{soups-salads-and-salad-dressings} Trudi's Shrimp Bisque

 

You can also make this bisque with crab meat, or with a combination of shrimp and crab

10 3/4 oz. can condensed tomato soup( Campbell's)
11 1/4 oz. can condensed green pea soup ( Campbell's)
3 cups whole milk ( or light cream if you want it richer)
2 lbs. package salad shrimp, roughly chopped
1/2 cup Sherry

Mix the tomato soup and the green pea soup together.( It has to be green pea - DO NOT use split pea).The green pea soup is lumpy, so use a blender if you have one. Add the milk or light cream.

Heat the soup and the milk in a saucepan over low heat, stirring occasionally, while you thaw and chop the shrimp. When the mixture is warm, add the chopped shrimp and stir it in.

When the soup is heated through, add the sherry and serve.

     1/4           cup  light mayonnaise
     1/4           cup  reduced fat sour cream
  1         tablespoon  fresh lemon juice
  1           teaspoon  sugar
     1/2      teaspoon  salt
  16            ounces  bag of shredded cabbage mix for coleslaw
  1                     red delicious apple -- cored and diced
  1                     Granny Smith apple -- cored and diced
  1             medium  celery stalk -- thinly sliced
     1/3           cup  seeded raisins
     1/2           cup  walnuts -- toasted and coarsely chopped
In a large bowl mix mayonnaise, sour cream, lemon juice, sugar and salt until combined.
Add cabbage mix, apples, celery and raisins to bowl with dressing; toss well.  Cover and refrigerate at 30 minutes to allow cabbage to soften.  To serve sprinkle with walnuts.

Old World Raspberry Soup - {a German Recipe}

soups/stews

2 cups raspberries
3 cups water
1/2 cup sugar
1 teaspoon vanilla
1 teaspoon lemon juice
3 tablespoons tapioca
=== GARNISH ===
4 reserved raspberries
1 small curl of lemon peel

In a medium saucepan, bring the raspberries, water, sugar, and lemon juice
to a boil and cook until the sugar is completely dissolved. Pour through a
strainer or Foley food mill to remove the raspberry seeds, then return to
the heat, adding the vanilla and tapioca. Cook until thick.
When ready to serve, ladle into bowls and top with the reserved raspberries
and lemon zest. If serving cold, allow to chill in the refrigerator.
Serve hot or cold as a first course to 4 people.
Comments: Many thanks to CarolDee Whitbeck, from upstate New York, who
contributed this wonderful and somehow wonderfully old fashioned soup. She
pulled it out of her recipe archives, saying, "it was given to me about 25
years ago by a wonderful old German lady who I fondly referred to as Oma.
When my children were little they thought that Raspberry Soup was the most
special treat going. The soup can be served ice cold in the summer and hot
in the winter." I agree. It's a perfect balance of sweet and tart --
warm and comforting in the cold months, a lovely start to a meal of roasted
or pot roasted meat and winter vegetables. In the summer, it's cool and
stimulating as the start of grilled meal from the barbeque.

Oatmeal Soup - {Scotland}

soups/stews

1 tablespoon butter
1 large onion; chopped fine
2 tablespoons oatmeal
Salt; to taste
Freshly-ground black pepper; to taste
2 cups chicken stock
1 cup milk
Finely-minced parsley; for garnish

Melt the butter in a large saucepan, then sauté the onion until soft. Stir
in the oatmeal and salt and pepper to taste. Slowly pour in the stock,
stirring constantly, and bring to a boil. Reduce heat and cover, simmering
for about 30 minutes. Pureé in a blender, and return to the pan.
Reheat soup, then stir in milk. Bring to a simmer. When ready to serve,
stir in the heavy cream, ladle into bowls and sprinkle with parsley.
Serve hot to 4 people as a first course.
Comments: This is a pretty little soup, especially in a flat soup plate
with finely cut parsley sprinkled over its buttery white surface. The
flavor is delicate -- and it's meant to be as filling as it is inexpensive
to make.

Creamy Lime Jello Salad

This is a very easy salad to make and it also tastes great. I did
use the Lime Jello and I am sure that you could change it to suit your
tastes. Use different fruits with the different flavored Jello.

1 package (4 serving size) Lime Jello (or any flavor
-- you would like)
8 ounce carton Cool-Whip
16 ounce can crushed pineapple
1 pint cottage cheese
2 cups mini marshmallows

Put Cool-Whip in a bowl. Sprinkle dry Jello over the top. Stir gently
until all the Jello is dissolved. Drain pineapple and stir into the Jello
mixture. Stir in cottage cheese and marshmallows. Chill in refrigerator for
several hours or overnight.

1 tablespoon Butter
1 large Onion -- chopped
4 medium Potatoes -- cut into 1/2-inch cubes
2 1/2 cups Water
2 Vegetable Bouillon Cubes
10 ounces Broccoli, frozen -- chopped, thawed, drained
2 cups Sharp Cheddar Cheese -- shredded
Salt and Pepper -- to taste

In 2 to 3-quart saucepan over medium heat, melt butter. Add onion; saut� 5 minutes. Add potatoes, water and bouillon cubes. Bring to boil, reduce heat, cover and cook until potatoes are just tender, about 15 minutes. Remove 1 cup of potato cubes with slotted spoon; set aside. Pour contents of saucepan into container of electric blender. Holding lid down tightly, blend until smooth; return to saucepan. Mix in reserved potatoes and the broccoli. Over medium-low heat gradually add cheese, stirring until heated through and cheese is completely melted. Season to taste with salt and pepper.

Per Serving (excluding unknown items): 386 Calories; 22g Fat (50.8% calories from fat); 19g Protein; 29g Carbohydrate; 5g Dietary Fiber; 67mg Cholesterol; 777mg Sodium.

Homemade Ranch Dressing Mix Recipe


Used as both a mix for a dip and a dressing, this tangy ranch mix is both tasty and versatile. Taste of Home Test Kitchen

    * 16 Servings
    * Prep/Total Time: 5 min.

Ingredients

    * 1/3 cup buttermilk blend powder
    * 1/4 cup dried parsley flakes
    * 2 tablespoons dried minced onion
    * 2 teaspoons salt
    * 2 teaspoons garlic powder
    *

      ADDITIONAL INGREDIENTS FOR SALAD DRESSING:
    * 1 cup reduced-fat mayonnaise
    * 1 cup plus 6 tablespoons buttermilk
    *

      ADDITIONAL INGREDIENTS FOR DIP:
    * 2 cups (16 ounces) reduced-fat sour cream

Directions

    * Combine the first five ingredients. Store in an airtight container in a cool dry place for up to 1 year. Yield: 4 batches (about 3/4 cup).
    * For salad dressing: In a small bowl, whisk the mayonnaise, buttermilk and 3 tablespoons mix. Refrigerate for at least 1 hour. Yield: about 2 cups.
    * For dip: In a small bowl, combine sour cream and 3 tablespoons mix. Refrigerate for at least 2 hours. Serve with assorted crackers and fresh vegetables. Yield: 16 servings per batch.

Nutrition Facts: Ranch Salad Dressing: 2 tablespoons equals 62 calories, 5 g fat (1 g saturated fat), 7 mg cholesterol, 219 mg sodium, 3 g carbohydrate, trace fiber, 1 g protein.
