{soups-salads-and-salad-dressings} File - Unscribe From The Group - Please Read

 


If for any reason you want to leave the group. Please don't write into the group to ask to be unsubbed from the group. The owner and moderators can't do that because we don't have your account. There is two ways to do this. The first one is to go to your yahoo group list. Then you push the edit groups. There you will then see where it has the menu of to change your e-mail from one address to another if you have more then one. It also has unsub. Push that then save. It will remove you from the list.The other way is by mail. There is a link at the bottom of the e-mail that you can click to be unsubbed.

I don't mind messages being sent but it has come to my attention(me approving message and other e-mails from other people about their groups)that some messages sent are being considered spam.I will not approve these messages.These groups are for recipes and questions or comments about recipes, not about stuff that has nothing to do about recipes or the kitchen.If I recieve 2 or more of these from the same person I will do what I don't like to do, that is unsub you and ban you from the groups.I hope you underatand and so by this rule. Fuji Apple Chicken Salad- my favorite sandwich shop meal recreated and even tastier than the original!!
INGREDIENTS
  • 10 ounces mix of spring mix salad and chopped romaine
  • ¼ to ½ red onion, thinly sliced
  • 2-3 vine-ripened tomatoes
  • 1-2 cooked chicken breast or about 2¼ cups cooked shredded chicken
  • 2 cups apple chips
  • ¾ cup roasted pecan halves
  • ½ cup crumbled Gorgonzola cheese
  • ¾ cup Panera Bread Fuji Apple Vinaigrette
INSTRUCTIONS
  1. Combine ingredients in a large bowl and evenly divide to serve 4 salads.

*Ingredient measurements are a guide. Feel free to use more or less of each ingredient, depending on preference.

Turn your kitchen into the private dining room of a country club when you serve up this fresh fruit salad at your next get-together. Our recipe for Country Club Fruit Salad is dressed up in a lively yogurt sauce that makes this fruit salad all the better!

What You'll Need:
  • 1 (8-ounce) container low-fat vanilla yogurt
  • 1/2 cup honey
  • 2 tablespoons orange juice
  • 1/4 teaspoon grated orange peel
  • 1/8 teaspoon salt
  • 1 cantaloupe, peeled and cut into chunks
  • 1/2 honeydew, peeled and cut into chunks
  • 2 oranges, peeled and sliced
  • 2 kiwis, peeled and sliced
  • 1 pint fresh strawberries, washed
What To Do:
  1. In a medium bowl, combine yogurt, honey, orange juice, orange peel, and salt; mix well and set aside.
     
  2. Arrange assorted fruit on 4 individual plates and drizzle with yogurt dressing. Serve immediately.
Notes

To make a deluxe fruit platter, add a scoop of cottage cheese or fruit sorbet to each serving. Also, make sure to add any other favorite fruit.

Our fresh-tasting Summer Potato Salad made with all-American Idaho potatoes will conjure up memories of lazy summer afternoon family picnics. How 'bout making some new memories with it this summer?

What You'll Need:
  • 4 pounds Russet Idaho potatoes, peeled and cut into 1-inch chunks
  • 1 cup mayonnaise
  • 3 tablespoons apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoons salt
  • 3/4 teaspoon black pepper
  • 1 cup diced celery
  • 1/2 cup diced red onion
What To Do:
  1. Place potatoes in a large pot and add enough water to cover them. Bring to a boil over high heat and cook 15 to 20 minutes, or until fork-tender. Drain and cool.
     
  2. In a large bowl, combine mayonnaise, vinegar, garlic powder, salt, and pepper; mix well. Add potatoes, celery, and onion to mixture and stir gently until evenly coated. Refrigerate for 2 hours, or until ready to serve.

Cucumber & Melon Salad with Mint


While tomatoes and peaches aren't worth bothering with during the cooler months, cucumbers and melons fare much better. This Cucumber & Melon Salad with Mint from Lynne Rossetto Kasper's and Sally Swift's The Splendid Table's How to Eat Weekends is a sweet way to ease into fall without going cold turkey on the summery produce.

It's a delicate salad that lets the cool, crispness of the cucumbers and sweet juiciness of the melon really shine through. Instead of overpowering the fruit with a harsh acid such as vinegar or lemon juice, a few tablespoons of wine does the trick here, keeping everything light and bright. To finish, the salad is topped with crumbles of young sheep cheese. If you're looking for something punchy, opt for a salty ricotta salata; if you prefer to keep this salad mild, a creamy sheep feta works like a charm.

  • YIELD:serves 2 as a main dish and 4 as a first course or side dish
  • ACTIVE TIME:10 minutes prep, 5 minutes assembly
  • TOTAL TIME:45 minutes

Ingredients

  • 2 medium cucumbers, peeled, seeded, and cut into 1-inch pieces (about 1 1/2 cups)
  • Salt
  • 1 garlic clove, halved
  • 1 1/2 cups ripe cantaloupe or watermelon, seeded and cut into 1-inch chunks
  • 1/4 tightly-packed cup fresh spearmint leaves, torn
  • 1 heaping tablespoon finely snipped chives or scallions (green parts only)
  • 1 tablespoon white wine, or to taste
  • 1 tablespoon good-tasting extra-virgin olive oil, or to taste
  • Freshly ground black pepper
  • 1/4 to 1/2 teaspoon sugar (optional)
  • 1/4 cup crumbled young sheep cheese (Ricotta Salata, Cacio di Roma, Pecorino, or feta)

Directions

  1. 1.

    Sprinkle the cucumbers with salt, roll up the pieces in a double thickness of paper towel, and let rest in the refrigerator for 30 minutes. Unwrap and pat dry.

  2. 2.

    Rub a serving bowl with the garlic. Add the cucumbers, melon, spearmint, chives, 1 tablespoon wine, and 1 tablespoon oil. Gently combine. Add wine, oil, salt, pepper, and sugar (if using) to taste.

    Serve topped with spoonfuls of crumbled cheese and eat immediately.
