Beef, Barley, and Vegetable Soup

2 tablespoons vegetable oil
1 pound beef stew meat
1 pound meaty beef bones (such as beef shank bones)
3 celery stalks, chopped
1 large onion, chopped
1/4 cup pearl barley
4 cups water
2 14 1/2-ounce cans beef broth
1 28-ounce can diced tomatoes in juice
1 10-ounce package frozen corn kernels
2 cups frozen sliced okra
2 small bay leaves
2 teaspoons garlic powder
1 1/2 cups frozen peas
1 1/2 to 2 teaspoons hot pepper sauce

Heat oil in large pot over medium-high heat. Add stew meat and
bones; saute until beef is dark brown, about 8 minutes. Transfer beef
and bones to plate. Add celery, onion, and barley to pot. Saute until
onion is golden, about 15 minutes. Add 4 cups water, beef broth,
tomatoes with juices, corn, okra, bay leaves, and garlic powder.
Return beef and bones to pot and bring to boil. Reduce heat to
medium-low and simmer uncovered until beef is almost tender, about
1 hour.

Add peas and 1 1/2 teaspoons hot pepper sauce to soup. Cover and
simmer until beef is tender, about 30 minutes longer. Season with
salt, pepper, and more hot pepper sauce, if desired.

Beef Barley Soup with Crusty Hard Rolls
1 pound stew beef cut into small pieces
2 garlic cloves, minced
6 cups beef broth
4 cups water
1 14.5 ounce can of crushed tomatoes
1 1/2 cups onion chopped
1 1/2 cups diced carrots
1 C. diced celery
1/2 pound chopped mushrooms
3/4 cup pearl barley
1 teaspoon oregano
salt and pepper to taste
Brown stew beef in 6 quart stock pan. Add garlic and onions and cook for
3 minutes. Add water, beef broth, tomatoes and cook until beef is
tender, about 1 hour. Add vegetables, barley and spices. Cook 45 minutes
or until barley is tender. Season with salt and pepper.

Crusty Hard Rolls
Starter:
1/2 cup warm water
1 cup flour
1/8 teaspoon yeast
Mix together, cover, let rise over night.
Dough:
All of starter
3 1/2 cups flour
1 cup warm water
1 1/2 teaspoons salt
1/4 teaspoon yeast
Combine all ingredients. Let rise for 3 hours, punching down and turning
over after one hour and again after 2 hours. Divide into 12 pieces, shape
into balls and firm them up by rolling them under your lightly cupped
fingers on an unfloured surface. Place the rolls on parchment lined
baking sheet, cover, let rise 1 1/2 hours. Refrigerate several hours or
overnight. Remove from refrigerator, brush with 1/2 cup water mixed
w/egg white. Slash a 1/4 inch cut across each top and bake in 425 degree
oven for 20 to 25 minutes.

White Bean and Vegetable Soup
3 tablespoons olive oil
2 cups chopped onion
2 cups chopped celery
2 cloves garlic
1 bay leaf
1 teaspoon dried thyme
1 teaspoon dried rosemary, crumbled
2 cups sliced carrots
8 small red potatoes, chopped
1 pound dried white beans, i.e. Great Northern, soaked in enough cold
water to cover them by 2 inches overnight and drained
5 cups vegetable or chicken stock
1 cup white wine
1/2 cup chopped parsley
Parmesan, freshly grated
In a large pot heat olive oil over moderately high heat and cook onion,
celery, bay leaf, thyme and rosemary, stirring occasionally until onion
and celery are translucent. Add minced garlic and cook for 1 minute. Add
the carrots, red potatoes, beans, stock and 5 cups of water and bring
soup to a boil. Reduce heat and simmer soup, covered, for 1 1/2 to 2
hours, or until beans are tender. Stir in the wine and additional stock
or water to achieve desired consistency. Remove bay leaf. In a blender
puree 2 cups of the soup until smooth and stir into soup. Adjust
seasoning with salt and pepper and stir in parsley. Serve soup with
Parmesan.

Guy Fieri's Ranch Dressing

5 cloves garlic, peeled
1 teaspoon salt, divided use
1/3 cup sour cream
1/2 cup mayonnaise
1 cup buttermilk
3 tablespoons chives, freshly chopped
2 tablespoons Italian parsley leaves, freshly chopped
1/2 teaspoon dried dill
1 teaspoon freshly cracked black pepper
1 tablespoon white wine vinegar

Make a garlic paste, smashing the garlic with the flat side of a knife and
combining with ½ teaspoon salt. You should have about a tablespoon of garlic
paste.

In a medium bowl, combine the tablespoon of garlic paste with the remaining
ingredients. Blend well with a fork or a stick blender. Cover and refrigerate
for at least an hour before serving.

Makes about 1 1/2 cups

Mexican Beef & Bean Stew
from Campbell's Kitchen

Prep Time: 15 min.
Cook Time: 8 hr.

1 1/2 lb. beef for stew, cut into 1" pieces
2 tbsp. all-purpose flour
1 tbsp. vegetable oil
1 can (10 3/4 oz.) Campbell's® Condensed Beef Consommé
1 cup Pace® Thick & Chunky Salsa
1 cup coarsely chopped onion
1 can (about 15 oz.) pinto beans, drained
1 can (about 16 oz.) whole kernel corn, drained
2 tbsp. chili powder
1 tsp. ground cumin
1/2 tsp. garlic powder OR 2 cloves garlic, minced

COAT beef with flour. Heat oil in skillet. Add beef and cook until browned.

PLACE beef, consommé, salsa, onion, beans, corn, chili powder, cumin and garlic powder in 3 1/2-qt. slow cooker.

COVER and cook on LOW 8 to 10 hr.* or until done.

Serves 6.

TIP: *Or on HIGH 4 to 5 hr.

Serve with prepared cornbread and a crisp green salad.

4 to 6 servings * 1 leek, green parts too if you have 'em, sliced in half and thoroughly washed
* 1 carrot, chopped in half
* 3-inch hunk fresh ginger
* 1 teaspoon whole coriander seeds
* 1 teaspoon whole black peppercorns
* 2 chicken breasts on the bone, with skin
* 3 (14-ounce) cans creamed-style corn
* 2 chicken bouillon cubes, crumbled
* 3 tablespoons finely chopped ginger
* 4 scallions, chopped finely, white and green parts (reserve some green for final garnish)
* 1 teaspoon sesame oil
* 1/4 cup cornstarch
* 1/4 cup cold water
* 2 egg whites
* 1 teaspoon unseasoned rice vinegar
* Kosher salt and freshly ground black pepper
* Soy sauce, for serving

* Special equipment: cheesecloth
Pour 10 cups water into a big stock pot and bring to a boil over high heat. While it's coming to temp, throw in the leek, carrot, and hunk of ginger. Place the coriander and peppercorns into a small square of cheesecloth. Tie with kitchen string and add to the pot.
Skin the chicken breasts, remove any excess fat, and throw the chicken breasts into the pot. Allow the whole lot to come to a boil, and then turn it down and simmer, covered, until the chicken is cooked and tender, 20 to 30 minutes.
Remove the chicken and allow to cool. Strain the stock and discard the leeks, carrots, ginger, and cheesecloth sachet.
Return the stock to medium heat. Add the creamed corn, bouillon cubes, Ginger-Garlic Paste, scallions, and sesame oil. Keep the soup at a gentle simmer while you remove the chicken from the bone and shred finely using a fork. (Or you can just slice it really thinly.)
Turn up the heat to high and bring the soup to a boil. In a small bowl or measuring cup, mix the cornstarch with the water until smooth. Add half to the soup whilst stirring. Allow to boil until it's thickened to the soup consistency of your liking. (If it doesn't thicken, add the remaining slurry.)
Turn the heat back down to medium. In another small bowl, beat the egg whites with a little water. Stir the soup in circles as you add the egg whites in a steady stream; it should form pretty white wisps on the surface of the soup.
Add the shredded chicken and rice vinegar. Cook for 5 minutes, allowing everything to warm through. Taste for seasoning. Serve with a splash of soy sauce and some of the reserved scallion greens

Christmas Seafood Soup

For as long as I can remember, we always had this wonderful soup on
Christmas Day. In our part of the country, where winters are long and cold, this sure warms us up.

* 2 cans (6-1/2 ounces each) chopped clams
* 2 cups diced peeled potatoes
* 2 cups chopped celery
* 2 cups diced carrots
* 1/2 cup water
* 2 cups milk
* 1 package (5 ounces) frozen cooked salad shrimp, thawed
* 4 bacon strips, cooked and crumbled
* 2 teaspoons minced fresh parsley
* Salt and pepper to taste

Drain the clams, reserving juice; set clam aside. In a large saucepan or Dutch oven, combine clam juice, potatoes, celery, carrots and water.
Bring to a boil. Reduce heat; cover and cook for 15 minutes or until
vegetables are tender. Add the milk, shrimp, bacon, parsley, salt, pepper and reserved clams; heat through. Yield: 7 servings.

Hearty Potato Vinaigrette Salad
Serves 8
Prep time - 5 minutes
Cooking time - 18 minutes

Fixed this for my hubby and myself last night. It was so good!

10-12 medium potatoes
4-6 eggs
1 head lettuce or equivalent amount of greens
4 Tbs white vinegar
2 Tbs vegetable oil
1 Tbs sugar
4 Tbs real Wisconsin butter or olive oil (I used olive oil)
4 tsp NORTHWOODS SEASONING **see below

Traditionally done with peeled potatoes, skins can be left on if well scrubbed. Cut potatoes into approximately 3/4 inch pieces and cook in boiling water until cooked through, about 10 minutes. at the same time hard-boil the eggs. An easy method is to place eggs in a pan of cool water on medium high heat. When water comes to a boil, cover, remove from heat and let stand 18-20 minutes, rinse and peel.

Clean and tear lettuce or greens into bite-size pieces. Mix vinegar, oil and sugar, and toss with the lettuce. Drain potatoes and lightly break potato cubes with a form, but don't mash completely, then place equal amounts on the lettuce beds. Add 1 Tbs fresh butter, in small pats, to each serving - you can substitute olive oil if you feel you must(my husband cannot eat butter, so the olive oil works well for us).

Slice eggs and arrange attractively across the top of the potatoes. Sprinkle 1 tsp NORTHWOODS SEASONING across the top of each serving, and serve while warm. Feeds four at a very reasonable cost.

Country Dijon Tuna Pasta Salad
1 pound elbow OR any round-shaped pasta, cooked according to package directions
1 cup non-fat plain yogurt
1/4 cup whole grain Dijon-style mustard
1 cup diced celery
1/2 cup diced green bell pepper
1/2 cup diced red bell pepper
1/2 cup diced red onion
1 (12-oz.) can Solid White Albacore Tuna in Spring Water
Garlic salt and pepper
 
Drain and rinse pasta in cold water; set aside. In a large bowl, mix yogurt and mustard until well blended. Add celery, bell peppers, onion and pasta into dressing mixture; blend well. Gently fold in Chicken of the Sea® Tuna. Add garlic salt and pepper to taste if necessary. Serve immediately OR chill until ready to serve. Makes 10 servings.
