Black Walnut Oil Dressing

Black Walnut Oil Dressing recipe

This wonderful dressing adds another dimension to Savory Black Walnut Salad.

RECIPE INGREDIENTS

1 tablespoon Hammons Black Walnut Oil
3 tablespoons mild olive oil
1 tablespoon lemon juice
1 tablespoon white wine vinegar
1/4 teaspoon Dijon mustard
1/4 teaspoon kosher salt
1/8 teaspoon fresh ground pepper
2 teaspoons whipping cream

METHOD

Blend all ingredients, except the whipping cream, in blender or with a blending stick.

Blend in whipping cream just before tossing the salad.

Ham and Cheese Pasta Salad

Prep Time: 20 minutes

Cook Time: 8 minutes

Total Time: 20 minutes

Yield: Serves 4

Ditalini pasta with ham, cheese, relish, corn salsa and peas with a mayonnaise dressing.

Ingredients

  • 1/2 lb. ditalini pasta
  • 1/2 cup corn salsa
  • 1 cup frozen peas
  • 1/3 cup sweet relish
  • 4 oz. diced ham
  • 4 oz. diced sharp cheese

Instructions

  1. Cook the pasta until ala dente, about 8 minutes in boiling water.
  2. While the pasta cooks, add the remaining ingredients to a bowl except for the mayonnaise. Stir.
  3. When the pasta is done, drain it well and rinse with cold water. Add to the salad bowl.
  4. Add the mayonnaise with the salt and pepper. Refrigerate until serving time.

Cabbage Roll Soup

Prep Time: 15 minutes

Cook Time: 50 minutes

Total Time: 1 hour, 10 minutes

Yield: Serves 4 - 6

Ground beef with cabbage and onions in a tomato soup base.

Ingredients

  • 1 lb. lean ground beef
  • 1 medium onion - chopped
  • 1 - 2 garlic cloves - chopped
  • 1/2 head medium cabbage - chopped (about 1 1/2 lbs)
  • 3 10 oz cans tomato soup
  • 3 cups water
  • 1/2 cup long grain rice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon white vinegar
  • 2 tablespoons A1 Sauce
  • 1 1/2 tablespoons Worcestershire Sauce

Instructions

  1. Brown the ground beef. Rinse the fat off by draining the ground beef and running hot water over it. (you can skip this step if your ground beef is really lean)
  2. Add the onions and garlic. Cook until the onion starts to turn translucent.
  3. Add the cabbage and the water. Cover and let steam for 20 minutes.
  4. Add all of the remaining ingredients. Simmer for an additional 20 minutes.
  5. Taste to adjust seasonings.

Hamburger Stew

Prep Time: 20 minutes

Cook Time: 30 minutes

Total Time: 1 hour

Yield: Serves 4

This hearty and delicious beef stew is made with ground beef, carrots, potatoes, celery, onions, corn and peas.

Ingredients

  • 1 lb. ground beef
  • 1 medium onion - chopped
  • 2 stalks celery - chopped
  • 3 carrots - cut into 1 inch pieces
  • 2 large potatoes - cut into pieces
  • 2 cups beef broth
  • 1 cup water
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 3 tablespoons flour
  • 1/2 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Brown the hamburger in a dutch oven.
  2. Add the onions and celery. Cook for about 5 minutes.
  3. Add the carrots and potatoes.
  4. Add the water, beef broth, salt and pepper.
  5. Loosely cover and cook until vegetables are tender.
  6. Add the corn.
  7. Stir together the flour and 1/2 cup water until smooth. Add to the pan, stirring while pouring it in until mixture thickens. Taste to adjust seasonings.

To come up with this dish, I used a number of different recipes, plus some ideas of my own. It's great for a potluck because it's made the night before and the flavor keeps getting better. Whenever I serve it, I'm inundated with recipe requests. —Ruth Lovett, Bay City, Texas
TOTAL TIME: Prep: 15 min. + chillingYIELD:14-16 servings

Ingredients

  • 1 medium head cabbage, shredded
  • 1 medium red onion, thinly sliced
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped sweet red pepper
  • 1/2 cup sliced pimiento-stuffed olives
  • 1/2 cup white wine vinegar
  • 1/2 cup canola oil
  • 1/2 cup sugar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon celery seed
  • 1 teaspoon mustard seed

Directions

  • 1. Combine cabbage, onion, peppers and olives. In a large saucepan, mix remaining ingredients; bring to a boil. Cook and stir 1 minute. Pour over vegetables, and stir gently. Cover and refrigerate overnight. Mix well before serving. Yield: 12-16 servings.

3/4 cup: 120 calories, 8g fat (1g saturated fat), 0mg cholesterol, 267mg sodium, 12g carbohydrate (9g sugars, 2g fiber), 1g protein

California Pasta Salad Recipe

Not only does this salad travel well to get-togethers such as picnics or tailgate parties, but people absolutely love it when it gets there. —Jeanette Krembas, Laguna Niguel, California
TOTAL TIME: Prep: 15 min. + chillingYIELD:10-15 servings

Ingredients

  • 1 pound thin spaghetti, broken into 1-inch pieces
  • 3 large tomatoes, diced
  • 2 medium zucchini, diced
  • 1 large cucumber, diced
  • 1 medium green pepper, diced
  • 1 sweet red pepper, diced
  • 1 large red onion, diced
  • 2 cans (2-1/4 ounces each) sliced ripe olives, drained
  • DRESSING:
  • 1 bottle (16 ounces) Italian salad dressing
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon sesame seeds
  • 2 teaspoons poppy seeds
  • 1 teaspoon paprika
  • 1/2 teaspoon celery seed
  • 1/4 teaspoon garlic powder

Directions

  • 1. Cook pasta according to package directions; Drain and rinse in cold water. Transfer to a large bowl. Add the vegetables and olives.
  • 2. In a large bowl, whisk the dressing ingredients. Drizzle over spaghetti mixture; toss to coat. Cover and refrigerate overnight. Serve with a slotted spoon. Yield:10-15 servings.

Overnight Layered Lettuce Salad Recipe

This layered salad is a family favorite from a church cookbook I've had for 40 years. The bacon adds a fabulous crunch. —Mary Brehm, Cape Coral, Florida
TOTAL TIME: Prep: 20 min. + chillingYIELD:16 servings

Ingredients

  • 1 medium head iceberg lettuce, torn
  • 1 medium green pepper, chopped
  • 1 small sweet red pepper, chopped
  • 1 medium onion, sliced and separated into rings
  • 2 cups frozen peas (about 10 ounces)
  • 1 cup mayonnaise
  • 2 tablespoons sugar
  • 1 cup (4 ounces) shredded cheddar cheese
  • 12 bacon strips, cooked and crumbled
  • 3/4 cup dried cranberries

Directions

  • 1. In a 4-qt. or 13x9-in. glass dish, layer the first five ingredients. In a small bowl, mix mayonnaise and sugar; spoon over salad, spreading to cover.
  • 2. Sprinkle top with cheese, bacon and cranberries. Refrigerate, covered, overnight. Yield: 16 servings (1 cup each).
