Layered Cobb Salad

3 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
2 teaspoons Dijon mustard
1 clove garlic, minced
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon black pepper
1/2 cup extra-virgin olive oil
3 (6 ounce) skinless, boneless chicken breast halves
2 California avocados
1 head romaine, cut crosswise into 1/2-inch-wide slices
bacon slices, cooked until crisp, drained, and finely chopped
3 medium tomatoes, seeded and cut into 1/2-inch pieces
3 ounces Roquefort cheese, crumbled
2 bunches watercress, coarse stems discarded
2 hard-boiled large eggs, halved and forced through a coarse sieve
1/4 cup finely chopped fresh chives

Make dressing: Whisk together all dressing ingredients except oil in a bowl, then add oil in a slow stream, whisking until emulsified.

Make salad: Bring 5 cups water to a simmer in a 2-quart saucepan, then simmer chicken, uncovered, 6 minutes. Remove pan from heat and cover, then let stand until chicken is cooked through, about 15 minutes. Transfer chicken to a cutting board and cool completely. Cut into 1/2-inch cubes.
Halve, pit, and peel avocados, then cut into 1/2-inch cubes.
Spread romaine over bottom of a 6- to 8-quart glass bowl and top with an even layer of chicken. Sprinkle bacon over chicken, then continue layering with tomatoes, cheese (to taste), avocados, watercress, eggs, and chives.
Just before serving, pour dressing over salad and toss.

Asian-Style Chicken Salad
8 servings

1 cup salad oil
6 tablespoons rice vinegar
1/4 cup sugar
1/2 teaspoon pepper
2 3 - ounce package chicken-flavored ramen noodles
4 cups finely chopped cooked chicken (3 whole medium chicken breasts)
1/2 medium head of cabbage, shredded (4 cups)
3/4 cup toasted sliced almonds
1 small onion, chopped (1/3 cup)
1/4 cup toasted sesame seeds

In a small bowl, whisk together salad oil, rice vinegar, sugar, pepper and contents of seasoning packets from noodles. Set aside.
In a large saucepan, bring a large amount of water to boiling. Add the noodles and cook for 2 to 3 minutes or till just tender. Drain and transfer to a large bowl. Pour 1/4 cup of the oil-and-vinegar mixture over ramen noodles and toss to coat.
Add the chicken, cabbage, sliced almonds, chopped onion and sesame seeds to noodle mixture and mix well.
Pour the remaining oil-and-vinegar mixture over the salad. Toss to combine. Cover and chill for 2 to 24 hours.

Italian Meatball Soup

This is a great soup with good flavor and so easy to make.

2 1/4 cups water
1 can (14 1/2 ounce) diced tomatoes with
-- onion and garlic, undrained
1 cup low-sodium beef broth
1/2 teaspoon dried Italian seasoning, crushed
1/2 cup dried multigrain or whole wheat elbow macaroni
2 cups loose-pack frozen Italian blend vegetables
1/2 of a 16 ounce package frozen bite-size
-- Italian-style cooked meatballs (16)
2 tablespoons shredded or grated Parmesan cheese (optional)

In a large saucepan stir together water, undrained tomatoes, beef broth,
and Italian seasoning. Bring to boiling. Add uncooked pasta and frozen
vegetables. Return to boiling; reduce heat. Cover and simmer about 10
minutes or until pasta and vegetables are tender.

Meanwhile, place meatballs in a medium microwave-safe bowl. Microwave,
uncovered, on 100% power (high) from 2 1/2 to 3 minutes or until heated
through. Drain meatballs; pat dry with paper towels. If desired, halve
meatballs. Stir meatballs into soup mixture.

If desired, sprinkle individual servings with Parmesan cheese.

Shrimp and Chorizo Stew

1/4 cup extra-virgin olive oil
1 large Spanish onion, diced
4 cloves garlic, smashed
4 ounces Spanish chorizo, casings removed, sliced
2 teaspoons smoked paprika (hot or sweet)
Kosher salt
1 cup canned whole plum tomatoes, roughly chopped, plus 1/2 cup juice from the can
2 bay leaves
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1 pound russet potatoes, peeled and cut into 1-inch chunks
1 bunch kale, stems removed and leaves roughly chopped
1 pound medium shrimp, peeled and deveined

Heat the olive oil in a small Dutch oven over medium heat. Add the onion and garlic and cook until golden brown, about 15 minutes. Add the chorizo, paprika and 1 teaspoon salt and cook until the oil turns deep red, about 2 minutes. Add the chopped tomatoes (reserve the juice), the bay leaves, thyme and oregano and cook 1 more minute.

Add the potatoes, 2 cups water, the tomato juice and 1 teaspoon salt. Bring to a boil, then reduce the heat, cover and simmer until the potatoes are almost tender, about 15 minutes. Add the kale and cook until the potatoes and kale are tender, about 10 more minutes. Stir in the shrimp and simmer just until they curl and turn pink, about 3 minutes. Discard the bay leaves. Ladle the stew into bowls.

Serves 4

VEGGIE TUNA SALAD
MAKES 6 SERVINGS.

6 hard boiled eggs, quartered
1 onion, sliced
12 oz jar marinated artichoke quarters, drained
8 cups lettuce
2 tsp lemon zest
1 cup creamy Caesar dressing
1/2 tbs Tuscan seasoning blend
1/2 cup pitted olives
2 cups grape tomatoes
12 oz cooked tuna
1 tbs chopped thyme
1 pound green beans, trimmed
1 1/2 pounds potatoes, quartered

In pot, bring to a boil potatoes and enough salted water to cover. Cook until tender, adding green beans during last 2 min. of cooking. Drain, rinse under cold water until cool. In bowl, combine dressing, thyme and zest, set aside. Line platter with lettuce leaves. In separate bowl, toss tomatoes, artichoke, olives, onion, Tuscan seasoning, tuna, potato mixture and 1/4 cup dressing, arrange over lettuce. Top with eggs. SERVE with remaining dressing...

VEGGIE RAINBOW MEDLEY
MAKES 6 SERVINGS.

1 cup oil and vinegar dressing
1 cucumber, peeled, sliced
3 carrots, shredded
15 oz can red kidney beans
8 cups spinach
1 cup snow peas
6 hard boiled eggs, chopped
2 red bell peppers, sliced
3 cups shredded red cabbage
1 pound golden beets, peeled

Heat oven to 400 degrees. Wrap beets in foil. Roast 1 hour or until beets are tender. Let cool, chop. Place 7 cups spinach leaves on platter. Starting at one end of platter, arrange cabbage, beans, peppers, carrots, eggs, cucumbers, peas and 1 cup spinach in rows to create rainbow. SERVE salad with dressing...
