We’re going to St. Louis to Restaurant Depot and he’s taking me by my favorite store, Bed Bath & Beyond!   See you tomorrow.

 

Mary's Most Requested Salad

Ingredients

1 bag spring salad mix 

1 bag romaine 

3 oz bag of Oscar Mayer real bacon (It's best to make your own bacon - but I almost always cheat - applewood smoked bacon is awesome with this salad)

1/2 cup dried cherries or cranberries

1 large granny smith apple, chopped

1/2 cup toasted pecans or almonds

5 oz  Gorgonzola or blue cheese crumbled

 

Directions
Clean lettuce, place in large bowl and top with ingredients - toss.  
Tips
You can add more or less of each ingredient - do what you prefer.  

Chop the apple right before serving to prevent it from browning.  

To toast almonds or pecans - place in skillet on medium high heat, stirring until they are toasted.

If you plan on serving the entire salad, go ahead and add the dressing a little at a time, blending until you reach desired amount.  If not, keep dressing separate and add individually.

This salad is great with grilled chicken tossed on top for a meal.

Mary's Sweet Balsamic Dressing 

Ingredients
1/2 cup vegetable oil or canola

1/3 cup sugar

3 tablespoons good balsamic vinegar

1/8 teaspoon dry mustard (or a little squeeze of yellow or Grey Poupon mustard)

Few twists of fresh cracked pepper Or use 1/8 tsp of regular ground pepper

 

Directions
Whisk all the ingredients together, until sugar and oil are blended.  It takes a few minutes for the oil and sugar to blend.  Keep whisking....it will blend.

Sweet Corn, Cucumber Salad

Yield: 6 servings

For the salad

4 cups sweet corn kernels (frozen or cut off cob, blanched and cooled)

2 cups diced cucumber (peeled and seeded if seeds are large)

1/2 cup diced sweet pepper of any color

1/4 cup diced sweet yellow onion

2 to 3 large fresh basil leaves, finely chopped

 

For the dressing

3 tablespoons pesto or amogio (recipe below)

1 tablespoon mayonnaise

Sea salt and freshly ground black pepper to taste

Notes: This salad can be made several hours up to a day in advance. It will hold several days in the refrigerator for leftovers.

• Amogio may be used fresh over pasta or meat. Keep it in the refrigerator to use as needed. It will solidify a bit in the refrigerator.

 

1. In a large mixing bowl, add corn, diced cucumber, pepper and onion and toss to blend. Add basil and blend.

2. Stir pesto or amogio and mayonnaise together to make the dressing.

3. Toss the vegetables with the dressing, until just coated but not dripping. This is not a heavily dressed salad.

4. Add a sprinkle of sea salt and few grinds of pepper to finish.

5. Cover and refrigerate until served.

Per serving: 155 calories; 6g fat; 1g saturated fat; 1mg cholesterol; 4g protein; 25g carbohydrate; 9g sugar; 3g fiber; 13mg sodium; 20mg calcium.

Amogio

Yield: About 1 1/4 cups

3 tablespoons finely chopped garlic

1/4 cup finely chopped flat leaf Italian parsley

1 tablespoon finely chopped fresh basil

2 mint leaves, finely chopped (optional)

1/2  cup olive oil

1/4 cup lemon juice (fresh is better)

1/4 cup dry white wine

Pinch of red pepper flakes

Salt and pepper to taste

 

1. Finely chop the garlic, parsley, basil and mint in a food processor or with a hand food chopper.

2. Whisk in the olive oil, lemon juice, wine. Add pepper flakes, salt and pepper.

3. Taste and adjust salt and pepper as desired.

Tortellini and Pepperoni Pasta Salad

serves 8

1 (20-ounce) package refrigerated cheese tortellini

1 cup fresh mozzarella, cubed

1 cup pepperoni, chopped 

1 cup cherry tomatoes, cut in half

1/3 cup fresh basil, chopped

2/3 cup Caesar Vinaigrette salad dressing

 

 

Cook tortellini according to package directions; drain. Rinse with cold water and allow to completely drain. In a large bowl, combine cooked tortellini, mozzarella, pepperoni, tomatoes and basil. Pour Caesar salad dressing over mixture, toss well to coat. Transfer cooked tortellini to a large bowl and add remaining ingredients. Toss well. Refrigerate at least 1 hour before serving.

From the plump grapes to the sweet cranberries, this lightened up sandwich won’t even taste healthy! PROMISE!

INGREDIENTS:

2 cups leftover rotisserie chicken

1/2 cup diced red onion

1/2 cup diced apple

1/2 cup grapes, halved

1/4 cup dried cranberries

1/4 cup slivered almonds

1/2 cup plain Greek yogurt

1 tablespoon freshly squeezed lemon juice, or more, to taste

1/2 teaspoon garlic powder

Kosher salt and freshly ground black pepper

8 slices bread

4 leaves Boston Bibb lettuce

 

DIRECTIONS:

1. In a large bowl, combine chicken, red onion, apple, grapes, dried cranberries, sliced almonds, Greek yogurt, lemon juice, garlic powder, salt and pepper, to taste.

2. Serve sandwiches on bread with chicken mixture and lettuce.

Everyone knows Joyce Kilmer’s love song to trees — “I think that I shall never see/ a poem lovely as a tree.”  (Jodi memorized this as a child.  It was one of my mom’s favorite poems)

That’s the way I feel about tomatoes. Accordingly, Chilled BLT Soup puts the “T” in BLT. Yes, there’s bacon and lettuce, and some toast, too, in the form of croutons. But the star of this show is the tomato in its season.

How do you know whether you’re buying a good tomato? To start, pick it up. It should feel heavy, which lets you know it’s ripe and juicy. Then take a whiff of the stem end. It should smell strongly like ... a tomato. Once you get it home, store it on the counter, out of the sun. If it’s not fully red, just leave it alone. It will continue to ripen at room temperature. Don’t put a whole uncut tomato in the refrigerator. Chilling it will kill the flavor and the texture.

You want to salt your tomatoes ahead of time, before you cook them, a step that helps to concentrate their flavor. First salt the large tomatoes, which form the base of the soup. Then salt the quartered tomatoes, which provide crunch.

The tomatoes in this recipe don’t need to be seeded or peeled. That’s because you’re going to puree them in a blender until smooth. (Use a blender, not a food processor, which doesn’t produce a smooth texture.) Also, if you seed the tomatoes, you lose a lot of the jelly surrounding the seeds — and that jelly is where the tomato essence lives.

On the chance that you’ve somehow underrated tomatoes before, this deeply flavorful and refreshing soup will show you what you’ve been missing.

Ingredients

Yield: 4 servings

3 pounds large tomatoes

Kosher salt

2 cups 1/2-inch bread cubes

3 tablespoons extra-virgin olive oil, divided

4 slices bacon

1 pound cherry tomatoes, quartered

1/3 cup mayonnaise

1/2 teaspoon finely minced garlic

1 teaspoon fresh lemon juice

1 tablespoon sherry vinegar

Black pepper

1 cup shredded romaine

 

Directions

1. Preheat oven to 425 degrees.

2. Core and cut the large tomatoes into 1/2-inch thick wedges. In a large bowl toss the wedges with 1 teaspoon salt and set them aside for 1 hour.

3. Meanwhile, on a large rimmed sheet pan toss the bread cubes with 1 tablespoon olive oil until they are well coated. Sprinkle them very lightly with salt and toss again. Bake on the middle shelf of the oven until they are golden, 6 to 8 minutes. Set them aside to cool.

4. In a medium saucepan over medium heat, cook the bacon until it is crisp, about 5 minutes. Transfer to paper towels to drain. When the bacon is cool, crumble it and set it aside.

5. In a strainer set over a bowl toss the cherry tomatoes with 1/2 teaspoon salt and let them drain for 15 minutes.

6. In a small bowl combine the mayonnaise with the garlic, the lemon juice and 1 tablespoon of the tomato juice from the drained cherry tomatoes and stir well.

7. Working in batches, transfer the tomato wedges and their liquid to a blender and blend until very smooth. Transfer to a bowl, stir in the remaining 2 tablespoons olive oil, the sherry vinegar, and salt and pepper to taste. Add the cherry tomatoes and chill the soup until it is cold.

8. To serve: Spoon 1/4 of the soup into each of the 4 soup bowls. Drizzle each portion with some of the mayonnaise and top with the bacon, the romaine and the croutons.

Per serving: 380 calories; 28g fat; 13mg cholesterol; 573mg sodium; 27g carbohydrate; 6g fiber; 13g sugar; 8g protein.
