Today is going to be warmer and more humid and keep increasing to the weekend.  I sure was enjoying our nice early fall weather. 

I’ll be at the Senior Center today, then visit the Farmer’s Market, see my Orthotics guy, then deliver death certificates to the SSA and a couple others for my mom’s estate.

Asian Chicken Salad

This healthy, hearty salad is packed full of fruit AND vegetables.

Ingredients

2 cups cooked chicken, skin removed, cut into bite-sized pieces

4 cups cabbage, shredded

1 cup mushrooms, sliced

1 cup carrots, grated

2 tablespoons cilantro, chopped

1 cucumber, thinly sliced

3 green onions, thinly sliced

1 mandarin orange or tangerine, divided into sections

1/2 cup nonfat Asian or Oriental-style salad dressing

black pepper

 

Tips

We love to toss the salad with cooked (and cooled) rice noodles snipped into bite-size pieces.

Directions

1. In a large bowl, combine chicken, cabbage, mushrooms, carrots, cilantro, cucumber, and dressing. Toss well. 

2. Top with green onions and tangerine sections. Pepper to taste.

Serves 4.

This is the second of the salads we enjoyed  at the Sharpe's house earlier this month.  Panzanella is a refreshing Italian bread salad best prepared when tomatoes are at their juiciest in the summer.  We were on a "salads-for-supper" kick one evening and this tasty salad was one of our stars of the show.

There's very little cooking required here; prepare your croutons before beginning and you'll be well on your way.  We used part of a loaf of crusty French bread for croutons and very ripe Roma tomatoes that were begging to be used. Don't forget the basil and the Mozzarella as they add both flavor and creaminess here.

For best results, make this salad an hour or so before you sit down to the table and serve it at room temperature. Whether eaten as a main dish or a simple side with grilled meat, this one is sure to please everyone at your table.

Panzanella

Ingredients

1/2 loaf (8 oz.) rustic bread such as a French loaf

2 tsp. balsamic vinegar

1/2 cup olive oil

1 tsp. sea salt

1/2 tsp. pepper

1 clove garlic, minced

4 ripe tomatoes, diced

2 small cucumbers, peeled, seeded, chopped

1 red or green pepper, seeded and chopped

1 small red onion, sliced

10 leaves fresh basil, snipped into small pieces

1-1/2 cups Mozzarella cheese, diced or shredded

 

Directions: Heat oven to 350. Cut or tear the bread into 1-inch pieces and spread on a baking sheet. Bake until it is dry and slightly crisp (think croutons), about 8 minutes; remove from oven and set aside. In medium bowl, whisk vinegar, olive oil, salt, pepper, and garlic; set aside. In large serving bowl, toss the bread, tomatoes, cucumbers, bell pepper, onion, basil and the mozzarella. Add dressing and mix well. Allow salad to sit before serving, room temperature is fine.

Olives, tomatoes, meats, and cheese are piled onto skewers, along with plenty of crunchy lettuce. While this one-handed salad is my idea of the perfect party food, my kids declared this one of the best lunches we've ever made. My youngest son, the child with olives on every fingertip every chance he gets, happily filled an entire skewer with olives and tomatoes.

 

When the California Olive Committee asked me if I'd like to share a favorite way to snack on olives, I almost laughed. I buy olives constantly, yet they don't always make it into the planned dishes. The minute my boys spy a can of olives in the pantry, they ask if we can open it for snacking. For my family, simplicity is best when olives are involved, and these salad snacks are as simple as it gets!

COOK'S NOTE: Anything goes with this recipe. The directions are really just guidelines. My kids filled their skewers with all their favorite items. For serving a crowd, these can be made several hours in advance and kept covered in the refrigerator until ready to serve.

Olives: extra large ripe black or ripe green olives

Tomatoes: grape, cherry, chocolate cherry, sunburst

Cheese: mini mozzarella balls, cubes of cheddar

Meats, sliced very thin: prosciutto, black forest ham, roast beef, oven roasted turkey

Greens: butter lettuce, green leaf, romaine

Wooden skewers

 

Thread an assortment of olives, tomatoes, cheese, meats and greens through the skewers. Pile the skewers on a tray or platter and enjoy!

My potato salad is so easy, I can quickly put it together in the kitchen of our trailer home on the lake. I've shared the recipe with our three daughters, and it's become a signature dish with all of them. Our grandchildren eat it up.

TOTAL TIME: Prep: 15 minutes. + chilling

YIELD: 10-12 servings

Ingredients

·                                 8 cups cubed peeled cooked potatoes (about 11 medium)

·                                 10 bacon strips, cooked and crumbled

·                                 3 hard-cooked eggs, chopped

·                                 1 carton (8 ounces) French onion dip

·                                 1/2 cup dill pickle relish

·                                 1/2 teaspoon salt

·                                 1/2 teaspoon pepper

·                                 Leaf lettuce, optional

Directions

·                                 1. In a large bowl, combine the potatoes, bacon and eggs. In a small bowl, combine the dip, relish, salt and pepper. Stir into potato mixture. Cover and refrigerate for at least 2 hours. Serve in a lettuce-lined bowl if desired.

·                                 Yield: 10-12 servings.

Nutritional Facts

1 serving (1/2 cup) equals 189 calories, 7 g fat (3 g saturated fat), 57 mg cholesterol, 453 mg sodium, 27 g carbohydrate, 2 g fiber, 6 g protein.

This is a fantastic summer recipe. Quick and easy, it is great to have with your other summer dishes. Best of all, this can be made well ahead of time so you won't miss out on summer fun!

Serves: 4

Ingredients

4 ears fresh corn on the cob, husks removed

1/4 cup Crisco vegetable oil

3 tablespoons lime juice

3 tablespoons pure maple syrup

1/4 teaspoon ground black pepper

1 small red pepper, finely chopped (about 1/3 cups)

3 green onions, finely chopped

3 tablespoons chopped fresh cilantro leaves or parsley

Instructions
  1. Rub the corn with 2 tablespoons oil. Beat the remaining oil, lime juice, maple syrup and black pepper in a small bowl with a fork or whisk.
  2. Lightly oil the grill rack and heat the grill to medium. Grill the corn for 5 minutes or until lightly browned on all sides. Remove the corn from the grill. Cut the corn kernels from the cob with a sharp knife.
  3. Stir the corn, red pepper, green onions and cilantro in a medium bowl. Add the dressing and toss to coat.

Nutrition per Serving (about 3/4 cup each)

Calories: 294; Fat: 15g; Fiber: 4g; Protein: 5g; Sodium: 13 mg

BBQ Chicken Salad with Sweet Potato Fries has become one of my favorite lunches over the past couple years. This is a cold garden salad tossed with warm and saucy barbecue chicken then topped with crisp hot sweet potato fries and drizzled with ranch dressing. It sounded just crazy enough when I initially imagined it, I had to try it and I am so glad I did!

The first time I made this salad, I was inspired by our dinner of barbecue chicken, sweet potato fries and a tossed salad. I impulsively chopped it all up and tossed it together on my plate. I liked it so much that I made it again for lunch the next day. My oldest son liked this so much, he asked for some of my salad with his lunch the next day as well; and despite their initial doubts, my husband and brother both agree that the combination really works.

I'm telling you to trust me on this salad. Next time you have leftover chicken, pick up a bag of fries, and treat yourself to an amazing lunch in no time at all. This is a go-to favorite for me!

COOK'S NOTE: I use frozen French fries to make this salad, but you can certainly make your own from scratch. If you decide to make your own fries, be sure to slice them pretty thin, so that the salad isn't overwhelmed with big chunks of potato.

BBQ Chicken Salad with Sweet Potato Fries
Yield: 4 servings

1 pound sweet potato fries, baked according to directions
2 cups cooked chicken, diced bite-size
1 cup sweet and tangy homemade barbecue sauce, (See next recipe) or your favorite store-bought sauce
1 head romaine lettuce chopped small
1 cup grape tomatoes, halved
1 cucumber, halved lengthwise and sliced thin
3 mini bell peppers, sliced very thin
Homemade ranch dressing, or your favorite store-bought ranch dressing

Preheat the oven for the fries and bake according to directions; I actually baked mine at higher heat (425 degrees) and for an extra 10-15 minutes to get them good and crispy. While the potatoes are baking, combine the chicken and the barbecue sauce in a small saucepan. Warm over medium low heat, stirring occasionally. When the chicken is hot, remove from the heat and cover with a lid to keep warm.

Prep the rest of the salad and layer it onto plates. When the fries are crispy, remove from the oven. Top each plate of salad with a scoop of the saucy chicken and a serving of fries. Drizzle with ranch dressing just before serving. Enjoy!
