Copycat Wendy's Chili


This is not only the perfect copycat recipe. It's the perfect chili recipe. If you're impatient, you don't have to simmer for a full 40 minutes. Just know that the flavor gets better the longer it goes.

INGREDIENTS
2 tbsp. 

extra-virgin olive oil

medium onion, chopped

medium green bell pepper, chopped

stalks celery, chopped

1 tbsp. 

tomato paste

1 1/2 lb. 

ground beef

3 tbsp. 

chili powder

2 tsp. 

ground cumin

1 tsp. 

garlic powder

Kosher salt

Freshly ground black pepper

(28-oz.) can crushed tomatoes

(15-oz.) can kidney beans, with liquid

(15-oz.) can pinto beans, with liquid

Shredded cheddar, for serving

Green onions, sliced, for serving

DIRECTIONS
  1. In a large pot over medium heat, heat oil. Add onion, pepper, and celery and cook until softened, 5 minutes. Add in tomato paste, stirring constantly until darker in color, about 2 minutes more. Add ground beef and cook, breaking up meat with a wooden spoon, until no longer pink, about 6 minutes more. Drain fat and return to heat.
  2. Add chili powder, cumin, and garlic powder, and season generously with salt and pepper. Pour in crushed tomatoes, then fill can halfway with water, swirling to catch any remaining tomato, and add to pot. Add beans and their liquid and stir to combine. Bring chili to a boil then reduce heat to low and let simmer until flavors meld and liquid is slightly reduced, about 40 minutes. Taste and adjust seasonings as necessary.
  3. Serve chili topped with cheddar and green onions.

What You'll Need

  • 2 pounds butternut squash, cut into 1/2-inch cubes
  • 1/2 cup chopped onion
  • 2 tablespoons olive oil
  • 1/2 teaspoons salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1 (15-ounce) can pure pumpkin
  • 2 cups vegetable broth
  • 1/2 cups apple cider
  • 1/2 cups half and half
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon curry powder

What to Do

  1. Preheat oven to 450 degrees F.
  2. In a large bowl, combine squash, onion, oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper; toss until evenly coated.  Place squash mixture on baking sheet in a single layer.  Bake 20 to 25 minutes or until tender. Place squash mixture in a blender or food processor and process until smooth.
  3. In a large saucepan over medium-low heat, combine squash puree, pumpkin, broth, apple cider, half and half, cinnamon, curry, remaining 1 teaspoon salt, and remaining 1/4 teaspoon pepper; mix well.  Heat 10 to 12 minutes or until heated through (Do not

Yes, you can stir together a classic chicken pho recipe at home! Pho noodles, or rice noodles, team up with chicken, fresh herbs, and vegetables in this comforting Asian soup.

Ingredients

  • In a 6- to 8-quart Dutch oven place whole chicken and chicken pieces. Add the next six ingredients (through cloves). Remove leaves and tender stems from cilantro; set leaves aside. Add cilantro stems to Dutch oven. Add enough cold water to cover. Bring just to simmering over medium heat. Skim off any foam. Simmer, uncovered, 35 to 40 minutes or until chicken is no longer pink (180°F).

  • Remove whole chicken from Dutch oven (keep broth in pot at a simmer). When chicken is cool enough to handle, remove meat from bones. Return skin and bones to pot. Using two forks, pull chicken meat apart into coarse shreds. Cover and chill shredded chicken until needed. Simmer mixture in pot, uncovered, 1-1/2 hours more.

  • Meanwhile, in a large bowl combine noodles and enough warm water to cover. Let stand about 20 minutes or until pliable but not soft; drain.

      • Strain broth through two layers of 100%-cotton cheesecloth placed in a colander; discard solids. Skim fat from broth. Return broth to Dutch oven; stir in fish sauce.

      • Place noodles in a large saucepan of boiling, lightly salted water to heat. Drain and divide noodles among warm large bowls. Top with green onions. Add shredded chicken to broth; heat through. Ladle broth and chicken over noodles. Serve with the reserved cilantro leaves, bean sprouts, basil, mint, jalapeño pepper(s), lime wedges, and chili sauce.

      *Tip

      To toast coriander seeds, heat a small, dry skillet over medium heat. Add seeds and cook 1 to 2 minutes or until toasted and aromatic, shaking skillet frequently.

      **Tip

      Chile peppers contain oils that can irritate your skin and eyes. Wear plastic or rubber gloves when working with them.

      INGREDIENTS
      • 2 pounds (1kg) beef stew meat
      • 2 tablespoons olive oil
      • ounces (225g) mushrooms, quartered
      • 1 small onion, diced
      • 2 stalks celery, diced
      • 2 carrots, diced
      • 4-6 cloves garlic, minced
      • 6 cups (1.4 liter) low sodium beef broth/stock
      • 1 (14.5oz) (411g) can diced tomatoes
      • 3/4 cup (140g) pearl barley, rinsed
      • 2 small potatoes, peeled and diced
      • 2 tablespoons better than bullion beef base (or use 2-4 cubes)
      • 1 bay leaf
      • 1 teaspoon dried thyme
      INSTRUCTIONS
      1. Set Instant Pot to saute setting. When hot add in stew meat, olive oil and season with a little salt and pepper. Brown meat on all sides then remove and set aside. (about 5 minutes)

      2. Add mushrooms and saute until nicely browned. (May need to add a little more oil) Add onion, celery, and carrot. Season with salt and pepper if desired and cook for about 5 minutes. Add in garlic and stir for 30 seconds.

      3. Add a little beef broth to deglaze the bottom of the pan and be sure to scrape up all the browned bits to avoid the burn error. Add remaining broth, tomatoes, barley, potatoes, beef base, bay leaf, and thyme.

      4. Place lid on Instant Pot and turn to the locking position. Set vent to sealing and cook on high pressure for 15 minutes. Let the Instant Pot do a natural release of pressure for 15 minutes then turn vent to release remaining pressure before removing lid.

      1. A natural release is a must to avoid plugging the vent. 
      2. Freezer Friendly: If you want to freeze the soup let it cool completely and pour into a freezer safe container. Freeze for 4-6 months. Thaw completely and reheat.
