MEXICAN MACARONI SALAD

Prep Time: 15 Minutes

Cook Time: 15 Minutes

Difficulty: Easy

Servings: 12

FOR THE SALAD:

1 pound Elbow Macaroni, Cooked To Package Instructions, Drained, And Rinsed With Cold Water

2 ears Fresh Corn, Husks And Silks Removed

1 can (15 Oz. Size) Black Beans Drained And Rinsed

1/2 cup Chopped Black Olives

6 whole Roma Tomatoes (or 2 Large Tomatoes), Chopped

3 whole Green Onions, Sliced Thin

1/2 whole Red Onions, Finely Diced

Chopped Cilantro (optional)

FOR THE DRESSING:

1 cup Jarred Salsa (spicy Is Best!)

1 cup Sour Cream

1/4 cup Mayonnaise

1 clove Garlic, Minced Or Pressed

1/2 teaspoon Cumin

Salt And Pepper, to taste

2 Limes, Juiced (optional)

Grill the corn on a grill pan, or just place it in a hot skillet to brown some of the kernels. Remove from pan, allow to cool slightly, then use a sharp knife to cut the kernels off the cob.

Combine all the dressing ingredients in a bowl and stir until combined.

Place the macaroni, corn, beans, olives, tomatoes, green onions, red onion, and cilantro (if using) in a large bowl. Pour 3/4 of the dressing over the top and gently toss until all the ingredients are coated. Add the final 1/4 of the dressing if you think it needs it. Cover and allow salad to chill for 2 hours.

Garnish with cilantro, lime wedge, and any other extra ingredients you have!

Belize's Escabeche Soup - Onion Soup

Here is my favourite recipe so far for escabeche. At first, I did not even wanted to try it as I thought the soup have an onion smell, but believe it or not, no.

 

4 Servings

 

1 pound chicken parts; wings, legs, breast - whatever you want

4 tablespoon pickled Jalapenos; (but only the water. If you want it very spicy, add 2-3 small slices of jalapeno pepper

2 tablespoon Canola Oil

5 tablespoons Cider Vinegar; I use the apple vinegar

5 cups Water

1 cup Carrot; sliced

1 clove Fresh garlic, peeled

3 large white onion; about 13 oz

1/2 teaspoon Dried oregano

2 cups Water

2 tablespoon Chicken bouillon

 

In a pan hit very well 2 TBS oil (aout 3-4 minutes). Add chicken to fry. Do not move in pan until is well fried on a side. Than flip it to the other side until well done (about 3-4 minutes each side until golden).

Separate, In a pot add water with 1 clove of garlic, 1/2 tsp dry oregano, 2 tbs Chicken bouillon.

Leave few minutes to boil.

Add 2 tbs JALAPENO juice. If you want it hotter, add more jalapenos.

leave few minutes to boil

add 3 tbs white vinegar and leave few more minutes to boil.

Add chicken in water.

Taste the soup.

add 1 cup carrots (sliced)

leave few minutes

add little bit of oil (where you fried the chicken and scrub good the pot)

Clean and cut in fine rounds fresh onion. huge white onion.

If you taste it and if is not enough vinegar, add more until reach the taste you love.

Add 2 cups of water in a separate pot (for the onion). You need to precook the onion to remove the strong smell.

Slice all onion very thin . Boil only few minutes (3-4) and take the rings apart in same time. Drain the water and let onions rest.

Leave the soup to boil for 10 more minutes. Add onion and immediately stop the fire.

Serve with hot corn tortilla.

Toss together fresh spinach, veggies, pineapple and ham for this light, lovely main-dish salad. —Anita Ashe, Sherbrooke, Nova Scotia

TOTAL TIME: Prep/Total Time: 25 min.
MAKES: 4 servings


Ingredients

     4 cups fresh baby spinach
     2 cups grape tomatoes
     2/3 cup seeded chopped cucumber
     1/2 cup sliced fresh mushrooms
     8 slices red onion, halved
     1 can (20 ounces) unsweetened pineapple chunks, drained
     8 ounces sliced deli ham, julienned
     1/3 cup fat-free poppy seed salad dressing




Directions

Divide spinach among four plates. Top with tomatoes, cucumber, mushrooms and onion. Arrange pineapple and ham over salad. Drizzle with dressing. Yield: 4 servings.



Nutritional Facts

2 cups equals 184 calories, 2 g fat (trace saturated fat), 29 mg cholesterol, 615 mg sodium, 31 g carbohydrate, 3 g fiber, 13 g protein. Diabetic Exchanges: 2 lean meat, 2 vegetable, 1/2 starch, 1/2 fruit.

Directions

In a large salad bowl, combine the spinach, mushrooms, eggs and bacon. Drizzle with vinaigrette; toss to coat. Yield: 8 servings.

Ingredients

    1/3 cup sugar
     1 small onion, finely chopped
     1/4 cup cider vinegar
     1/4 cup unsweetened applesauce
     2 tablespoons water
     2 tablespoons canola oil
     4 teaspoons prepared mustard
     1 teaspoon salt
     1/2 teaspoon coarsely ground pepper
     Fresh spinach leaves




Directions

Combine the first nine ingredients in a blender or food processor; cover and process until smooth. Serve over fresh spinach. Store leftover dressing in the refrigerator. Yield: 1-1/3 cups.


Nutritional Facts

Ingredients

    1/4 cup vegetable oil
     2 tablespoons red wine vinegar
     1 teaspoon sugar
     1 teaspoon finely chopped onion
     1 teaspoon finely chopped green pepper
     1 teaspoon minced fresh parsley
     1 teaspoon ketchup
     1/4 teaspoon salt
     1/4 teaspoon ground mustard
     1/4 teaspoon paprika
     2 cups torn fresh spinach
     1 hard-cooked egg, sliced
     3 bacon strips, cooked and crumbled




Directions

In a jar with a tight-fitting lid, combine the first 10 ingredients; shake well. Divide spinach between two serving bowls or plates; top with egg and bacon. Drizzle with dressing. Serve immediately. Yield: 2 servings.

MAKES: 10-12 servings


Ingredients

    12 cups torn fresh spinach
     8 green onions, chopped
     6 hard-cooked eggs, sliced
     1/2 pound fresh mushrooms, sliced
     1 can (8 ounces) sliced water chestnuts, drained
     1 jar (6-1/2 ounces) marinated artichokes, drained and quartered
     8 bacon strips, cooked and crumbled
     DRESSING:
     1/2 cup cider vinegar
     1/2 cup sugar
     1/2 teaspoon salt
     1/2 teaspoon ground mustard
     1 teaspoon grated onion
     1 cup vegetable oil




Directions

In a large bowl, combine the first seven ingredients. For dressing, combine the vinegar, sugar, salt, mustard and onion in a blender; cover and process until smooth. While processing, gradually add oil in a steady stream. Drizzle over salad; gently toss to coat. Refrigerate any leftover dressing. Yield: 10-12 servings.

Fiery Chicken Spinach Salad Recipe



This hearty and colorful main-course salad is easy to throw together when I get home from work, because it uses canned black beans and Mexicorn and packaged chicken breast strips. I sometimes add a can of ripe olives and fresh cherry tomatoes from our garden.

MAKES: 6 servings


Ingredients

    6 frozen breaded spicy chicken breast strips, thawed
     1 package (6 ounces) fresh baby spinach
     1 medium tomato, cut into 12 wedges
     1/2 cup chopped green pepper
     1/2 cup fresh baby carrots
     1 can (15 ounces) black beans, rinsed and drained
     1 can (11 ounces) Mexicorn, drained
     3 tablespoons salsa
     3 tablespoons barbecue sauce
     3 tablespoons prepared ranch salad dressing
     2 tablespoons shredded Mexican cheese blend



Directions

Heat chicken strips in a microwave according to package directions. Meanwhile, arrange the spinach on individual plates; top with tomato, green pepper, carrots, beans and corn.

In a small bowl, combine the salsa, barbecue sauce and ranch dressing. Place chicken over salads. Drizzle with dressing; sprinkle with cheese. Yield: 6 servings.


Editor's Note: This recipe was tested in a 1,100-watt microwave.

Every time I serve this fresh spinach salad, I'm asked for the recipe. Everyone enjoys the zesty dressing, bacon pieces and toasted pecans. It's so easy and impressive.

TOTAL TIME: Prep/Total Time: 20 min.
MAKES: 10 servings


Ingredients

    3/4 cup cream-style cottage cheese
     1/2 cup sour cream
     2 to 3 tablespoons sugar
     4-1/2 teaspoons cider vinegar
     2 teaspoons prepared horseradish
     3/4 teaspoon ground mustard
     1/4 teaspoon salt
     10 cups chopped fresh spinach
     1 cup chopped pecans, toasted
     6 bacon strips, cooked and crumbled




Directions

In a food processor, combine cottage cheese and sour cream; cover and process until smooth. Add the sugar, vinegar, horseradish, mustard and salt; cover and process until smooth.

In a salad bowl, toss spinach with pecans and bacon. Serve with dressing. Yield: 10 servings (1-1/4 cups dressing).

about 1 cup salad with 2 tablespoons dressing equals 163 calories, 13 g fat (3 g saturated fat), 15 mg cholesterol, 246 mg sodium, 6 g carbohydrate, 2 g fiber, 6 g protein.

Spinach Sausage Soup Recipe



Chock-full of potatoes, Italian sausage and spinach, this hearty soup is sure to disappear fast. "Not only is it delicious and quick, but it freezes well," explains Bonita Krugler of Anderson, Indiana. Adjust the amount of broth to suit your family's preference.

MAKES: 10 servings


Ingredients

1 pound Johnsonville® Mild Italian Links or Ground Sausage
4 cans (14-1/2 ounces each) chicken broth
8 small red potatoes, quartered and thinly sliced
1 envelope Italian salad dressing mix
2 cups fresh spinach or frozen chopped spinach




Directions

In a large skillet, brown sausage over medium heat until no longer pink. Meanwhile, in a Dutch oven, combine the broth, potatoes and salad dressing mix. Bring to a boil; cover and simmer for 10 minutes or until potatoes are tender.

Drain sausage. Add sausage and spinach to broth mixture; heat through. Yield: 10 servings (2-1/2 quarts).
