WW 0 POINT CABBAGE SOUP

3 cups beef broth
2 tablespoons olive oil
2 cloves garlic -- minced
2 teaspoons thyme -- chopped
2 teaspoons basil -- chopped
2 teaspoons oregano -- chopped
1 tablespoon tomato paste
2 cups cabbage -- chopped
1/2 yellow onion -- diced
1/2 cup carrot -- sliced
1/2 cup celery -- sliced
1/2 cup cauliflower -- broken in pieces
1/2 cup zucchini -- sliced

1. In a large pot, saute garlic, onion, and carrots in olive oil.

2. Add into the pot beef broth, herbs tomato paste, cabbage, and celery. Let simmer on low until veggies are tender.

3. Add in the cauliflower and zucchini, and simmer until tender.

4. Serve warm, enjoy

VAL'S TACO SOUP

1 1/2 pounds extra lean ground beef
1/2 cup onion -- chopped
1 (28 oz.) can diced tomatoes -- undrained
1 (15 oz.) can kidney beans
1 (15 oz.) can whole kernel corn
1 (8 oz.) can tomato sauce
1 1/2 cups water
1 envelope taco seasoning mix
salt and pepper -- to taste
1 cup cheddar cheese -- shredded
sour cream

1. In dutch oven cook beef and onions until beef is browned and onion is tender. Drain. Stir in tomatoes, beans, corn, tomato sauce, water and taco seasoning. Season with salt and pepper.

2. Simmer 15 minutes. Garnish with cheese and sour cream

PEANUT BUTTER OREO APPLE SALAD

4 large Granny Smith apples, cored and cubed (I leave the peels on)

3.75 ounces french vanilla pudding mix

1 1/4 cup skim milk

3 tbsp. creamy peanut butter (you can go more or less here)

8 ounces Cool Whip

15-20 Oreos. chopped

In a large bowl, whisk together the pudding mix and milk. Once smooth, immediately whisk in the peanut butter.

Fold in the cool whip, and mix until smooth.

Add the apple cubes and Oreo pieces. Mix until coated well.

Cover and chill until serving. Can be served immediately or stored up to 2 hours. I think it's best about 30-60 minutes after making.

Optional: drizzle with melted peanut butter and chocolate syrup as shown.

GRANDMA'S HOMEMADE POTATO SOUP

2 pounds russet potatoes -- peeled fand cut into large chunks (about 1 1/2 inch)
1/2 cup sweet onion -- chopped
1/2 cup celery -- chopped
3 tablespoons flour
Kosher salt and freshly cracked black pepper -- to taste
1/4 to 1/2 cup salted butter -- (1/2 to 1 stick)
water to cover
1 (12 oz.) can evaporated milk
Shredded cheese -- for garnish, optional

1. Toss the potatoes with the onion, celery, flour and salt and pepper; set aside for about 10 minutes.

2. Meanwhile melt the butter in a Dutch oven or soup pot. Add the potato mixture to the pot; stir to coat. Add enough water to cover the potatoes and bring to a boil; stir in the milk, reduce to a simmer, and cook, uncovered, stirring occasionally about 25 to 30 minutes, or until potatoes are tender. Taste, adjust salt and Pepper, and continue cooking on simmer, uncovered, until the soup reach desired consistency and thickness. Garnish each serving with shredded cheese if you like and serve immediately.

Per Serving (excluding unknown items): 325 Calories; 7g Fat (18.4% calories from fat); 11g Protein; 56g Carbohydrate; 4g Dietary Fiber; 25mg Cholesterol; 117mg Sodium. Exchanges: 3 Grain(Starch); 1/2 Vegetable; 1/2 Non-Fat Milk; 1 Fat.

NOTES : COOK'S NOTES: may also substitute green onion. Use an immersion blender or potato masher to puree the potatoes, if a less chunky texture is desired.

VARIATION: Brown several slices of bacon, set asit and crumble. Add the potato mixture and procdeed with the recipe. Garnish with crumbled bacon.

POTATO SOUP WITH CAJUN SAUSAGE; slice one pound of andouille sasusage into 1-inch slices and brown in oil; remove and set aside. Add butter to pot and continue with recipe.

CHEESY HAM AND POTATO SOUP: Add in 2 cups of smoked ham, cubed with the potatoes. Just before serving, stir in 1 1/2 cups of shredded cheddar cheese, just into melted.

INSTANT POT/ELECTRODNIC PRESSURE COOKER: Prep potatoes as above and let rest. Use saute function to melt butter, and potato mixture, toss to coat and top with water (or chicken broth) to coverr, plus an inch. Stir in half of the milk. Seal and cook on high for 10 minutes. Quick release and mash some of the potatoes, is desired. Stir in remaining milk and any additional chicken broth or water as needed to bring to desired consistency. Add cheese if using and garnish as desired.
