{soups-salads-and-salad-dressings} CALDO GALLEGO

 

Jim shares this hearty Spanish peasant soup.

CALDO GALLEGO

A hearty peasant soup popular with hikers, plus how can any soup made with bacon be bad.

 

1 lb.. bacon ends and pieces

1 large onion, chopped

3 Cloves garlic, chopped

4 Quarts. chicken stock

1 lb. beans, red, white or red, doesn't matter

1 turnip, diced

2 potatoes, peeled and diced

1/2 lb Chorizo sausage, skinned

1 lb. greens torn in pieces

Salt and pepper to taste

 

Brown bacon in heavy pot, remove and retain 2-3 Tbsp. fat in pan. Add onion and cook for 5 minutes, add garlic for a couple more minutes. Add bacon, stock and beans, cook for 2 to 7 hours until beans are tender. (Can substitute canned beans and reduce cooking time to 30 minutes) Add chopped Chorizo and greens until wilted. Salt and Pepper to taste. Serve with loaf of French or Italian bread, letting diners tear off pieces of bread.

Ingredients

CHICKEN

1 teaspoon chili powder

1/2 teaspoon ground cumin

1/4 teaspoon garlic salt

1/4 teaspoon ground red pepper (cayenne)

1/8 teaspoon salt

1 (28-ounce) package boneless skinless chicken thighs

SOUP

2 tablespoons Land O Lakes® Butter

1 small (1/2 cup) onion, chopped

2 (10-ounce) cans diced tomatoes with green chilies

1 (15-ounce) can black beans, drained, rinsed

1 cup frozen corn kernels

1 (14.5-ounce) can chicken broth

1 teaspoon chili powder

1/2 teaspoon ground cumin

TOPPINGS

Tortilla strips, if desired

Sour cream, if desired

Chopped fresh cilantro leaves, if desired

Lime wedges, if desired

How to make

  1. STEP 1

    Combine all chicken ingredients except chicken in small bowl. Rub chicken thighs with spice mixture. Set aside.

  2. STEP 2

    Melt butter in Instant Pot on Sauté setting until sizzling. Add chicken thighs; sear 2 minutes on each side.

  3. STEP 3

    Add all soup ingredients to Instant Pot; stir.

  4. STEP 4

    Turn setting to Manual.. Cook 5 minutes; release steam.

  5. STEP 5

    Remove chicken thighs from pot. Shred chicken. Return chicken to pot; stir to combine.

  6. STEP 6

    Serve soup with desired toppings.

I think using Yahoo groups now isn't a very smart idea. I think everyone should use Groups.io. It is so much better.

Hey Beth,
I know yahoo groups are a problem right now, but the new owners are working on trying to fix all the problems. I've noticed some of their fixes already. Yahoo just left a lot of problems along the way on the groups for years, as well as not replacing bad servers & it'll take time for the new owners to find them all & fix them. They seem to be trying to do it w/o any more downtime than they have to.

Please explain this website to me. I have been thinking on moving my soap opera groups there. I don't want to have to repost my photos/screen caps and messages. Also please sent the link to this site. I looked it up once. I talked with another group moderator of my chicken/poultry group. I thought she would look in up and get back to me. She hasn't though.

Serves: 4 - 5 servings

This is everyone's favorite broccoli cheese soup made better - heartier - with tender, juicy chicken and sweet corn. Broccoli cheese soup all gussied up!

Ingredients

1 pound boneless chicken breasts or 2 cups chopped rotisserie chicken

sea or kosher salt and fresh black pepper

2 tablespoons olive oil

1 cup carrots, thinly sliced into half moons

1/2 cup diced celery

3/4 cup diced yellow onion

4 cloves finely minced garlic

1/2 teaspoon dried thyme

2 tablespoons all-purpose flour

2 (14 ounce) cans low-sodium chicken broth

1/2 cup water

12 ounces frozen or fresh broccoli florets

1 cup corn

1 tablespoon fresh chopped parsley

4 ounces cream cheese, at room temperature

1 + 1/2 cups fresh shredded sharp cheddar cheese, plus more for serving

 

Instructions

Cook the chicken (skip if using rotisserie):

Heat the oven to 400 degrees F. Line a baking pan with aluminum foil and coat with non-stick spray.

Place the chicken breasts in the pan and season with salt and pepper. Pour about 1/3 cup water into the bottom of the pan. Cover the pan tightly with aluminum foil.

Bake until cooked through 25 - 40 minutes depending on their size. Let cool until you can handle them.

Place them on a cutting board and cut them on the bias into slices then bite-sized pieces. Put them back in the pan and mix them with the juices. Cover with the foil and set aside.

Make the soup:

In a large soup pot or Dutch oven heat the oil over medium-low heat. Add the carrots, celery, onion, garlic, a couple dashes each salt and pepper and the thyme. Cook until softened about 10 minutes, stirring often.

Sprinkle the flour over the veggies and stir, cooking 2 more minutes.

Stir in the broth, water, broccoli, corn, parsley, ½ teaspoon salt, ¼ teaspoon black pepper and the chicken with all the juices remaining in the pan.

Turn the heat up to medium-high and bring to a simmer. Adjust heat and simmer 25 minutes, stirring often.

Place the cream cheese in a small bowl and add a ladle or two of the hot broth. Stir it together until the cream cheese is melted, smooth and creamy, add more broth as needed.

Stir the cream cheese into the soup.

Slowly stir in the cheese 1/4 cup at a time and continue stirring until it melts before adding more.

Taste and season with more salt and pepper if needed.. Serve with a sprinkling of cheese on top.
