Broccoli Salad

yield: 6 (1 SCANT CUP) SERVINGS

INGREDIENTS:

  • ½ cup chopped red apple
  • 1 teaspoon lemon juice
  • 8 slices center cut bacon, cooked crisp and chopped
  • 3 cups chopped broccoli florets
  • ¾ cup sliced red grapes
  • ½ cup shredded or matchstick carrots
  • 1 medium scallion, chopped
  • 1/3 cup sunflower seeds
  • ½ cup low fat mayonnaise (I used Hellmann's)
  • 2 tablespoons granulated sugar
  • 1 tablespoon apple cider vinegar

DIRECTIONS:

  1. Place the chopped apples in a large mixing bowl and add the lemon juice. Stir to coat the apples. Add the chopped bacon, broccoli florets, grapes, carrots, scallions and sunflower seeds and stir until well combined.
  2. In a separate dish, combine the mayonnaise, sugar and apple cider vinegar and stir until combined. Add the mayo mixture to the other ingredients and stir until well coated.. Store in the refrigerator and serve chilled or at room temperature.

* When I measured the entire finished recipe it came out to about 5 ½ cups total, so I listed the serving size as 6 scant cups.

BBQ One Pot Chili

1 tablespoon vegetable oil
2 pounds ground beef
1 large onion, chopped
4 cloves garlic, finely chopped
1 (28-ounce) can crushed tomatoes
2 (15-1/2-ounce) cans kidney beans, drained
2 cups barbecue sauce
2 tablespoons chili powder
2 teaspoons cumin
1 1/2 teaspoons salt
1/2 teaspoon black pepper

In a large pot over medium-high heat, heat oil until hot. Add beef, onion, and garlic, and cook until meat is browned, stirring occasionally; drain off excess liquid. Add tomatoes, kidney beans, barbecue sauce, chili powder, cumin, salt, and pepper; stir to mix well.
Cover and simmer 30 minutes, stirring occasionally.

Quinoa and Browned Onion Salad with Apples

Quinoa and Browned Onion Salad with ApplesQuinoa is an excellent vegetarian source of protein. It is gluten-free and a good source of fiber and minerals as well. If not available, quinoa may be substituted with brown rice.

Recipe Ingredients:

2 cups water
1/2 cup dried quinoa
1/4 cup (1 ounce) pecan pieces
1 tablespoon plus 1 teaspoon canola oil - divided use
1 cup finely chopped red onions
1 cup finely chopped Granny Smith apple
1/4 cup dried cranberries or cherries
2 tablespoons balsamic vinegar
1 tablespoon pourable sugar substitute
1/2 teaspoon orange zest
1/4 teaspoon salt
1/8 teaspoon red pepper flakes

Cooking Directions:

  1. Bring water to boil in a medium saucepan over high heat. Add quinoa and return to a boil. Reduce heat and simmer, covered tightly, 10 minutes or until liquid is absorbed. Drain in a fine-mesh sieve and run under cold water to cool quickly, shaking off excess liquid.
  2. Meanwhile, heat a medium nonstick skillet over medium-high heat. Add nuts and cook 2 to 3 minutes or until lightly browned, stirring frequently. Remove from skillet and set aside.
  3. Heat 1 teaspoon canola oil in the skillet, tilting to coat bottom lightly. Add onions and cook 8 minutes or until richly browned, stirring frequently. Remove from heat and set aside on a dinner plate in a thin layer to cool quickly, about 4 minutes.
  4. Combine remaining ingredients in a medium bowl. Add quinoa, onions, and nuts, tossing gently, yet thoroughly, until well blended.

Makes 4 servings.

Apple Berry Salad with Lemon Ginger Cream

Apple Berry Salad with Lemon Ginger CreamMixed salad greens topped with tart apple, strawberries, dried cherries, red onion, toasted pecans and blue cheese crumbles, and dressed with a zesty lemon ginger cream.

Recipe Ingredients:

Lemon Ginger Cream Dressing:
1 cup sour cream
1 tablespoon milk
1 tablespoon lemon juice
1 teaspoon lemon zest
2 tablespoons apple cider vinegar
2 teaspoons fresh ginger, grated
1 teaspoon honey
1/4 teaspoon salt
1/2 teaspoon ground black pepper

Salad:
4 cups mixed greens
1 tart apple, sliced
1 cup strawberries, sliced
1/4 cup tart cherries, dried
1/4 cup red onion, sliced
1/4 cup pecans, toasted, chopped
1/4 cup (1 1/2 ounces) Wisconsin Blue Cheese, crumbled

Cooking Directions:

  1. For Lemon Ginger Cream Dressing: Whisk together sour cream, milk, lemon juice, zest, vinegar, ginger, honey, salt and pepper; refrigerate dressing until ready to serve.
  2. For Salad: Portion greens onto four plates. Divide apple slices and strawberries among salads. Garnish with cherries, onion and pecans. Drizzle dressing over salad and sprinkle with blue cheese, if desired; serve immediately.
  3. Cover and refrigerate extra dressing up to 3 days.

Makes 4 servings.

PUBLIC HOUSE DRESSING

Ingredients:

¾ cupSoy Sauce
3 TbspFresh Lemon Juice
1 tspSugar
1 tspToasted Sesame Seeds
1 tspChopped Onion
1¼ cupsPeanut Oil

Directions:

Mix all ingredients except oil in blender on low speed or in food processor equipped with steel knife. Blend or process until onion is minced. With machine running, add oil in thin stream and blend or process until oil is thoroughly incorporated. Makes about 1 pint.

SOUTHWESTERN BEAN SALAD

A fresh combination of corn, rice, black beans, tomatoes, red pepper, romaine lettuce and green onions all tossed in a zesty lime dressing. Garnish with fresh cilantro to complement.

  • Servings: 6
  • Prep Time: 15 minutes
  • Total Time: 15 minutes

Ingredients:

⅓ cupFreshly-squeezed Lime Juice
½ cupExtra Virgin Olive Oil
1 cloveGarlic, minced
1 tspKosher Salt
⅛ tspCayenne Pepper
2(15 Ounce) Cans Black Beans, drained and rinsed
1½ cupsCorn Kernels
1½ cupsCooked White Rice
1Red Bell Pepper, diced
2Fresh Tomatoes, diced
¼ cupFresh Green Onions, sliced
4 cupsRomaine Lettuce, chopped

Directions:

Combine lime juice, olive oil, garlic, salt and cayenne pepper in a small bowl. Mix until ingredients are well blended.

Mix beans, corn, rice, red pepper, tomatoes, green onions and lettuce in a large bowl. Pour lime juice mixture over salad and serve.

SHAVED WATERMELON SALAD

This salad consists of only 4 ingredients: vibrant watermelon, plump ripe blueberries, fresh basil and organic micro-greens… are you drooling yet?

  • Servings: 4
  • Prep Time: 10 minutes
  • Total Time: 10 minutes

Ingredients:

4 cupsShaved Organic Seedless Watermelon, see instructions on how to prepare
2 cupsOrganic Blueberries
6Large Fresh Organic Basil Leaves
1 cupFresh Organic Micro-greens

Directions:

20 minutes before you make this recipe-gather 4 small serving plates, rinse them and shake off the excess water (do not dry) and place the in refrigerator. Cut the rind off of your watermelon to expose the red meat. Cut the watermelon into large rectangle pieces about 2 inches thick by 4 inches long. Use a vegetable peeler and shave the thin side of the rectangle into a strainer, measure out 4 cups of shavings, return them to the stainer and allow to drain until you are ready to plate. Wash and de-stem the blueberries and set aside. Wash and spin dry the basil, cut off the stems, fine chiffonade [stack leaves on each other, roll tightly lengthwise and thin slice the roll width-wise to make thin ribbons.] and set aside. Wash and spin dry the micro-greens and set aside. Now it is time to plate your salads. Remove the plates from the refrigerator. ON EACH PLATE: Place 1 cup of the watermelon shavings in the middle in a pile. Top this pile with 1/2 cup blueberries. Top the whole pile with 1/4 of the chiffonaded basil. Pile 1/4 cup of the micro-green high on top as shown in the picture. Serve and enjoy!

Helpful Tips:

NOTE: this can be made up to two hours ahead of time. Prepare all of the ingredients (minus the plates) as in the instructions and store them in the refrigerator in separate sealed containers until you are ready to plate. Be sure to prep the serving plates at least 30 minutes before putting your salads together.
