Vietnamese Pho Soup

Yield : About 4 servings

If you love Vietnamese Pho Soup, you should try making it homemade! It's so simple!

Ingredients :

8 cups beef broth
4 cups water
1 medium yellow onion, quartered
4 cloves of garlic, roughly minced
3 whole star anise (optional if you don't like the flavor)
3 whole cloves (talking about the spice, "cloves")
1 (3-inch) knob of ginger, sliced into coins
1 cinnamon stick
(optional: 2 Tbsp. fish sauce)
salt and black pepper
1 package pho rice noodles (look for the word "pho" on the package)
12 ounces steak, very thinly sliced against the grain (I used flank steak)

Garnishes : bean sprouts, fresh cilantro, fresh ginger slices, lime wedges, thinly-chopped green onions, thinly-sliced jalapenos, Thai basil

Method :

Stir together beef broth, water, onion, garlic, star anise, cloves, ginger, cinnamon stick (and fish sauce, if using) in a large stockpot, and bring to a boil over high heat. Cover, reduce heat to medium-low, and let simmer for at least 20 minutes.

Meanwhile, cook the noodles according to package instructions. (If your package of noodles -- like mine -- did not have instructions, simply bring a large pot of water to a boil. Then cook the noodles until al dente, about 3 minutes.) Immediately drain the noodles, and rinse with cold water to stop the cooking. Drain and set aside.

When you are ready to serve the soup, fill the serving bowls about halfway full with noodles. Then cover with the hot broth, and immediately stir in the steak so that it cooks. Top with your desired garnishes.

(*Most people stir the cilantro, ginger, lime, jalapenos and Thai basil into the broth to give it extra flavoring, but you don't necessarily need to actually eat those ingredients whole.)

Almost-Famous Broccoli-Cheddar Soup

4 servings

6 tablespoons unsalted butter
1 small onion, chopped
1/4 cup all-purpose flour
2 cups half-and-half
3 cups low-sodium chicken broth
2 bay leaves
1/4 teaspoon freshly grated nutmeg
Kosher salt and freshly ground pepper
4 7-inch sourdough bread boules (round loaves)
4 cups broccoli florets (about 1 head)
1 large carrot, diced
2 1/2 cups (about 8 ounces) grated sharp white and yellow cheddar cheese, plus more for garnish

Melt the butter in a large Dutch oven or pot over medium heat. Add the onion and cook until tender, about 5 minutes. Whisk in the flour and cook until golden, 3 to 4 minutes, then gradually whisk in the half-and-half until smooth. Add the chicken broth, bay leaves and nutmeg, then season with salt and pepper and bring to a simmer. Reduce the heat to medium-low and cook, uncovered, until thickened, about 20 minutes.

Meanwhile, prepare the bread bowls: Using a sharp knife, cut a circle into the top of each loaf, leaving a 1-inch border all around. Remove the bread top, then hollow out the middle with a fork or your fingers, leaving a thick bread shell.

Add the broccoli and carrot to the broth mixture and simmer until tender, about 20 minutes. Discard the bay leaves. Puree the soup in batches in a blender until smooth; you'll still have flecks of carrot and broccoli. Return to the pot. (Or puree the soup in the pot with an immersion blender.)

Add the cheese to the soup and whisk over medium heat until melted. Add up to 3/4 cup water if the soup is too thick. Ladle into the bread bowls and garnish with cheese.

Oriental Pasta Salad


Salads aren't just lettuce. They should surprise. Add the crunch of water chestnuts, the subtlety of flavored vinegars, and lots of vegetables for variety in taste, texture and nutritional value.

  • Dressing:
  • 1/2 cup thawed apple juice concentrate
  • 1/2 cup rice vinegar
  • 3 tablespoons dark sesame oil
  • 1 teaspoon peeled and minced fresh ginger root
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 garlic clove, minced (about 1 teaspoon)
  • 1 teaspoon hot pepper sesame oil
  • 8 ounces curly instant chuka soba noodles
  • 1/2 cup water chestnuts
  • 1 head green cabbage, shaved (12 cups)
  • 2 cups chopped green onions
  • 8 whole green onions for garnish
  • Red and yellow peppers, julienned for garnish

Directions:
Combine all dressing ingredients in small bowl and mix well. Bring large pot of water to a boil, add noodles, and cook and stir for 2 minutes. Drain thoroughly and transfer to large bowl. Add dressing and mix well. Add water chestnuts, cabbage, and onions and mix thoroughly. Cover and refrigerate overnight.

To serve, place 2 cups salad on a plate and garnish with green onion and bell peppers.
Makes 8 Servings .

Chicken (or turkey) Top Ramen Noodle Salad


This makes a very large bowl of noodle salad, which tastes even better the next day!

Minutes to Prepare: 5
Number of Servings: 8

Ingredients

    1 whole chicken breast (2 cups) or turkey breast
    2 T. toasted sesame seeds
    4 T. toasted almonds (slivered)
    3/4 to 1 head cabbage
    1/2 cup chopped green onions
    1 package Top Ramen (chicken flavor), crushed up
    1 cup low fat mayonnaise
    1/2 cup water
    1/2 seasoning packet from the Top Ramen Mix

Directions

Chicken (or turkey) Top Roman Noodle Salad
If you don't have the sesame seeds or almonds, leave them out, because it will still taste very good!

Mix chopped chicken (or turkey) breast, toasted sesame seeds, toasted (slivered) almonds, chopped cabbage, chopped green onions and half a package of crushed Ramen Noodles. Mix together in large bowl.

Make a dressing of:
Low fat mayonnaise, water and 1/2 of the seasoning packet from the Top Ramen Mix.

Mix all the dressing ingredients together, then pour over all the salad. Mix together

It is even better the next day after refrigerating, covered, overnight.

We eat it for about 3 days. Keep leftovers in the refrigerator. 

It does make a HUGE bowl,, so sometimes I cut it ALL in half.
The top roman takes on all the dressing and really makes a lot.

If you don't have the sesame seeds and or almonds don't worry, it turns out fine. Sometimes I don't have green onions I use just regular, but green are better if you have some.

Microwave Sausage and Clam Soup

Here is a hearty soup you can have on the table in less than half an hour.

1 1/2 lbs (675 g) Italian sausage, casings removed and crumbled
1/4 cup (60 ml) olive oil
2-4 cloves garlic, finely chopped
1 onion, chopped
1 green bell pepper, cored, seeded, and chopped
1 bunch parsley, chopped
1 tsp (5 ml) dried basil
1 lb (450 g) sliced mushrooms
1 28-ounce (790 g) can tomatoes with their liquid
1 cup (250 ml) dry white wine
4 6.5-ounce (185 g) cans minced clams with their liquid
Salt and freshly ground pepper to taste

Combine the sausage, olive oil, garlic, onion, bell pepper,
parsley, and basil in a large microwave-safe bowl and cook
on high for 5 minutes. Stir and continue cooking until the meat
is no longer pink, about 5 minutes. Stir in the mushrooms,
tomatoes, and wine and cook for 10 minutes, stirring after 5
minutes. Stir in the clams with their liquid, salt, and pepper
and cook for 5 minutes.

Serves 4 to 6

Finalist in the 44th National Chicken Cooking Contest.

4 boneless, skinless chicken breast halves, cut in cubes

2 T. olive oil

1 1/2 cups minced onion

4 cloves garlic, minced

1/4 tsp. cayenne pepper

2 T. ground cumin

1/4 tsp. salt

1 red bell pepper, chopped

1 green bell pepper, chopped

3 (14.5-oz.) cans chicken broth

2 (15-oz.) cans cooked black beans, rinsed and drained

2 (14.5-oz.) cans diced tomatoes, with liquid

1 (15.4-oz.) can corn, drained

1 (2.25-oz.) can sliced black olives

1/2 cup chopped fresh cilantro, divided

Grated Monterey Jack cheese

 

In soup pan, place oil over medium-high temperature. Add chicken and onion, and cook until onion is tender, about 5 minutes, stirring frequently. Add garlic, cayenne, cumin, salt, red bell pepper, green bell pepper and chicken broth. Cover and bring to a boil; lower heat and simmer, covered, 20 minutes.

 

Add black beans, tomatoes, corn and olives; continue to simmer 10 minutes more. Stir in 1/4 cup of the cilantro and remove from heat. Ladle soup into individual bowls; sprinkle cheese and remaining cilantro on top.

 

Makes 8 servings.

Santa Fe Chicken Salad

10 Tbsp mayonnaise
1 lime juice, juiced
1 Tbsp taco seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
dash crushed red pepper flakes
2 (12 oz) cups cooked chicken
1 (11 oz) can whole kernel corn, drained
1/2 green pepper, finely diced
1/2 cup finely diced celery
2 plum tomatoes, seeded and diced
2 Tbsp finely chopped fresh cilantro

In medium bowl whisk together mayonnaise, lime juice, taco seasoning, garlic powder, onion powder and red pepper flakes. 
Stir in remaining ingredients.
Coat evenly.
Cover and refrigerate 25-30 minutes.

Minestrone Soup Recipe



Here's the perfect summer-time soup to put all those fresh garden vegetables to good use! It's great for a light meal served with a salad and warm bread. Take it to a potluck and watch people go back for seconds.





       TOTAL TIME: Prep: 20 min.
       Cook: 3-1/2 hours
       YIELD: 40


Ingredients

         1 boneless beef chuck roast (4 pounds)
         4 quarts water
         2 bay leaves
        2 medium onions, diced
        2 cups sliced carrots
         2 cups sliced celery
         1 can (28 ounces) diced tomatoes, undrained
         1 can (15 ounces) tomato sauce
         1/4 cup chopped fresh parsley
         Salt and pepper to taste
         4 teaspoons dried basil
         1 teaspoon garlic powder
        2 packages (9 ounces each) frozen Italian or cut green beans
         1 package (16 ounces) frozen peas
         2 cans (16 ounces each) kidney beans, rinsed and drained
         2 packages (7 ounces each) shell macaroni, cooked and drained
        Grated Parmesan cheese

Directions

    Place beef roast, water and bay leaves in a large kettle or Dutch oven; bring to a boil. Reduce heat; cover and simmer until meat is tender, about 3 hours.
    Remove meat from broth; cool. Add onions, carrots and celery to broth; cook for 20 minutes or until vegetables are tender.
    Cut meat into bite-size pieces; add to broth. Add tomatoes, tomato sauce, parsley, seasonings, beans, peas and kidney beans. Cook until vegetables are done, about 10 minutes.
    Add macaroni and heat through. Remove bay leaves. Ladle into soup bowls; sprinkle with Parmesan cheese.

Yield: 40 servings (10 quarts).

Ingredients

        1 pound bulk Italian sausage
        1 large onion, chopped
        2 large carrots, chopped
         2 celery ribs, chopped
         1 medium leek (white portion only), chopped
         1 medium zucchini, cut into 1/2-inch pieces
        1/4 pound fresh green beans, trimmed and cut into 1/2-inch pieces
         3 garlic cloves, minced
         6 cups beef broth
         2 cans (14-1/2 ounces each) diced tomatoes with basil, oregano and garlic
        3 cups shredded cabbage
         1 teaspoon dried basil
         1 teaspoon dried oregano
         1/4 teaspoon pepper
         1/2 cup uncooked small pasta shells
         1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
         3 tablespoons minced fresh parsley
        1/3 cup grated Parmesan cheese

Directions

    In a Dutch oven, cook sausage and onion over medium heat until meat is no longer pink; drain. Stir in the carrots, celery and leek; cook for 3 minutes. Add the zucchini, green beans and garlic; cook 1 minute longer.
    Stir in the broth, tomatoes, cabbage, basil, oregano and pepper. Bring to a boil. Reduce heat; cover and simmer for 45 minutes.
    Return to a boil. Stir in the garbanzo beans, pasta and parsley. Cook for 6-9 minutes or until pasta is tender. Serve with cheese. Yield: 11 servings (about 3 quarts).



Nutritional Facts

1 serving (1-1/4 cups) equals 253 calories, 15 g fat (5 g saturated fat), 33 mg cholesterol, 910 mg sodium, 18 g carbohydrate, 4 g fiber, 12 g protein.

A meal in itself, here's a hearty soup from Reuben Tsujimura in Walla Walla, Washington that's chock-full of good-for-you veggies and vitamins. Serve with crunchy breadsticks and no one will even miss the meat!

      TOTAL TIME: Prep: 20 min.
      Cook: 20 min.
      YIELD: 6


Ingredients

        1 medium onion, chopped
         1 tablespoon olive oil
         2 garlic cloves, minced
         2 cans (14-1/2 ounces each) reduced-sodium chicken broth or vegetable broth
         1 can (16 ounces) kidney beans, rinsed and drained
         1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
         1 can (14-1/2 ounces) stewed tomatoes, cut up
         2 cups chopped fresh kale
         1/2 cup water
         1/2 cup uncooked small pasta shells
         1 teaspoon Italian seasoning
         1/4 teaspoon crushed red pepper flakes
        6 teaspoons shredded Parmesan

Directions

    In a large saucepan, saute onion in oil until onion is tender. Add garlic; cook 1 minute longer. Add the broth, beans, tomatoes, kale, water, pasta, Italian seasoning and pepper flakes. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until pasta is tender. Sprinkle each serving with cheese. Yield: 6 servings.



Nutritional Facts

1 cup equals 238 calories, 4 g fat (1 g saturated fat), 1 mg cholesterol, 738 mg sodium, 39 g carbohydrate, 8 g fiber, 13 g protein.
