Asian Slaw

SHOW: Guy's Big Bite

EPISODE: Deep Fried Freshen Up

 

Total Time: 40 min

Prep: 30 min

Cook: 10 min

Yield: 4 servings

Level: Easy

1/4 cup extra-virgin olive oil

3 tablespoons minced ginger

1 tablespoon minced garlic

2 tablespoons brown sugar

5 tablespoons soy sauce

4 tablespoons mirin, or white wine

1 teaspoon sesame oil

1/4 cup rice wine vinegar

1 cup thinly sliced napa cabbage

1/2 cup thinly sliced green cabbage

1 cup julienned carrots

1/2 cup thinly sliced red onion

1/2 cup thinly sliced red bell pepper

1/2 cup thinly sliced bok choy

1/2 cup bean sprouts

1/2 cup julienned snap peas

1/2 cup julienned green onions

15 wonton skins, fried

Peanuts, for garnish

 

Directions

 

In a small saucepan add 2 tablespoons olive oil, ginger and garlic, lightly saute until lightly brown. Add brown sugar, soy sauce, and mirin. Saute for 5 minutes and remove from heat. When cool whisk in olive oil, sesame oil and rice wine vinegar.

 

Mix all vegetables in a bowl and toss with dressing.

 

Garnish with crushed wontons and peanuts.

Alan Jackson's Favorite Chicken Salad
By Parade
The new book Country Music's Greatest Eats, from Southern Living and CMT, features delectable dishes from musicians' kitchens. Here's one of Alan Jackson's favorites.
Makes 6 servings   
Active Time 25 minutes/ Total Time 1 hour. 20 minutes.
4 (6-oz) skinned and boned chicken breasts
1 (46-oz) can pineapple juice
2 Tbsp honey
1 tsp apple cider vinegar
1/2 cup toasted slivered almonds
3/4 cup mayonnaise
1 cup sweetened dried cranberries (optional)
Sea salt to taste
Freshly ground black pepper to taste
Lettuce leaves
 
1. Bring chicken and next 3 ingredients to a light boil in a large Dutch oven over medium heat; reduce heat to medium-low, cover, and simmer 45 minutes or until chicken is tender.
2. Remove from heat; drain. Cool chicken 10 minutes; shred chicken with two forks.
Add salt and pepper. Serve on lettuce leaves.
    Makes 6 servings.

Welcome Pam.  I'm Jodi and it's just the two of us too, and we live in MO.  I could eat home-made soup every single day of the year.  Hubby, not so much.  LOL  One of our kids (our daughter) lives in our town and our son lives in St. Louis with his wife and three step-sons.  Daughter refuses to marry her boyfriend of 10 years.  She's OCD and he's a slob.  LOL

DR PEPPER JELL-O SALAD

Recipe from John Yeager of TX

1 can Bing cherries

1 can crushed pineapple

2 boxes Cherry Jell-O

1 16 oz. Dr Pepper

1/2 cup chopped pecans

Drain juices from cherries and pineapple (should measure 1 cup from each). Add enough water to total 2 cups liquid. Heat juices until near boiling. Add to Jell-O mix. Allow to cool to room temperature and add cherries, pineapple, Dr Pepper, and nuts.

SUMMER FRUIT SALAD

Recipe from Summer Garcia of Enid, Okla.

Prep Time: 3-4 min

Total Time: 7-8 min

 

4 cans of cocktail fruit

1 container of cool whip

1/2 cup of walnuts or pecans

2 packages of koolaid (any flavor cherry or strawberry is best)

Drain the fruit, then mix fruit and coolwhip in bowl.

Add the nuts and koolaid and mix. Refrigerate 30 minutes to an hour to chill and mix the flavors.

Yield: 6-8 servings

Comments: Can use fresh fruit also. This is a yummy, recipe especially for the kids.

{soups-salads-and-salad-dressings} PICNIC POTATO SALAD

 

PICNIC POTATO SALAD

Serves 6-8

3 pounds medium red, tan-skinned or Yellow (Yukon Gold) potatoes

For the dressing:

3/4 cup sour cream

3/4 cup mayonnaise

2 celery stalks, finely diced

2 tablespoons chopped scallions

2 teaspoons celery seed

1/4 cup chopped parsley

2 hard-boiled eggs, coarsely chopped

1 teaspoon Coleman's dried mustard

Salt and freshly ground white pepper

Parsley sprigs, for garnish

1. In a large pot of boiling water, cook the potatoes for 30 minutes or until tender but slightly resistant when pierced with a fork. Drain and cool. Do not peel. When cool, cut into 1 1/2-inch pieces and place in a medium bowl.

2. In a small bowl, combine sour cream, mayonnaise, celery, green onions, celery seed, parsley, chopped egg, dried mustard, salt and pepper. Mix well.

3. Pour mixture over potatoes and mix gently until coated. Taste for seasoning. Refrigerate at least 1-2 hours or up to 8 hours ahead.

4. To serve, transfer to a serving bowl and garnish with parsley. Serve cold.

Advance preparation: Can be made a day ahead, covered and refrigerated. Taste for seasoning before serving.
