Cabbage and Smoked Sausage Soup

This is a good soup. I added a little more liquid and used chicken broth
instead of the water. I didn't use the bouillon. It is great for a cold
winter night for supper or for your lunches.

1 tablespoon vegetable oil
1 onion, chopped
1 pound smoked sausage, sliced
3 cups water
1 head cabbage, cored and coarsely chopped
3 carrots, sliced
3 stalks celery, sliced
1/3 cup uncooked long grain white rice
1 can (15 ounces) red beans, with liquid
1 can (8 ounces) tomato sauce
1 can (28 ounces) crushed tomatoes
2 cubes chicken bouillon
salt to taste
1 bay leaf
1/2 teaspoon crushed dried thyme

1. Heat the vegetable oil in a large pot over medium heat, and cook the
onion until lightly browned. Place sausage in the pot, and pour in water.
Mix in cabbage, carrots, celery, rice, beans, tomato sauce, and crushed
tomatoes. Dissolve bouillon in the mixture. Season with salt, bay leaf, and
thyme. Bring to a boil. Reduce heat to low, and cook at least 1 hour, until
vegetables are tender and rice is cooked.

one. Very good flavor. Sometimes I use crushed tomatoes with garlic, onion,
or basil now that they're available. Turkey smoked sausage is great in this

Sawmill Restaurant Cream of Mushroom Soup

Rita Falkensteen of Germantown requested the recipe for mushroom soup from the Sawmill Restaurant, 1729 Wolf Road in Richfield.

She wrote: "The soup was absolutely delicious — creamy and very tasty. I wanted to take a whole pot-full home if I could have."

Jim Braun, head chef, sent the recipe.

He wrote: "I have been cooking for 37 years throughout Milwaukee, but I had never made cream of mushroom soup until about two years ago. I really enjoy making soups and I have a really good chicken dumpling soup. But maybe next time!"

Recipe tested by Nancy Stohs

Makes:  4 to 6 servings

Ingredients:

1 quart water

2 tablespoons chicken base

3/4 cup diced onion

1/8 teaspoon white pepper

5 tablespoons butter (divided)

1 clove garlic, minced

2 1/4 cups sliced white button mushrooms

1/4 cup flour

1 cup plus 2 tablespoons heavy whipping cream

 

Preparation:

In a medium-large soup pot, combine water, chicken base, onion and pepper. Bring to a simmer and cook uncovered 45 minutes.

In a skillet, combine 2 tablespoons butter, the garlic and mushrooms and sauté until mushrooms are tender. Add to stock in pot.

To thicken: In a small sauté pan, melt remaining 3 tablespoons butter and then slowly whisk flour into it, mixing until smooth. Cook, whisking, about 2 minutes.

Add roux to soup stock gradually and cook until thickened, about 2 to 3 minutes. Gradually stir in cream and heat through. Serve immediately.

ROSY RHUBARB SALAD

3 cups sliced fresh or frozen rhubarb (1-inch pieces)

1 tablespoon sugar

1 package (3 ounces) raspberry gelatin

1 cup unsweetened pineapple juice

1 teaspoon lemon juice

1 cup diced peeled apples

1 cup diced celery

1/4 cup chopped pecans

In a medium saucepan, cook and stir rhubarb and sugar over medium-low heat until rhubarb is soft and tender. Remove from the heat; add gelatin and stir until dissolved. Stir in pineapple and lemon juices. Chill until partially set. Stir in apples, celery and pecans. Pour into a 4-1/2 cup mold coated with cooking spray or glass bowl. Chill several hrs or overnight.

Yield: 8 Servings

I took a pain pill!  

 

Crock Pot Potato & Ham Soup

Ingredients:

3 lbs. (7 cups) little potatoes, cubed

3 cups diced ham

1 large carrot, chopped

1 medium onion, diced

2 tsp. dried parsley

1 tsp. dried thyme

1/2 tsp. black pepper

5 cups chicken broth

1 1/2 cups heavy cream

1 cup instant potato flakes

 

Directions:

In a 6 qt (or larger) slow cooker, add in potatoes, diced ham, onions and carrots.

Sprinkle with parsley, thyme and black pepper.

Pour chicken broth over mixture.

Cover slow cooker with the lid and cook on low for 6-8 hours.

 

Then, take out about 4 cups of the little potatoes and mash them up.

Put the mashed potatoes back into the slow cooker.

Pour in heavy cream and add in instant potato flakes. Stir well.

Put the lid back on and cook for another 15 minutes.

 

And serve! This is delicious served with a nice loaf of warm, crusty bread.

Our Optimist Club is having its annual Christmas party Dec. 21 this year.  That just happens to be my birthday.  LOL I always take the same old stuff, so I thought I’d try to find something different.  If you personally have a FANTASTIC appetizer recipe I could make using mostly my dominate right arm, please share it with me and I’ll pass it on AND make it and take it to the party.

Simple Roasted Chickpea Snack

Cook: 45 minutes

Ready In: 55 minutes

"This is a great snack when you're craving chips but want something healthier. They're great on their own, but also yummy on top of a salad."

Ingredients

2 tablespoons olive oil

1 tablespoon ground cumin

1 teaspoon garlic powder

1/2 teaspoon chili powder

1 pinch sea salt

1 pinch ground black pepper

1 dash crushed red pepper

1 (15 ounce) can chickpeas, rinsed and drained

 

Directions

1. Preheat an oven to 350 degrees F (175 degrees C).

2. Whisk the oil, cumin, garlic powder, chili powder, sea salt, black pepper, and red pepper together in a small bowl; add the chickpeas and toss to coat. Spread into a single layer on a baking sheet.

3. Roast in the preheated oven, stirring occasionally, until nicely browned and slightly crispy, about 45 minutes.
