{soups-salads-and-salad-dressings} Off-Topic Mise-en-place like a pro

 

There will be no recipes tomorrow.  We are going to St. Louis for the follow-up visit with my shoulder doctor.  I had a CT scan and he wants to see it.  The appointment is at 11, (we live two hours away), then we have to go to Restaurant Depot for supplies for the ice cream store, go see our son, and then probably battle rush hour traffic out of the city.  Sigh!  I’m off Thursday and only have a few errands to run, so I hope to be back on schedule then. 

 

This is good advice.  I know they’re trying to sell you their little cups, etc. but I do have little glass bowls ($ Tree) and if I’m making a complicated recipe, I do try to do this.

 

We all know what it feels like to stop in the midst of a recipe and have to retrieve something or slice something.  This is something we should ALL DO!

I thought this recipe for clam chowder was interesting. I don't think my hubby would eat it as it is too different than what we are used to.

NEW JERSEY CLAM CHOWDER

1/4 pound bacon
2 medium onion
24 Chowder clams -- liquor reserved
2 1/2 cups potatoes -- sliced, cooked
1/2 teaspoon pepper
1 teaspoon celery powder
2 tablespoons Crab spice -- (Old Bay)
2 cans cream of asparagus soup
2 pints light cream
4 tomatoes -- cut and seeded
asparagus -- garnish


1. Fry bacon in soup pot until crisp, remove. Saute onion till clear, add clams, liquor, and heat to cook clams. Add potatoes & spices and cook briefly. Add soup, tomatoes and cream. Simmer 10-15 minutes. Do not boil. Add clam broth to taste. Garnish with asparagus spears.

I am personally not a fan of bell peppers, but I can’t just send recipes I LIKE!  LOL

Roasted Red Pepper Soup

This bold and flavorful soup is made from roasted red peppers. My kids say it tastes like pizza! The perfect warm and comforting dish!

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 6

Ingredients

6-8 Red Bell Peppers

1/2 an onion chopped

2 tablespoons olive oil

5 cloves of garlic

4 cups of chicken stock

2 teaspoons hot sauce (I used Sriracha)

1/2 teaspoon salt

1/2 teaspoon pepper

1/4 cup sour cream

1 teaspoon dried oregano

Instructions

Clean the bell peppers, cut them in half and remove the seeds and membranes.

Place them on a baking sheet covered in foil, pressing them down to make them as flat as possible. Place the garlic cloves on the baking sheet among the peppers.

Place the baking sheet of peppers and garlic under the broiler in the oven and broil for about 15 minutes until the skins are blackened. Remove from the oven and place the peppers inside a Tupperware container, and close the lid. This will allow the steam to soften them more. Keep in there for another 15 minutes.

While prepping the bell peppers, in a frying pan sauté the onions with the olive oil until the onions are soft and translucent.

After peppers have cooled enough to touch, about 15 minutes. Remove from the Tupperware and peel off the burnt skin. It will peel off. (I only peeled the burnt parts that were easily removed and left the skin that was still red and attached)

Place the bell pepper, garlic cloves, and onion into a food processor and processes for about 3-5 minutes until there are no large chunks left.

Add the mixture to a large pot, add in the chicken stock, hot sauce, salt, and pepper. Bring to a simmer, cover and allow to simmer for another 20 minutes.

Remove from the heat. Stir in the sour cream. Place the oregano in your hand and crush it up slightly to release the flavor and to make the pieces smaller, then pour into the pot. Stir until completely combined.

Serve with extra sour cream and fresh herbs on top if desired.

Ingredients

·                                 1/2 cup reduced-fat mayonnaise

·                                 2 tablespoons minced fresh parsley

·                                 1 tablespoon lemon juice

·                                 1 tablespoon cider vinegar

·                                 1 teaspoon spicy brown mustard

·                                 1/2 teaspoon sugar

·                                 1/4 teaspoon salt

·                                 1/4 teaspoon pepper

·                                 3 cups cubed cooked chicken

·                                 1 cup seedless red grapes, halved

·                                 1 cup thinly sliced celery

·                                 1 cup pecan halves, toasted

·                                 Lettuce leaves

Directions

·                                 1. In a large bowl, mix the first eight ingredients until blended. Add chicken, grapes, celery and pecans; toss to coat. Serve on lettuce. 

Editor's Note: To toast nuts, bake in a shallow pan in a 350° oven for 5-10 minutes or cook in a skillet over low heat until lightly browned, stirring occasionally.

Nutritional Facts: 1 cup: 340 calories, 24g fat (3g saturated fat), 69mg cholesterol, 311mg sodium, 10g carbohydrate (7g sugars, 2g fiber), 22g protein.

CREAMY CAULIFLOWER AND BACON SOUP

You'll be slurping up the next bacon recipe with a spoon. Check out this cauliflower and bacon soup from Serious Eats. The soup is not only indulgent thanks to bacon, but also due to the addition of heavy cream. Luckily, the healthy cauliflower helps counteract some of the decadence of this creamy and dreamy soup, and a handful of seasonings also come into play. This food formula serves 4 and can be on your table in just 45 minutes.

½ pound sliced bacon, cut into ½-inch pieces

1 medium onion, finely chopped

6 scallions, white and pale green parts only, thinly sliced

4 medium cloves garlic, thinly sliced

1 quart chicken stock

2 bay leaves

1 cup half-and-half or heavy cream

1 head cauliflower, cut into florets

Kosher salt and freshly ground black pepper

Heat bacon in a large Dutch oven over medium-high heat, stirring constantly until bacon is completely crisp. Remove from Dutch oven with a slotted spoon and set aside, leaving the fat in the dutch oven.

Add onions, half of scallions, and garlic, and cook, stirring constantly and scraping up browned bits from the bottom of the pan until onion is softened, about 5 minutes.

Add chicken stock, bay leaves, half-and-half (or cream), and cauliflower. Season to taste with salt and pepper. Cover and cook until cauliflower is completely tender, about 30 minutes. Working in batches, blend soup until completely smooth. Season to taste with salt and pepper and serve sprinkled with crisp bacon pieces and remaining scallions.

INGREDIENTS

2 cups noodles, chilled

1 grilled chicken breast, diced

1 carrot, julienned or spiralized

1/2 cucumber, diced

1 apple, diced

Feta cheese, crumbled

Crushed almonds

Dried cranberries

Fresh mint leaves, chopped

 

The balsamic vinaigrette

1 1/2 cups balsamic vinegar

1 cup olive oil

2 teaspoons Italian seasoning

1 tablespoon honey

 

DIRECTIONS

1. Combine all the salad ingredients (pasta, chicken, carrot, cucumber, apple, cranberries, almond, feta, and mint) in a large salad bowl.

2. Combine all ingredients for the balsamic vinaigrette dressing in a small jar with a lid and shake vigorously. Pour the dressing over the salad, and toss to coat well enjoy!  Serves 2
