Neighborhood Ham and Bean Soup

This is very good. I used all chicken broth and no bouillon.
It's flavor was better the second day. Perfect for a cold winter night.

2 cups dried great northern beans
5 cups chicken broth (low sodium is best)
3 cups water
1 large meaty ham bone (I use 2 or 3 smoked ham hocks)
2 tablespoons chicken bouillon granules
1 teaspoon dried thyme
1/2 teaspoon dried marjoram
1/2 teaspoon pepper
1/4 teaspoon rubbed sage
1/4 teaspoon dried savory
1 medium onion, chopped
3 medium carrots, chopped
2 celery ribs, chopped (I also put in
-- a handful of the chopped celery leaves)
1 large potato, cut into cubes (optional, but very good)
1 tablespoon vegetable oil

1. Place beans in a Dutch oven or soup kettle; add water to cover by
2-inches. Bring to a boil; boil for 2 minutes. Remove from heat, cover and
let stand for 1 hour. Drain. Add broth, water, ham bone, bouillon and
seasonings; bring to a boil. Reduce heat; cover and simmer for 2 hours (I
find I usually add at least an hour to this). Sauté' onions, carrots and
celery in oil; add to soup along with cubed potato (if using). Cover and
simmer 1 hour longer. Debone ham and cut into chunks; return to soup. Skim
fat (I find I don't have any to skim). I like to mash some of the beans
once they get soft. My total cooking time is more like 6 hours than 4 hours.

Author Note: The flavors in this bean soup remind me of the bean soup my
grandmother used to make on our farm in Ohio when I was a young girl. I love
to make it during the winter months -- it doesn't last long. My daughter is
now making it for her family as well. Maybe it's called "Neighborhood" bean
soup because the neighbors love it when I make it -- it's a wonderful soup
to share with special friends. It is great served with a nice piece of hot
corn bread. I can't remember exactly where I found the recipe -- but I'm
glad I have it and I hope you will feel the same.

Cabbage Patch Stew

The first hint of cooler weather in the air today was the impetus for trying this recipe for Cabbage Patch Stew.  I found the recipe in Thelma Carlile's "Mealtimes and Memories" cookbook and adjusted it slightly (I wanted more than 1 cup of cabbage in the pot!).  The temperature dropped even more by suppertime yet I was completely happy enjoying this queen-of-comfort-food dish along with a tray of cornbread muffins.  If you are a fan of cabbage, stewed tomatoes, and mashed potatoes (and who isn't?) then this is a recipe you will find yourself reaching for repeatedly as temperatures drop.

I did use more than the original amount of cabbage called for and added more stewed tomatoes than listed.  I adjusted the amount of water to allow for the extra vegetables and added a beef bouillon cube for a richer flavor to the broth.  Do prepare your vegetables before you begin browning the ground beef and allow the cabbage, onions, and celery to simmer slowly until softened.  Taste the broth as you go and season accordingly.

Prepare mashed potatoes for topping individual bowls of the stew. I used a packaged mashed potato mix as it made exactly the 2 cups I wanted. The potatoes add contrasting texture and thicken the broth slightly. A side of cornbread muffins is all I needed to complete this simple, yet satisfying meal. This light stew will have you feeling warm and cozy in no time, reminding you that autumn is on her way.

Cabbage Patch Stew

Ingredients

1 lb. ground chuck, browned

1 large onion, chopped

2 cups cabbage, shredded

1/2 cup celery, sliced thinly

1-(16 oz.) can red kidney beans, drained

1-(16 oz.) can stewed tomatoes, drained and snipped smaller

1/2 tsp. salt

1/2 tsp. ground black pepper

1 tsp. chili powder

2 cups prepared mashed potatoes

 

Directions: In a pan sprayed with cooking spray, brown the meat over medium heat. Add onions, cabbage, and celery; cook until soft. Add water to cover (approximately 3 cups); simmer with lid on, 15 minutes. Add beans, tomatoes, and seasonings and cook 15-20 minutes more. Serve in bowls topped with spoonfuls of mashed potatoes.  Lightly add pepper to the potatoes and serve warm.

Ingredients

·                                 2 packages (5 ounces each) spring mix salad greens

·                                 2 large apples, coarsely chopped

·                                 1 can (9-1/4 ounces) lightly salted cashews

·                                 1 package (5 ounces) dried cranberries

·                                 1/2 cup shredded Parmesan cheese

·                                 VINAIGRETTE:

·                                 2/3 cup sugar

·                                 1/2 cup canola oil

·                                 1/3 cup cider vinegar

·                                 1 teaspoon ground mustard

·                                 1 teaspoon poppy seeds

·                                 1 teaspoon salt

Directions

·                                 1. In a large bowl, combine the first five ingredients. In a small bowl, whisk vinaigrette ingredients until blended. Pour over salad and toss to coat; serve immediately. Yield: 16 servings (1 cup each).

Nutritional Facts

1 cup equals 256 calories, 16 g fat (3 g saturated fat), 2 mg cholesterol, 227 mg sodium, 26 g carbohydrate, 2 g fiber, 5 g protein.

Bacon Tomato Ranch Pasta Salad

This might be kind of refreshing on the Thanksgiving table with all the “heavy” stuff?

1 lb. Penne

1/2 lb. bacon, cooked

5 Roma tomatoes

3/4 cup mayonnaise

1/2 cup sour cream

1 clove garlic, minced

1 tsp. seasoned salt

1/2 tsp. dill

small bunch parsley, chopped

 

Cook the pasta according to the package directions.  Chop the tomatoes and crumble the bacon.

Mix the mayo, sour cream, garlic, seasoned salt, dill and parsley together in a bowl.

Drain the pasta and run it under cool water.  Mix the pasta, tomatoes, bacon and dressing together.  Refrigerate until ready to serve.

This slow cooker recipe for Black Bean Butter Squash Chili receives high marks from my family. In fact, while eating it the other night, my oldest daughter remarked, “This chili is marvelous!” Which struck me as funny, because who says “marvelous”? However, as she asked for seconds, I knew her compliment was sincere.

Since this recipe only needs to cook for 3-4 hours on high, it is the perfect recipe to throw in the slow cooker right before I pick-up the kids from school. Then, it is ready when we get home from whatever practice (usually volleyball) we have that evening. 

Isn’t it nice to be able to throw some pantry staples into the slow cooker, then walk in the door from an evening of hectic carpools and kid activities to be able to walk in the door and have dinner waiting?

Slow Cooker Black Bean Butternut Squash Chili

Ingredients

·                                 1 medium red onion, chopped

·                                 4 garlic cloves, chopped

·                                 1 tablespoon chili powder

·                                 1 tablespoon ground cumin

·                                 2 teaspoons unsweetened cocoa powder

·                                 1/4 teaspoon cinnamon

·                                 2 14 oz cans diced tomatoes

·                                 2 15.5 oz cans black beans

·                                 1 10 oz package frozen butternut squash

·                                 1 cup water

 

Instructions

1.                      Combine all ingredients in a slow cooker. (There is no need to thaw the frozen butternut squash beforehand.)

2.                      Turn the slow cooker to high heat and allow to cook for 3 to 4 hours. Serve.

3.                      Optional toppings: crushed tortilla chips, shredded cheddar, sour cream, chopped cilantro.

·                                 3 tablespoons butter

·                                 2 cups chopped leeks, white parts only

·                                 24 ounces bag new potatoes, halved

·                                 1 quart broth

·                                 1 1/2 cups shredded (rotisserie) chicken

·                                 7 ounces shredded white cheddar

·                                 5 tablespoons sour cream

·                                 Cayenne pepper

 

Directions

1.                              In pot, melt butter over medium heat; cook leeks 2 minutes. Add potatoes; cook 5 minutes. Add broth; bring to boil. Simmer until fork-tender, 15 minutes. Remove one-third potatoes; reserve. Puree remaining soup with 1 cup water. Stir in chicken, reserved potatoes, cheese and 3 tbsp. sour cream. Top with remaining sour cream and cayenne.
