Almond Chicken Salad Recipe





 

I rely on this refreshing chicken salad often for lunch or a light supper. It can be made ahead of time and popped in the refrigerator, which is perfect for my busy schedule.—Brenda Nickerson, Clymer, New York

This recipe is:

  • 8 Servings
  • Prep: 10 min. + chilling

Ingredients

  • 4 cups cubed cooked chicken
  • 1 cup chopped celery
  • 1 cup green grapes, halved
  • 1/2 cup fat-free mayonnaise
  • 1/2 cup fat-free plain yogurt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped almonds, toasted

Directions

  • In a large bowl, combine chicken, celery, grapes, mayonnaise, yogurt and pepper; mix well. Cover and refrigerate for several hours. Stir in almonds just before serving. Yield: 8 servings.


Nutrition Facts: One serving (3/4 cup) equals 126 calories, 4 g fat (0 saturated fat), 43 mg cholesterol, 138 mg sodium, 8 g carbohydrate, 0 fiber, 13 g protein. Diabetic Exchanges: 2 lean meat, 1/2 fruit.

Tomato-Basil Soup

This is an excellent soup. It has great flavor and is very easy to make. I
just used my stick blender to blend and it worked just fine.

Recipe By : The Midweek Eagle
Serving Size : 6 Preparation Time:
Categories : Soups

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 tablespoons butter
1 large onion, diced
1 carrot, grated
salt, pepper and sugar to taste
4 large tomatoes, scalded, peeled and cut up fine
2 teaspoons basil
1 can chicken broth

In 3-quart pan, sauté butter, onion and carrots. Stir in rest of
ingredients and cook on medium heat until boiling, stirring often. Simmer
for 10 minutes. Cool thoroughly, then put in blender until smooth. To
serve, heat and put a tostado on top. Freezes beautifully!

Stewed Vegetables and Ham Soup Recipe



Here's a hearty soup that's not only good but good for you as well. Because of my schedule, I need to have simple yet satisfying dishes that take little time to prepare. This one fills the bill.

This recipe is:

Quick



  • 2 Servings
  • Prep/Total Time: 25 min.

Ingredients

  • 1 can (14-1/2 ounces) Italian stewed tomatoes, cut up
  • 3/4 cup Progresso ® Chicken Broth
  • 1 tablespoon minced fresh basil or 1 teaspoon dried basil
  • 1/8 teaspoon pepper
  • 1/2 cup frozen mixed vegetables
  • 1/2 cup cubed fully cooked ham
  • 1/2 cup frozen cut green beans
  • 1/2 cup cooked spiral pasta

Directions

  • In a medium saucepan, combine the tomatoes, chicken broth, basil and pepper. Bring to a boil. Stir in the mixed vegetables, ham and beans. Return to a boil. Reduce heat; cover and simmer about 10 minutes or until vegetables are tender. Stir in pasta and heat through. Yield: 2 servings.


Nutritional Analysis: One serving (1-1/2 cups) equals 187 calories, 2 g fat (1 g saturated fat), 11 mg cholesterol, 1,332 mg sodium, 32 g carbohydrate, 7 g fiber, 14 g protein. Diabetic Exchanges: 2 starch, 1 lean meat.

Cheddar Ham Soup Recipe



 

"I knew this recipe was a keeper when my mother-in-law asked for it!" relates Marty Matthews in Clarksville, Tennessee. The hearty soup, chock-full of leftover ham, veggies and cheese, is creamy and comforting. And even though the recipe makes enough to feed a crowd of post-holiday guests, Mary notes, "don't look for leftovers!"

  • Prep/Total Time: 30 min.

Ingredients

  • 2 cups diced peeled potatoes
  • 2 cups water
  • 1/2 cup sliced carrot
  • 1/4 cup chopped onion
  • 1/4 cup butter, cubed
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/4 to 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups (8 ounces) shredded cheddar cheese
  • 1-1/2 cups cubed fully cooked ham
  • 1 cup frozen peas, thawed

Directions

  • In a large saucepan, combine the potatoes, water, carrot and onion. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender.
  • Meanwhile, in another saucepan, melt butter. Stir in flour until smooth. Gradually add the milk, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in cheese until melted. Stir into undrained potato mixture. Add ham and peas; heat through. Yield: 7 servings.


Nutrition Facts: 1 cup (prepared with fat-free milk, 1/4 teaspoon salt, reduced-fat cheese and lean ham) equals 281 calories, 15 g fat (9 g saturated fat), 53 mg cholesterol, 798 mg sodium, 20 g carbohydrate, 2 g fiber, 19 g protein. Diabetic Exchanges: 2 lean meat, 1-1/2 fat, 1 starch, 1 vegetable.

Chicken Salad Pita Sandwich

This is very good. A nice healthy lunch that has good flavor.

Amount Measure Ingredient -- Preparation Method

1/4 large celery stalk
1/2 cup red or green grapes
2 1/2 tablespoons mayonnaise, egg-free, low fat
5 ounces grilled, boneless chicken breast
1 tablespoon sliced almonds
1/2 whole-wheat, approximately 6 inches (2 oz)
-- pita bread

Rinse celery and grapes. Dice celery and cut grapes in half. Chop chicken
and mix with mayonnaise, celery and grapes until thoroughly combined. Stir
in almonds and place chicken mixture into pita pocket. Serve.

Cooking Tip: Also Include: 1 cup cooked asparagus, 1 tablespoon salad
dressing, low fat or nonfat; low sodium

Cheesy Potato Chowder

This is a great soup with excellent flavor. Potato soup is one of
my favorites and this really hit the spot on a cool fall day. This is very
easy to make.

Recipe By : Bountiful Harvest Cookbook (Taste of Home)
Serving Size : 12 Preparation Time:
Categories : Soups

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
8 medium potatoes, peeled and cubed
3 carrots, diced
2 cans (14-1/2 ounces each) chicken broth
1 lb VELVEETA Pasteurized Prepared Cheese Product, cubed
1 tsp dill weed
1/4 tsp salt
1/4 tsp pepper
1/2 lb bacon, cooked and crumbled, divided
3 cups milk

In a large kettle, cook potatoes and carrots in chicken broth until
tender, about 10 minutes. Add the cheese, dill weed, salt and pepper. Cook
and stir until cheese is melted. Add bacon, reserving 1/2 cup, and milk.
Heat through. Top individual bowls with reserved bacon.

Author Note: This chowder was invented by my niece, who took a basic potato
soup recipe and added some of her own ingredients. The results were
"souperb"! I was a cook at the time, and I tried her recipe at work. It was

Lo Mein Soup

 6 to 8 servings

 

4 cans (14 1/2 ounces each) ready-to-use chicken broth

2 cups water

1 package (16 ounces) frozen stir-fry vegetable mix, thawed

1/2 pound boneless, skinless chicken breast, cut into 1/2-inch chunks

1/4 pound fresh mushrooms, thinly sliced

2 tablespoons light soy sauce

1/2 pound spaghetti, broken in half

 

In a soup pot, combine all the ingredients except the spaghetti; bring to a boil over medium-high heat. Add the spaghetti and boil for 8 to 10 minutes, or until the spaghetti is cooked and no pink remains in the chicken.

Seafood Minestrone

 10 to 14 servings

 

3 cans (14 1/2 ounces each) ready-to-use beef broth

1 can (28 ounces) crushed tomatoes

1 can (19 ounces) garbanzo beans (chick peas), undrained

1 can (15 1/4 ounces) red kidney beans, undrained

1 package (16 ounces) frozen mixed vegetables, thawed

1 package (10 ounces) frozen chopped spinach, thawed and drained

1 small onion, chopped

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1 cup uncooked elbow macaroni

1 pound fresh or frozen white-fleshed fish fillets, such as cod, haddock, or whiting, cut into 1-inch chunks

1 pound fresh shrimp, peeled and deveined

 

In a large soup pot, combine the broth, crushed tomatoes, garbanzo beans, kidney beans, mixed vegetables, spinach, onion, garlic powder, salt, and pepper. Bring to a boil over high heat, then stir in the macaroni. Reduce the heat to low and simmer for 15 minutes, or until the macaroni is tender. Add the fish and shrimp and simmer for 5 to 7 minutes, or until the fish flakes easily with a fork and the shrimp turn pink, stirring occasionally.

 

TIP: Freeze any leftovers in individual serving containers for a quick anytime--meal.
