BACON SALAD DRESSING
3 slices bacon
4 cloves garlic, finely minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup cider or red wine vinegar
1/2 teaspoon sugar (or to taste)
Cut bacon into small pieces. Cook slowly until crisp, adding garlic when the bacon has nearly finished cooking. Stir in a high quality organic vinegar and seasoning. Reheat and pour over baby spinach or any baby salad greens. Also good over cooked greens such as Swiss chard, beet greens or kale.
