Blue Cheese Potatoes Recipe


Brandi Rook serves this warm creamy potato salad to the blue cheese lovers in her Salina, Kansas home. "Try it with a beef entree," she suggests. "It's incredibly tasty yet quick to fix because you don't need to peel the potatoes."

    * 6-8 Servings
    * Prep/Total Time: 30 min.

Ingredients

    * 2 pounds red potatoes, cut into chunks
    * 1/4 cup heavy whipping cream, whipped
    * 1/4 cup crumbled blue cheese
    * 1 cup mayonnaise
    * 1/2 pound sliced bacon, cooked and crumbled

Directions

    * Place the potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender.
    * Meanwhile, in a large bowl, fold whipped cream and blue cheese into mayonnaise. Drain potatoes; gently stir in blue cheese mixture. Sprinkle with bacon. Serve warm. Yield: 6-8 servings.


Nutrition Facts: 1 serving (1/2 cup) equals 376 calories, 31 g fat (7 g saturated fat), 31 mg cholesterol, 368 mg sodium, 18 g carbohydrate, 2 g fiber, 6 g protein.

Baked Potato Salad Recipe


I was tired of the ordinary potato salads served so often in summer, so I came up with this hearty flavorful variation. My family has enjoyed it now for several years, and I'm asked to make it whenever there's a get-together or cookout. I'm sure you'll like it as much as we do. -Barbara O'Kane, Greenwood Lake, New York

    * 16-20 Servings
    * Prep: 20 min. + chilling
    * Bake: 45 min. + cooling

Ingredients

    * 4-1/2 pounds potatoes, peeled and cut into 3/4-inch chunks
    * 1/4 cup olive oil
    * 2 envelopes Italian salad dressing mix
    * 1 medium green pepper, chopped
    * 1 medium sweet red pepper, chopped
    * 1 bunch green onions, chopped
    * 2 large tomatoes, chopped
    * 4 hard-cooked eggs, chopped
    * 5 bacon strips, cooked and crumbled
    * 1-1/2 cups mayonnaise
    * 1 tablespoon white vinegar
    * 1 tablespoon lemon juice
    * 2 teaspoons dried basil
    * 1 teaspoon salt
    * 1/2 teaspoon pepper
    * 1/4 teaspoon garlic powder

Directions

    * In a large bowl, toss the potatoes with oil and dressing mixes. Place in two greased 13-in. x 9-in. baking dishes. Bake, uncovered, at 400° for 45 minutes or until tender. Cool. Transfer to a large bowl; add peppers, onions, tomatoes, eggs and bacon. Toss gently.
    * In a small bowl, combine the remaining ingredients. Pour over salad and stir gently. Cover and refrigerate for at least 1 hour. Yield: 16-20 servings.

Baked German Potato Salad Recipe



Meet the Cook:  What makes this German potato salad so different is that it's sweet instead of tangy. During the holidays, my family has an annual ham dinner, and I always prepare it. The tastes blend very well. The first time I took my potato salad to work, people kept coming out of their offices to find out what smelled so good. By lunch, it was gone.     * Prep: 50 min.
    * Bake: 30 min.

Ingredients

    * 12 medium red potatoes (about 3 pounds)
    * 8 bacon strips
    * 2 medium onions, chopped
    * 3/4 cup packed brown sugar
    * 2/3 cup water, divided
    * 1/3 cup white vinegar
    * 1/3 cup sweet pickle juice
    * 2 teaspoons dried parsley flakes
    * 1 teaspoon salt
    * 1/2 to 3/4 teaspoon celery seed
    * 4-1/2 teaspoons all-purpose flour

Directions

    * In a saucepan, cook potatoes until just tender; drain. Peel and slice into an ungreased 2-qt. baking dish; set aside.
    * In a skillet, cook bacon until crisp; drain, reserving 2 tablespoons drippings. Crumble bacon and set aside. Saute onions in drippings until tender. Stir in the brown sugar, 1/2 cup water, vinegar, pickle juice, parsley, salt and celery seed. Simmer, uncovered, for 5-10 minutes.
    * Meanwhile, combine flour and remaining water until smooth; stir into onion mixture. Bring to a boil. Cook and stir for 2 minutes or until thickened. Pour over potatoes. Add bacon; gently stir to coat. Bake, uncovered, at 350° for 30 minutes or until heated through. Yield: 8-10 servings.

"This creamy and colorful salad is always requested for all our summer picnics," writes Karen White from Lawrenceburg, Tennessee. "It's so quick to prepare, goes with almost anything and is really yummy while still warm—but just as delicious when chilled!"

    * Prep: 30 min. + chilling

Ingredients

    * 2-1/2 pounds small red potatoes
    * 1/2 cup real bacon bits
    * 1/4 cup minced chives
    * 3/4 cup mayonnaise
    * 3/4 teaspoon ground mustard
    * 1/2 teaspoon salt
    * 1/4 teaspoon pepper

Directions

    * Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain and cool. Cut into wedges; place in a serving bowl. Add bacon and chives.
    * In a small bowl, combine the mayonnaise, mustard, salt and pepper. Spoon over salad; toss to coat. Refrigerate for at least 1 hour before serving. Yield: 8 servings.

Bacon Potato Salad Recipe

"My family requests this potato salad whenever we go on picnics. It's a well-seasoned salad that gets a slight smoky flavor from the addition of bacon," says Charlotte McDaniel of Williamsville, Illinois.






    * 8 Servings
    * Prep: 10 min.
    * Cook: 25 min. + chilling

Ingredients

    * 2-1/4 pounds red potatoes (about 8 medium)
    * 1/2 pound sliced bacon, diced
    * 1/2 cup chopped onion
    * 2 teaspoons cider vinegar
    * 1 teaspoon celery seed
    * 3/4 teaspoon salt
    * 1/4 teaspoon pepper
    * 1 cup mayonnaise

Directions

    * Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook for 20-25 minutes or until tender.
    * Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove bacon to paper towels. Drain, reserving 2 tablespoons drippings.
    * Drain potatoes. When cool enough to handle, peel and cut into cubes. Place in a large bowl. Add the onion, vinegar, celery seed, salt, pepper, bacon and reserved drippings; toss gently. Cool to room temperature. Fold in mayonnaise. Cover and refrigerate overnight. Yield: 8 servings.

Ingredients

    * 4 cups cubed red potatoes
    * 1 cup chopped onion
    * 7 bacon strips, cooked and crumbled
    * 2 tablespoons minced fresh parsley
    * 1-1/3 cups mayonnaise
    * 3 tablespoons grated Parmesan cheese
    * 3 tablespoons prepared ranch salad dressing
    * 2 tablespoons prepared mustard
    * 4 teaspoons white vinegar
    * 1/2 teaspoon minced garlic
    * 1/4 teaspoon salt
    * 1/4 teaspoon pepper

Directions

    * Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain.
    * In a large bowl, combine the potatoes, onion, bacon and parsley. In a small bowl, combine the remaining ingredients. Pour over potato mixture; toss to coat. Refrigerate for 1 hour or until chilled. Yield: 8 servings.

Ingredients

    * 1-3/4 pounds potatoes, peeled and cubed
    * 3/4 cup mayonnaise
    * 3/4 cup sour cream
    * 4 green onions, thinly sliced
    * 1 celery rib, finely chopped
    * 2 tablespoons minced chives, divided
    * 1/2 teaspoon salt
    * 1/2 teaspoon coarsely ground pepper
    * 1/4 teaspoon sugar
    * 1 cup (4 ounces) crumbled Gorgonzola cheese
    * 1 cup bacon bits, divided
    * 2 plum tomatoes, peeled, seeded and chopped

Directions

    * Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain and cool.
    * Meanwhile, in a large bowl, combine the mayonnaise, sour cream, onions, celery, 1 tablespoon chives, salt, pepper and sugar. Stir in cheese and 1/2 cup bacon bits.
