Salmorejo (Spanish Chilled Tomato Soup)

It was in Madrid in March where I first met salmorejo, gazpacho's richer, deeper cousin. The cool, creamy tomato soup transcended seasonality. It was topped with egg and jamón ibérico, which wept fatty tears over its surface. Salmorejo demands that you act as a Spaniard and mop up every drop with bread. Then, like an American, you order another. —Alex Raij, a chef-owner of La Vara and Txikito restaurants in New York City

SERVES 8

3 tbsp. kosher salt, plus more to taste
8 plum tomatoes, cored, halved, and seeded
1 clove garlic, crushed
1 baguette (about 10 oz.), cut into large pieces
1/2 small yellow onion
1 cup extra-virgin olive oil, plus more for drizzling
2 tbsp. sherry vinegar
Freshly ground black pepper, to taste
3 hard-boiled eggs, chopped
1 1/2 cups finely chopped Iberian ham or prosciutto

Place salt, tomatoes, garlic, bread, and onion in a bowl, cover with boiling water, and let sit for 1 hour. Drain vegetables, reserving 1 cup soaking liquid; place in blender. Squeeze water from bread; place in blender with reserved soaking liquid, oil, and vinegar. Purée until smooth; season with salt and pepper, and chill. Pour into serving bowls; top with eggs, ham, and a drizzle of oil.

Chicken Sausage & Black Bean Stew
Serves: 4

    1 Tbsp. vegetable oil
    1 medium onion, chopped
    1 tsp. chili powder
    1 tsp. cumin
    1 can (14-1/2 oz.) low sodium chicken or beef broth
    1 can (14-1/2 oz.) diced tomatoes with green chilies, undrained
    1 pkg. (8 oz.) cooked spicy chicken sausage links, cut into 1/2-inch pieces
    1 yellow or red bell pepper, diced
    1 can (15 oz.) black beans, rinsed and drained
    1-1/2 cups (6 oz.) Sargento® Fine Cut Shredded 4 Cheese Mexican, divided
    1/4 cup chopped fresh cilantro or epazote

    Heat oil in large saucepan over medium-high heat. Add onion; cook 5 minutes, stirring occasionally. Stir in chili powder and cumin; cook 30 seconds. Add broth, tomatoes, sausage, bell pepper and beans; heat to a simmer. Simmer 10 minutes, stirring occasionally. Remove from heat; stir in 1 cup cheese.

    Ladle into shallow bowls; top with remaining cheese and cilantro.

Antipasto Salad

Serves: 4

    2 cups Italian or French bread, cubed (1/2-inch)
    1 pkg. (10 oz.) romaine lettuce, torn
    1-1/2 cups (6 oz.) Sargento® Shredded Reduced Fat 4 Cheese Italian, divided
    16 cherry tomatoes, cut in halves
    4 pepperoncini salad peppers, drained and sliced
    1/2 cup bottled roasted red bell peppers, drained and cut into 1-inch strips
    3/4 cup Caesar salad dressing, fat free or light
    pepper

Place bread cubes in single layer on baking sheet. Bake in preheated 425°F oven 8 minutes or until golden; set aside to cool.

Combine lettuce, 1 cup cheese, tomatoes, salad peppers and roasted pepper strips in large bowl.

Add bread cubes and dressing to lettuce mixture; toss to coat. Place salad on four serving plates; sprinkle with remaining cheese and serve with pepper.

THE BEST PASTA SALAD

11 ounces (310 grams) small shell-shaped pasta

3 cloves garlic

9 ounces yellow cherry tomatoes

9 ounces red cherry tomatoes

1/2 cucumber

1 handful black olives, pitted

2 tablespoons fresh chives

1 handful fresh basil

7 tablespoons extra-virgin olive oil

4 tablespoons white wine vinegar

Sea salt and freshly ground black pepper

Bring a large pan of salted water to the boil, add the pasta and garlic, and simmer for about 5 minutes or until al dente, and drain.

Put the garlic to one side for the dressing. Put the pasta in a bowl.

Cut the tomatoes, cucumber, and black olives into small pieces, about half the size of the pasta, and place in the round metal container. Roughly chop the herbs and place these in the container.

Using a fork mash the cooked garlic cloves on the board with a little salt, add to the salad.

Add the oil, vinegar, and seasoning.

Yield: 4 servings

Prep Time: 5 minutes

Cook Time: 25 minutes

Difficulty: Easy

Encebollado de Pescado

Whether you call this dish a soup or a stew, it has been popular
since the early days of Spanish colonization. The name
"encebollado" can be translated as "with onions," and refers to
the pickled onion salsa that is used as garnish.

Ecuadorian Fish Soup with Pickled Onions

2 Tbs (30 ml) vegetable oil
2 tomatoes, diced
1 red onion, diced
2 tsp (10 ml) ground cumin
1 tsp (5 ml) chili powder
Salt to taste
8 cups (2 L) water
6 cilantro (coriander) sprigs
2 lbs (900 g) fresh tuna steak
1 lb (450 g) fresh or frozen yuca (manioc)*
1 recipe curtido de cebolla y tomate (see below) for garnish
Toasted corn nuts for garnish

* Available in many supermarkets and Hispanic specialty shops

Heat the oil in a large pot over moderate heat and saute the
tomatoes, onion, cumin, chile powder, and salt until the onions
are tender, about 5 minutes. Add the water and cilantro sprigs
and bring to a boil. Add the tuna and simmer until cooked
through, about 15 minutes. Remove the tuna with a slotted
spoon and break into bite-size pieces. Add the yuca to the
broth and boil until tender but firm, 30 to 40 minutes. Remove
the yuca with a slotted spoon, remove any strings, and cut
the yuca into bite-size pieces. Return the tuna and the yuca
to the pot and add more salt if needed.
Serve garnished with curtido de cebolla y tomate and corn nuts.

Serves 6 to 8

Curtido de Cebolla y Tomate

Pickled Onion and Tomato Salsa

1 large red onion, halved and thinly sliced
1 Tbs (15 ml) salt plus additional to taste
3 tomatoes, chopped
3 Tbs (45 ml) lime or lemon juice
1 Tbs (15 ml) olive oil
2 Tbs (30 ml) finely chopped cilantro (coriander leaves)

Sprinkle the sliced onion with the salt and let rest for 10 minutes.
Cover the onions with warm water and let rest another 10 minutes.
Rinse and drain the onions and toss with the lime juice. Let rest
in the refrigerator for 30 minutes before adding the remaining
ingredients. Toss to combine and adjust the seasoning with salt.
Serve at room temperature.

Makes about 2 cups (500ml)

Ajiaco Bogotano

Colombian Chicken and Potato Soup

Ajiaco is a soup that is popular in Colombia and Cuba. It's a
simple dish consisting of chicken and potatoes, and usually
includes garnishes that are added at the table. The name is
believed to derive from the Taino word for chile peppers, "aji."
There are many regional variations of the dish in Colombia,
and this is the version found in the capital city Bogota.

3 lbs (1350 g) chicken parts
2 quarts (2 L) water
1 large onion, peeled and halved
1 bay (laurel) leaf
1/8 tsp (1 ml) ground cumin
1/8 (1 ml) thyme
Salt and freshly ground pepper to taste
4 medium potatoes, peeled and halved
1 lb (450 g) tiny boiling potatoes, peeled and halved
3 ears of corn, cut into 2-inch (5 cm) pieces
2 avocados, peeled, pitted, and diced, for garnish
Sour cream for garnish
Capers, drained and rinsed, for garnish
Chopped scallions (spring onions) for garnish
Chopped cilantro (coriander leaves) for garnish

Combine the chicken and water in a large pot and bring to a
boil over high heat. Skim the scum off the surface of the water
and add the onion, bay leaf, cumin, thyme, salt, and pepper.
Reduce the heat and simmer covered until the chicken is
cooked, about 30 minutes. Transfer the chicken to a bowl.
Remove and discard the onion. Strain the soup through a
fine-mesh sieve and return to the pot. Add the 4 potatoes to
the pot and bring to a boil. Reduce the heat and simmer until
the potatoes are tender, then mash them against the side of
the pot with a spoon until the soup is thick and fairly smooth.
Remove and discard the skin from the chicken and strip the
meat from the bones. Cut the chicken meat into bite-size
pieces and add it to the pot. Add the tiny boiling potatoes and
corn and simmer until the potatoes are tender, 10 to 15 minutes.
Ladle the soup into serving bowls and serve with the garnishes
for the diners to add at the table.

Serves 6 to 8

Slow Cooker Mexican Meatball Soup

This simple and delicious slow cooker Mexican meatball soup is easy, healthy and delicious. Just toss everything together in your slow cooker and let it cook, unattended for several hours.

Serves: 6

    1 (7 ounce) can diced green chiles
    2 (14.5 ounce) cans diced tomatoes
    2 (14 ounce) cans reduced sodium beef broth
    2 (14 ounce) cans reduced sodium chicken broth
    1 pound frozen turkey meatballs
    2 (10 ounces) frozen mixed Mexican style vegetables (optional)
    1 medium white onion, chopped
    1/2 cup chopped fresh cilantro
    1/2 cup converted rice
    2 teaspoon dried oregano
    salt and black pepper to taste

    Combine all ingredients in a 4 to 5 quart slow cooker. Cover and cook on low for 8 to 9 hours or high for 3 to 4 hours. Serve with chopped cilantro and lime wedges if desired.
    Serving Suggestions: Lots of yummy things would go well with this slow cooker mexican meatball soup including corn muffins, tortillas, cheese quesadillas, and simple green salad. I served it with warm flour tortillas and a salad of chopped greens, chopped scallions, chopped avocado, and pumpkin seeds dressed with olive oil, a squeeze of fresh lime juice, salt and pepper.

COOKING SEQUENCE MAKES 4 SERVINGS

Turkey Cranberry Salad
Ingredients: 
2 cups cooked turkey breast, coarsely chopped
1 (5-oz) bag spring mix salad blend
1 tablespoon fresh basil leaves, finely chopped
1/3 cup cinnamon toasted almonds, coarsely chopped
1/2 of a 20-oz bag sweet potato fries
1/2 cup crumbled blue cheese
2 tablespoons whole berry cranberry sauce
2 tablespoons apple cider vinegar
1/3 cup sweetened dried cranberries
1/4 cup canola oil
1/4 teaspoon pepper
1/2 teaspoon kosher salt 

Prep
  • Preheat oven to 400­°F.
  • Chop turkey, basil, and almonds.
Steps 
  1. Bake fries following package instructions or until crispy.
  2. Place cranberry sauce and 1 teaspoon water in microwave-safe bowl; microwave on HIGH 30 seconds or until liquefied. Stir in vinegar, basil, salt, and pepper; whisk in oil.
  3. Place salad blend in salad bowl. Add remaining ingredients and dressing; toss to coat. Top with fries and serve.

New England Clam Chowder with Salt Pork Belly

Ingredients :

4 oz. salt pork belly, 1/4” diced
1 large white onion, 1/4” diced
6 large white potatoes, peeled and 1/2” diced, cover with fresh water
2 dozen quahogs or chowder clams (or 2 10-oz. cans whole baby clams in juice)
1 qt. water (or 1 qt. low sodium chicken broth)
1/2 tsp. fresh chopped thyme or marjoram
Salt and freshly cracked black pepper, to taste

Preparation :

Wash the clams to remove any sand or grit. Place them in a large steamer pot with one quart of water under the steamer basket. Steam the clams over high heat until they have just opened. Remove the clams as they open and place them in a bowl, making sure to dump all of the liquid from the shell before removing them. Once all of the clams have opened, turn the heat off and strain the liquid from the bottom of the steamer into a clean bowl.

Remove the clams from their shells, leaving the adductor muscles attached to the shell. These are very tough in large clams and aren’t fun to chew. Discard the shells and strain the liquid remaining in the bowl, adding it to the liquid from the steamer. Coarsely chop the clam meat into 1/2” pieces and set them aside in a clean bowl.

If using canned clams, drain them, reserving the juice. Set aside.

Use a 12-quart enameled cast iron pot or Dutch oven to make the chowder. Place the pot over medium heat and add the salt pork and onions. Stir for several minutes, until fat begins to render and the onions are soft and just beginning to brown.

Remove the potatoes from the water and add them to your pot, stirring them into the salt pork and onion mixture. Fry for two to three minutes. Add herbs and salt the potatoes lightly. The pork is salty but it helps to season the potatoes now so they absorb the flavor.

Add the reserved clam broth (or the reserved clam juice from draining both cans of clams, plus 1 quart chicken broth) to cover everything by 2 inches. Bring the chowder to a boil and turn down to a simmer. When the potatoes are just tender, add the chopped clams and season generously with freshly ground black pepper. Turn the heat up to high until it returns to a boil, then remove it from the heat and serve.

Serve boiling hot in a mug with oyster crackers.

QUINOA VEGETABLE SALAD

Makes 5 cups

1 teaspoon canola oil

1 tablespoon minced garlic

1/4 cup diced (yellow or purple) onion

2 1/2 cups water

2 teaspoons salt

1/4 teaspoon ground black pepper

2 cups quinoa

3/4 cup diced fresh tomato

3/4 cup diced carrots

1/2 cup diced yellow bell pepper

1/2 cup diced cucumber

1/2 cup frozen corn kernels, thawed

1/4 cup diced red onion

1 1/2 tablespoons chopped fresh cilantro

1 tablespoon chopped fresh mint

1 teaspoon salt

1/4 teaspoon ground black pepper

2 tablespoons olive oil

3 tablespoons balsamic vinegar

Heat the canola oil in a saucepan over medium heat. Cook and stir the garlic and 1/4 cup onion in the hot oil until the onion has softened and turned translucent, about 5 minutes. Pour in the water, 2 teaspoons salt, and 1/4 teaspoon black pepper and bring to a boil; stir the quinoa into the mixture, reduce heat to medium-low, and cover. Simmer until the quinoa is tender, about 20 minutes. Drain any remaining water from the quinoa with a mesh strainer and transfer to a large mixing bowl. Refrigerate until cold.

2.Stir the tomato, carrots, bell pepper, cucumber, corn, and 1/4 cup red onion into the chilled quinoa. Season with cilantro, mint, 1 teaspoon salt, and 1/4 teaspoon black pepper. Drizzle the olive oil and balsamic vinegar over the salad; gently stir until evenly mixed.
