want to leave the group. Please don't write into the group to ask to be unsubbed from the group. The owner and moderators can't do that because we don't have your account. There is two ways to do this. The first one is to go to your yahoo group list. Then you push the edit groups. There you will then see where it has the menu of to change your e-mail from one address to another if you have more then one. It also has unsub. Push that then save. It will remove you from the list.The other way is by mail. There is a link at the bottom of the e-mail that you can click to be unsubbed.

Creamy Spinach & Potato Soup

Amy Samuel, North Pole, Alaska

TOTAL TIME: Prep: 25 min. Cook: 20 min.

MAKES: 9 servings

6 cups cubed peeled potatoes

2 medium leeks (white portion only), chopped

2 tablespoons canola oil

1/2 cup all-purpose flour

1 teaspoon sodium-free chicken bouillon granules

3 cups reduced-sodium chicken broth

1 can (12 ounces) reduced-fat evaporated milk

1 package (9 ounces) fresh spinach, chopped

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 cup shredded cheddar cheese

Nutritional Facts

1 cup: 224 calories, 6g fat (2g saturated fat), 10mg cholesterol, 433mg sodium, 35g carbohydrate (7g sugars, 3g fiber), 9g protein.

 

Directions

Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-12 minutes or until tender. Drain. Mash 2 cups potatoes; set aside.

In a Dutch oven, saute leeks in oil until tender. Whisk the flour, bouillon granules and broth until smooth. Gradually stir into pan. Add milk. Bring to a boil; cook and stir for 2 minutes or until thickened.

Stir in mashed potatoes. Add spinach, salt, pepper and remaining potatoes; cook just until spinach is wilted. Sprinkle with cheese. Yield: 9 servings.

CHINESE CORN SOUP

"It's an easy-to-make soup, and especially delicious to eat on a cold day. You can also eat this soup with pasta."

Makes 5 servings

5 cups chicken broth

1 (14.75 ounce) can cream-style corn

1/4 cup butter

1 stalk celery, cut into bite-size pieces

1 onion, cut into bite-size pieces

1 1/2 tablespoons all-purpose flour

1 teaspoon ground nutmeg, or to taste

1 egg, or more as desired

Fresh ground pepper (optional)

 

PREP 15 mins

COOK 15 mins

READY IN 30 mins

Heat the chicken broth in a saucepan over medium heat, and stir in the can of corn. Let the mixture heat to a boil, stirring occasionally, and reduce heat to a simmer.

In a skillet over medium-low heat, melt the butter and cook and stir the celery and onion until tender, about 5 minutes. Stir in the flour, and cook and stir for about 2 minutes to remove the raw taste from the flour. Add the vegetable mixture to the saucepan, whisking in the flour to avoid lumps, and stir in the nutmeg. Let the soup return to a simmer.

Whisk the egg in a bowl until thoroughly beaten. Stir the soup slowly in a clockwise circular motion, and slowly pour the egg into the moving soup. Stir the egg lightly through the soup with a fork to produce egg strands, and sprinkle with black pepper to serve.

{soups-salads-and-salad-dressings} 3-Bean Salad

 

3 BEAN SALAD 
1 (15 oz) can 3 Bean Salad
4 cloves garlic, finely minced
2 tbsp. balsamic vinegar
1/4 tsp. basil, dried
1/4 tsp. salt, sea
1/4 tsp. black pepper, ground
1/4 tsp. garlic powder
1 tbsp. shallot, raw, chopped
1 large onion, raw
1/8 tsp. celery seed
1 large green pepper, sweet, raw (bell), large
1/4 tsp. dried parsley
1/2 tsp. oregano
3 tbsp. extra virgin olive oil

In a medium bowl, combine all ingredients except olive oil. Mix well and allow to marinate for 30 minutes at room temperature. (This helps the garlic, shallot and onions to mellow and infuses the oil with the herbs.)

Just before serving, stir in olive oil and mix well. Taste and adjust seasonings.

Makes 5 servings.

{soups-salads-and-salad-dressings} Blackbean Turkey Chili

 

This recipe produces a mildly spicy chili. You can easily add more chili powder or some cayenne to intensify the spice level if you wish. You can also add chipotle chili powder or chipotle Tabasco to give a smoky note to the chili.

As for the red bell peppers, Trader Joe's has frozen sliced bell peppers that work well for this dish.

  • Prep time: 10 minutes
  • Cook time: 1 hour, 15 minutes
  • Yield: Serves 6

INGREDIENTS

  • 3 Tbsp olive oil
  • 1 medium onion, chopped (about 1 cup)
  • 1 carrot, chopped (about 1/2 cup)
  • 2 to 3 red bell peppers, chopped (about 2 cups)
  • Salt
  • 2 cloves garlic, minced (about 2 teaspoons)
  • 2 Tbsp chili powder (more to taste)
  • 1 teaspoon ground cumin
  • 1 pound ground turkey (I use ground turkey thighs for more flavor)
  • 3 cups chicken stock
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 Tbsp tomato paste
  • 1 Tbsp cider or white vinegar
  • 2 15-ounce cans black beans, drained
  • Freshly ground black pepper

METHOD

1 Sauté carrots, onions, bell peppers: Heat the oil in a large, thick bottomed pot (6 to 8 quart) on medium heat. Add the chopped onion, carrot, and bell peppers, sprinkle with salt and cook until softened, about 6-8 minutes.

2 Add the minced garlic, chili powder, and cumin and cook for a minute more.

3 Add the ground turkey and break it up with a wooden spoon. Increase the heat to medium high. Stir and cook until the turkey is no longer pink.

4 Add the chicken stock, oregano, bay leaf, vinegar, and tomato paste. Use a straight edge spatula or wooden spoon to scrape up any browned bits from the bottom of the pan.

5 Add the black beans. Bring to a boil, lower to a simmer, and cook, covered for half an hour, and uncovered for another half hour, or until the the liquid thickens. Remove bay leaf.

Adjust seasonings, adding salt and pepper to taste.

Serve with rice or heated corn tortillas.
