BLACK BEAN AND RICE SALAD WITH ORANGE DRESSING

This picnic salad is a flavorful departure from the typical potato or pasta salad. Impress your guests with Zatarain's Black Beans and Rice and a homemade orange dressing that's sure to be a hit at your next barbecue.

Serves: 6

Serving Size: 2/3 cup

2 1/4 cups water

1 package ZATARAIN'S® Black Beans and Rice

Orange Dressing:

1 can (7 ounces) whole kernel corn, drained

1/2 cup diced red bell pepper

1/4 cup diced green bell pepper

1/4 cup thinly sliced green onions

1/4 cup orange juice

2 tablespoons chopped cilantro

2 tablespoons cider vinegar

2 tablespoons olive oil

 

15 mins Prep time

25 mins Cook time

Bring water to boil in medium saucepan. Stir in Rice Mix; return to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender. Remove from heat. Let stand 5 minutes.

Spoon rice mixture into large bowl. Cool to room temperature. Fluff with fork.

Mix remaining ingredients in medium bowl. Add to rice mixture; mix well. Serve immediately. Or, cover and refrigerate until ready to serve.

{soups-salads-and-salad-dressings} (4th of July) Broccoli Salad

 

Broccoli Salad

yield: 6 (1 SCANT CUP) SERVINGS

INGREDIENTS:

  • ½ cup chopped red apple
  • 1 teaspoon lemon juice
  • 8 slices center cut bacon, cooked crisp and chopped
  • 3 cups chopped broccoli florets
  • ¾ cup sliced red grapes
  • ½ cup shredded or matchstick carrots
  • 1 medium scallion, chopped
  • 1/3 cup sunflower seeds
  • ½ cup low fat mayonnaise (I used Hellmann's)
  • 2 tablespoons granulated sugar
  • 1 tablespoon apple cider vinegar

DIRECTIONS:

  1. Place the chopped apples in a large mixing bowl and add the lemon juice. Stir to coat the apples. Add the chopped bacon, broccoli florets, grapes, carrots, scallions and sunflower seeds and stir until well combined.
  2. In a separate dish, combine the mayonnaise, sugar and apple cider vinegar and stir until combined. Add the mayo mixture to the other ingredients and stir until well coated. Store in the refrigerator and serve chilled or at room temperature.

* When I measured the entire finished recipe it came out to about 5 ½ cups total, so I listed the serving size as 6 scant cups.

Potato Salad Recipe
Many years ago I was making potato salad with my sister in law. She asked what I did different because mine tasted so much better. She used same ingredients as I did. My mom who was a wonderful cook told me the secret to good potato salad was to cook the potatoes with the jacket (skins) on. Makes a world of difference. Also they are much easier to peel after they are cooked. The following is what I put in my salad. There are no exact measurements.

Cooked potatoes (cut in small pieces not mashed)
chopped onion
chopped pickle relish
Chopped hard boiled eggs

The dressing is just by taste:

Mayo
yellow mustard
vinegar
sugar.

Also I like to mix the potato salad while the potatoes are still warm and then put salad in frig until cold.

BLACK BEAN, CORN AND TOMATO SALAD

This is a terrific way to use leftover cooked ears of corn. Canned beans are a bonus for fiber and protein.

3 tablespoons fresh lemon juice

2 tablespoons olive oil

15-ounce can black beans, rinsed and drained

1 cup cooked fresh corn kernels (from about 2 ears; can use leftover ears of corn)

1 plum tomato, seeded and chopped (or 1 small regular tomato)

1 scallion, minced

2 tablespoons minced fresh parsley leaves

A shake or two of hot sauce

In a bowl, whisk together lemon juice, oil and salt to taste. Stir in remaining ingredients, with salt and pepper to taste. Let salad stand, stirring once or twice, for about 15 minutes for flavors to develop. Serves 2.

Note: Recipe can be doubled or tripled.
