Moroccan Orange Salad

A refreshing salad or light dessert.

Serves: 4

1 tablespoon lemon juice

2 tablespoons fresh orange juice

3 tablespoons confectioners' sugar

1/2 teaspoon pure vanilla extract

1/2 teaspoon cinnamon romaine leaves, washed and dried

3 oranges, peeled and sliced

1/2 cup blanched almonds, slivered or chopped

8 dates, sliced lengthwise

In a small bowl combine lemon and orange juices, confectioners sugar, vanilla extract and cinnamon.

Arrange lettuce leaves on a serving plate. Layer oranges decoratively onto plate.

Spoon juice/sugar mixture over the oranges and sprinkle with almonds and fresh dates. Chill until serving.

Party Chicken And Pasta Salad

Blend an Asian-influenced dressing to accent a spectacular mix of fresh vegetables, fruits, and tender chicken.

Prep Time 40 Minutes

Total Time 40 Minutes

Makes 12 servings

Salad

5 cups uncooked rotini pasta (16 oz)

4 cups cubed cooked chicken

1 cup thinly sliced celery

1/2 cup chopped green onions

12 oz fresh snow pea pods, trimmed, halved crosswise

2 cups seedless red and/or green grapes, halved

1 can (8 oz) pineapple tidbits in unsweetened juice, drained, reserving liquid

1 cup slivered almonds, toasted if desired

6 to 8 leaves leaf lettuce

Dressing

1 cup mayonnaise or salad dressing

2 tablespoons finely chopped fresh gingerroot

1 teaspoon garlic salt

2 tablespoons reserved pineapple liquid

2 tablespoons soy sauce

2 tablespoons honey

Cook pasta as directed on package. Drain; rinse with cold water to cool. Drain well.

Meanwhile, in large bowl, mix remaining salad ingredients except almonds and lettuce. In small bowl, mix dressing ingredients.

Add pasta and 1/2 cup of the almonds to salad; stir gently to mix. Add dressing; toss to coat. Line serving bowl or platter with lettuce. Spoon salad over lettuce. Sprinkle with remaining almonds.

Makes 12 servings (1 1/3 cups each)

Tip

Deli chicken or rotisserie chicken are easy ways to get cooked chicken for this salad.

Toasting Almonds

Cook almonds over medium heat, 5 to 7 minutes, until golden brown. Stir the almonds frequently so they don't burn. Remove them from the skillet when they're done to prevent further cooking.

Kale & Quinoa Salad with Dates, Almonds & Citrus Dressing

Serves 6

For the salad and toppings:

1 tablespoon olive oil

1 large onion, diced

Salt

1/2 cup red quinoa

1 small clove garlic, smashed

1 bunch lacinato kale (3/4 to 1 pound, with stems)

1/2 heaping cup whole dates

1/2 cup roasted salted whole almonds

For the dressing:

1 clementine or mandarin orange, juiced

1/2 lime, juiced

2 teaspoons maple syrup

1/4 cup extra-virgin olive oil

Salt and freshly ground black pepper

Heat the olive oil in a wide sauté pan over medium heat. Add the onion and sprinkle lightly with salt. Cook, stirring occasionally, until the onion has darkened to a toasty brown and smells caramelized — about 20 minutes. Remove from the heat and set aside. You should have about 1/2 cup of cooked onions. (This can be done up to 3 days ahead of time, and the onions can be refrigerated.)

Rinse the quinoa in a fine mesh strainer. Add it and the garlic to a 2-quart saucepan set over medium-high heat and sauté for about a minute both to dry the grain and toast it lightly. Add 1 cup water and 1/2 teaspoon salt and bring to a boil. Cover and turn the heat to low; cook for 15 minutes. Turn off the heat but leave the lid on for an additional 5 minutes. After 5 minutes, remove the lid and fluff with a fork.

While the onions are caramelizing and the quinoa is cooking, slice off the muddy bottoms of the kale stems, then slice the rest of the bunch into fine ribbons. Wash thoroughly and spread on a towel to dry.

Pit the dates and slice them into quarters. Roughly chop the almonds, by which I mean try to chop each almond into just two or three pieces, no more.

Make the dressing: Whisk the juices together (you should have about 1/4 cup total of juice, or a little less). Whisk in the maple syrup and olive oil. The dressing will be emulsified but still thin. Stir about 2 tablespoons of the dressing into the quinoa after it finishes cooking.

Assemble the salad: Toss the kale with all of the still-warm quinoa and the caramelized onions. Toss with about half the dressing and taste. Add the remaining dressing if desired, then toss with the dates and almonds. Taste a bite; if it needs more salt, add it now, as well as fresh pepper if desired.

This salad keeps very well; the kale gets more tender as it sits in the dressing. Refrigerate for up to 5 days.

Recipe Note

 

    Be sure to use a leafy kale in this salad, as opposed to a curly. How to know the difference? Lacinato kale (also called dinosaur, Tuscan, or black kale) comes in bundled sheaves of leaves, like chard or collards. Curly kale looks more like a big bouquet of floral filler, with ruffled edges, and it is too tough for this recipe. (I find chewing raw curly kale to be like taking bites of shrubbery, personally, so I usually cook it.) See more here about types of kale.

"New Hampshire folk feel almost as strongly about their maple syrup as they do about their 'first in the nation' presidential primary. The people here like this dressing, which I toss with bagged, washed salad greens just before serving."

Can add some Chinese 5-Spice seasoning as recommended.

  

1/3 cup maple syrup1 tablespoon canola oil
2 tablespoons finely chopped shallots1/4 teaspoon freshly ground black pepper
3 tablespoons whole-grain Dijon mustard1/8 teaspoon salt
2 tablespoons red wine vinegar

Preparation

Combine all ingredients in a medium bowl, stirring with a whisk.

Wheat berries, rice and barley add whole-grain goodness to a super side.

cup uncooked long-grain brown rice

cup uncooked hulled or pearl barley

cup dried cherries or cranberries

cup diced carrot

cup chopped fresh parsley, if desired

medium unpeeled eating apple, chopped (1 cup)

medium green onions, chopped (1/4 cup)

Sweet Red Onion Dressing

cup sugar
1/3
cup canola oil
1/3
cup cider vinegar

tablespoons grated red onion
2
teaspoons Worcestershire sauce
2
cloves garlic, finely chopped

  • In 2-quart saucepan, heat water and wheat berries to boiling. Reduce heat to low. Cover; simmer 10 minutes. Stir in brown rice and barley. Cover; simmer about 50 minutes longer or until grains are tender. Drain if necessary.
  • In small bowl, mix dressing ingredients.
  • In large bowl, mix cooked grains and remaining salad ingredients. Pour dressing over salad; toss. Cover; refrigerate 1 to 2 hours or until chilled.

Each serving of this salad offers 1 serving of whole grain.

When pomegranates are in season, the seeds make a great substitution for the cherries.

Make this salad up to 24 hours ahead. The amazing flavors develop more with time.

Fruits, veggies and cheese burst with flavor when tossed with a light and natural vinaigrette.

large red apple, cut into fourths, then cut crosswise into thin slices

large pear, cut into fourths, then cut crosswise into thin slices

medium stalk celery, cut diagonally into thin slices (1/2 cup)

oz Havarti cheese, cut into julienne strips

tablespoons olive or vegetable oil
2
tablespoons frozen apple juice concentrate, thawed
3
tablespoons coarsely chopped honey-roasted peanuts

  • In medium salad bowl, mix apple, pear, celery and cheese.
  • In small bowl, thoroughly mix oil and juice concentrate. Pour over apple mixture; toss to coat. Sprinkle with peanuts.

You can use your favorite cheese instead of the Havarti. Jarlsberg or Cheddar would be nice choices.

Use a mandoline slicer to make quick work of slicing the fruit.
