MIXED CITRUS FRUIT SALAD

4 Servings

 

3 tangerines

1 tsp grated lemon zest ; plus 1/2 tbs lemon juice

2 grapefruits

1/2 tsp fennel seeds

3 oranges

1/2 cup pomegranate seeds

1/2 tbs brown sugar

 

Peel tangerines, grapefruits, and oranges. Cut fruit crosswise 1/2" thick, then cut each slice in half, discard any seeds. In a bowl, bring 1/4 cup water, brown sugar, and salt to a boil. Remove pan from heat, add zest and fennel seeds, let steep 10 min. Pour mixture through a strainer set over a bowl, discard solids. Let syrup cool, then stir in lemon juice. 30 min. before serving, pour off liquid from fruit, transfer fruit to a bowl, stir in sugar syrup and pomegranate seeds

Easy Pasta E Fagioli

4 servings

Ingredients

1 tablespoon vegetable oil
1 medium onion, chopped (1/2 cup)
2 cloves garlic, finely chopped
1 can (15 oz) Progresso™ cannellini beans, drained, rinsed
1 can (14.5 oz) diced tomatoes
1 carton (32 oz) Progresso™ chicken broth
2 tablespoons chopped fresh parsley
1 teaspoon dried basil leaves, crushed
1 cup uncooked elbow macaroni (4 oz)
1/2 cup shredded Parmesan cheese

Directions

In 3-quart saucepan, heat oil over medium-high heat.
Add onion and garlic, cook and stir 2 minutes.

Add remaining ingredients except macaroni and cheese.
Heat to boiling.
Reduce heat to medium-low and cover and simmer 10 minutes, stirring
occasionally.

Remove cover and increase heat to high.
Heat to boiling.
Reduce heat to medium.
Add macaroni and cook 10 to 15 minutes or until tender.

Sprinkle each serving with cheese.

BLACK QUINOA WITH ORANGE & CUMIN DRESSING

1 cup black quinoa (red or white can be substituted)

2 cups water

1/4 cup golden raisins

Dressing:

3 tbsp fresh orange juice

1/2 tsp ground cumin

1/4 tsp kosher salt

2 tbsp extra-virgin olive oil

2 green onions, thinly sliced

Pour quinoa into a fine mesh strainer and rinse until the water runs clear.

In a medium saucepan, combine quinoa, water and golden raisins. Bring to a boil, cover and reduce heat to low. Cook until all of the water is absorbed, about 20 minutes. Fluff quinoa with a fork and transfer to a medium bowl. Allow the quinoa to cool to room temperature.

The dressing:

In a small bowl, whisk together fresh orange juice, ground cumin and salt. While whisking, slowly pour in olive oil.

Toss the quinoa with the dressing and sliced green onions. Serve.

Serves 4 to 6 as side dish

BLACK BEAN SOUP

Mexican Soup

This is very tasty. If you prefer a smooth texture, puree the soup before serving.

1 lb. dry black beans, soaked in water overnight

2 tablespoons olive oil

1 large onion, diced

4 cloves garlic, minced

6 cups water

4 cups chicken broth

1 teaspoon oregano

1 teaspoon freshly ground black pepper

1 tablespoon cumin

1/8 teaspoon cayenne pepper

1 teaspoon salt

1/4 cup chopped fresh cilantro

3 tablespoons dry sherry

1 tablespoon fresh-squeezed lemon juice

1 cup sour cream (non-fat may be used)

Garnish:

1 avocado, peeled and diced

1 onion, chopped

In stockpot, heat oil. Sauté onion and garlic about 5 minutes. Drain the beans, rinse and add them to pot along with the water, chicken stock, oregano, black pepper, cayenne pepper and cumin. Bring to a boil and reduce heat. Cook uncovered until beans are tender, about 2 hours. Stir in the salt Stir in the cilantro, sherry and lemon juice. Simmer another 30 minutes. When serving, spoon sour cream on top of each bowl then garnish with avocado and onion.

Fire Roasted Tomato Soup
Source: Miz Helen's Kitchen

3 cups Pearl Onions, cut in half
4 cups Irish Potatoes, diced
3 1/2 to 4 cups Fire Roasted Tomatoes, diced with juice
or- 2- 14.5 ounce cans of Fire Roasted Tomatoes
3/4 to 1 can of Rol Tel Tomatoes and Green Chilis
4 cups Chicken or Vegetable Broth
2 teaspoons salt
1 teaspoon pepper
1 tablespoon cilantro (optional)
2 tablespoons Olive Oil

Heat a heavy soup pot and add the Olive Oil, saute' the onions and potatoes until browned.
Add all the tomatoes, green chilis and chicken or vegetable broth.
Salt and Pepper to taste.
Bring to boil and reduce heat to low, cook on low for 30 minutes until the onions and potatoes are tender.
Recipe Tip
We have added, diced Chicken Breast, Corn and Black Beans to this recipe and it is delicious or for another flavor we use Bacon Grease instead of Olive Oil and add crisp Bacon to garnish.
The soup freezes well for up to three months.

Contest-Winning Roasted Tomato Soup Recipe


Just before the first frost of the season, we gather up all of the tomatoes from my mom's garden to create this flavor-packed soup. Although it sounds like a lot of garlic, when it's roasted, the garlic becomes mellow and almost sweet. We serve this soup with toasted bread spread with pesto.—Kaitlyn Lerdahl, Madison, Wisconsin

TOTAL TIME: Prep: 25 min.
Cook: 40 min.
MAKES: 6 servings


Ingredients

15 large tomatoes (5 pounds), seeded and quartered
1/4 cup plus 2 tablespoons canola oil, divided
8 garlic cloves, minced
1 large onion, chopped
2 cups water
1 teaspoon salt
1/2 teaspoon crushed red pepper flakes, optional
1/2 cup heavy whipping cream
Fresh basil leaves, optional



Directions

Preheat oven to 400°. Place tomatoes in a greased 15x10x1-in. baking pan. Combine 1/4 cup oil and garlic; drizzle over tomatoes. Toss to coat. Bake 15-20 minutes or until softened, stirring occasionally. Remove and discard skins.

Meanwhile, in a Dutch oven, saute onion in remaining oil until tender. Add tomatoes, water, salt and, if desired, pepper flakes. Bring to a boil. Reduce heat; cover and simmer 30 minutes or until flavors are blended. Cool slightly.

In a blender, process soup in batches until smooth. Return to pan. Stir in cream and heat through. Yield: 6 servings.


Nutritional Facts

1 cup equals 276 calories, 22 g fat (6 g saturated fat), 27 mg cholesterol, 421 mg sodium, 19 g carbohydrate, 5 g fiber, 4 g protein.

TOTAL TIME: Prep: 40 min.
Cook: 5 min.
MAKES: 6 servings


Ingredients

3-1/2 pounds tomatoes (about 11 medium), halved
1 small onion, quartered
2 garlic cloves, peeled and halved
2 tablespoons olive oil
2 tablespoons fresh thyme leaves
1 teaspoon salt
1/4 teaspoon pepper
12 fresh basil leaves
Salad croutons and thinly sliced fresh basil leaves




Directions

Preheat oven to 400°. Place tomatoes, onion and garlic in a greased 15x10x1-in. baking pan; drizzle with oil. Sprinkle with thyme, salt and pepper; toss to coat. Roast 25-30 minutes or until tender, stirring once. Cool slightly.

Process tomato mixture and basil leaves in batches in a blender until smooth. Transfer to a large saucepan; heat through. If desired, top with croutons and sliced basil. Yield: 6 servings.


Nutritional Facts

MAKES: 4 servings


Ingredients

     3 whole garlic bulbs
     3 tablespoons olive oil, divided
     2-1/2 pounds large tomatoes, quartered and seeded
     1/4 teaspoon salt, divided
     1/4 teaspoon pepper, divided
     1 medium onion, chopped
     5 garlic cloves, minced
     1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
     2 cups chicken stock
     1/2 cup half-and-half cream




Directions

Preheat oven to 350°. Remove papery outer skin from garlic bulbs, but do not peel or separate the cloves. Cut off top of garlic bulbs, exposing individual cloves. Drizzle cut cloves with 2 tablespoons oil. Wrap in foil; place on a foil-lined 15x10x1-in. baking pan.

Place tomatoes on same pan; sprinkle with 1/8 teaspoon salt and 1/8 teaspoon pepper. Bake 40-45 minutes or until garlic cloves and tomatoes are soft. Unwrap garlic and cool 10 minutes.

In a large saucepan, heat remaining oil over medium heat. Add onion; cook and stir until tender. Add minced garlic, thyme and tomatoes. Squeeze garlic from skins and add to tomato mixture. Add stock; bring to a boil. Reduce heat; simmer, uncovered, 20-25 minutes or until flavors are blended, stirring occasionally.

Remove soup from heat; cool slightly. Process in batches in a blender until smooth; return to saucepan. Add cream and the remaining salt and pepper; heat through, stirring occasionally. Yield: 4 servings.


Nutritional Facts

1 cup equals 252 calories, 14 g fat (4 g saturated fat), 15 mg cholesterol, 438 mg sodium, 27 g carbohydrate, 5 g fiber, 8 g protein. Diabetic Exchanges: 2-1/2 fat, 1-1/2 starch.

Tomato Soup With Herb Dumplings Recipe

TOTAL TIME: Prep: 10 min.
Cook: 30 min.
MAKES: 8 servings


Ingredients

    2 cans (14-1/2 ounces each) diced tomatoes, undrained
     4 cups tomato juice
     1/4 cup butter
     1 teaspoon beef bouillon granules
     1/4 teaspoon garlic powder
     1/4 teaspoon salt
     1/4 teaspoon pepper
     1/4 teaspoon dried oregano
     DUMPLINGS:
     1-1/2 cups all-purpose flour
     2 teaspoons baking powder
     1/4 teaspoon salt
     1/4 teaspoon poultry seasoning
     1/4 teaspoon dried parsley flakes
     1 egg
     2/3 cup milk





Directions

In a Dutch oven, combine the first eight ingredients; bring to a boil. Reduce heat to simmer.

Meanwhile, for dumplings, combine the dry ingredients in a bowl. Beat egg and milk; stir into dry ingredients until a stiff dough forms. Drop by tablespoonfuls onto simmering soup.

Cover and simmer for 20 minutes or until toothpick inserted into a dumpling comes out clean (do not lift the cover while simmering). Serve immediately. Yield: 8 servings (2 quarts).

Garden Tomato Soup Recipe


Meet the Cook: "Delicious" and "filling" are the words friends I've served this soup to use to describe it. Alone, it makes for a tasty lunch...or you can have it with a sandwich or crackers. Like an even heartier soup? Simply cube some of your leftover cooked chicken or roast and add. I've long enjoyed trying new recipes on my husband. He's a former agriculture minister of Saskatchewan...and my taste tester of 52 years! We have four grown sons and 11 grandchildren. -Frances McFarlane, Winnipeg, Manitoba

TOTAL TIME: Prep: 30 min.
Cook: 20 min.
MAKES: 6 servings


Ingredients

    1 cup chopped celery
     1 small onion, chopped
     1 medium carrot, shredded
     1 small green pepper, chopped
     1/4 cup butter, cubed
     4-1/2 cups chicken or vegetable broth, divided
     4 cups chopped peeled tomatoes (about 7 medium)
     2 teaspoons sugar
     1/2 teaspoon curry powder
     1/2 teaspoon salt
     1/4 teaspoon pepper
     1/4 cup all-purpose flour




Directions

In a large saucepan, saute the celery, onion, carrot and green pepper in butter until tender. Add 4 cups broth, tomatoes, sugar, curry, salt and pepper; bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes.

In small bowl, stir flour and remaining broth until smooth. Gradually stir into tomato mixture; bring to a boil. Cook and stir until thickened and bubbly, about 2 minutes. Yield: 6 servings (1-3/4 quarts).

1 serving (1 cup) equals 144 calories, 9 g fat (5 g saturated fat), 20 mg cholesterol, 1,004 mg sodium, 15 g carbohydrate, 3 g fiber, 4 g protein.
