STRAWBERRY PRETZEL SALAD PARFAITS 

Prep Time: 30 minutes

A stunning dessert, these parfaits put a creamy new spin on the classic strawberry pretzel salad.

Servings: 2

Ingredients

12-14 fresh strawberries, washed with tops cut off, and diced

2 tsp. Dixie Crystal's granulated sugar

1 1/2 cups mini pretzels

2 Tbsp. butter, melted

scant 1/8 tsp. cinnamon

1 cup heavy whipping cream

2 Tbsp. Dixie Crystal's light brown sugar

1/8 tsp. Adam's Extract vanilla extract

1/8 tsp. Adam's Extract imitation strawberry extract

 

Instructions

Add the strawberries to a bowl. Sprinkle the sugar over top, stirring to coat. Refrigerate the strawberries for 30 minutes. Don't skip this step, the sugar helps them release their natural sugar and juices.

Pulse the pretzels in a food processor, just until broken into small pieces- but NOT pulverized. We want some crunch and that means some chunks. Add the melted butter and cinnamon, pulsing another time or two- just until evenly combined.

In the bowl of a stand mixer, whip the cream just until stiff peaks have formed.. Don't over mix, or you'll end up with butter instead. Using a whisk, stir in the brown sugar and extracts until evenly combined.

In your cups, add a layer of the cream mixture, strawberries, then pretzels. Repeat. Top each cup off with a bit of whipped cream, and a slice of strawberry and a pretzel. Serve immediately.

Recipe Notes

The strawberries and the cream mixture can both be prepared several hours ahead of time, then sealed, and refrigerated until ready to use. Do not prepare the parfaits and then refrigerate or it will get soggy.

Split Pea Soup

I used to eat Split Pea soup all the time. I think it was in a pouch dry, not from scratch for sure.  I wonder why I stopped?  Hmmm!

Serves: 4

Time: 1-2 Hours

ingredients

SPLIT PEA SOUP:

2 tablespoons olive oil

2 cloves garlic (peeled, minced)

1 onion (peeled, small diced)

1 celery stalk (small diced)

2 carrots (peeled, small diced)

1/2 cup white wine

2 sprigs thyme

2 sprigs rosemary

1 pound split peas (picked through, rinsed)

1 bay leaf

4 cups vegetable stock

3 and 3/4 cups water

butcher's twine

1/4 cup parsley (chopped, to garnish)

Kosher salt and freshly ground pepper (to taste)

 

PORK CHOPS:

4 pork chops (bone-in, 1/2-inch thick)

1 tablespoon olive oil

Kosher salt and freshly ground pepper (to taste)

 

CROSTINI:

1 gluten-free baguette (sliced)

1 tablespoon olive oil

Kosher salt and freshly ground pepper (to taste)

 

Directions

For the Soup: Heat a Dutch oven over medium heat and warm olive oil. Stir in garlic, onions, celery and carrots and cook until fragrant and translucent, about 4 minutes. Deglaze with white wine and reduce until the mixture is almost dry. Tie the thyme and rosemary together with butcher's twine and set aside. Add split peas, bay leaf, vegetable stock, water, thyme and rosemary bundle, and season with salt and pepper. Simmer until lentils are tender and have begun to break down, about 45-60 minutes.

 

For the Pork Chops: Remove the pork chops from refrigerator 30 minutes before cooking and allow to come to room temperature. Season with salt and pepper to taste.

Heat a cast iron skillet over medium heat and add olive oil. Add pork chops and cook until golden brown, about 4 minutes per side or until internal temperature reaches 140ºF. Transfer to cutting board and allow to rest for 5 minutes. Slice pork chops into 1/2-inch cubes and set aside.

 

For the Crostini: Preheat oven to 375ºF.

Place the sliced baguette pieces on a baking sheet. Drizzle with olive oil and season with salt and pepper on both sides.. Bake until toasted and golden brown, about 10 minutes. Remove from oven and set aside.

To Serve: Remove the thyme and rosemary bundle, bay leaf, and divide soup evenly amongst 4 bowls and garnish with parsley. Serve with pork chops and crostini on the side.

Tip: For an added layer of flavor, cook the soup with a ham hock, removing before serving.

Traditionally hot pot is a Chinese soup consisting of simmering Asian flavored broth served at the dinner table. While the broth simmers, add different ingredients like meats and veggies, which cook up right at the table. This is my Mexican version!

 prep time 15 minutes
 cook time 20 minutes
 total time 35 minutes
 servings 6 servings
 calories 310 kcal

INGREDIENTS

ADD IN'S

  • 1 pound boneless chicken, very thinly sliced
  • 1 can (14 ounces) hominy, drained
  • steamed white rice

GARNISHES

  • cilantro, pickled red onion, radishes, limes, and crumbled queso fresco

AVOCADO CREMA

  • 1 avocado
  • 1/4 cup plain greek yogurt
  • juice from 1 lime
  • kosher salt

INSTRUCTIONS

  1. 1. Preheat the broiler to high. On a baking sheet, toss together the olive oil, tomatillos, onion, and garlic. Transfer to the oven and broil 3-5 minutes or until charred. Remove the skins from the garlic. Add everything to a blender. Add the tomatoes and puree until smooth. 

    3. Set a large pot over medium heat. Add the tomato puree, chicken stock, chili powder, cumin, and oregano. Season with salt and pepper. Bring the broth to a boil, then reduce the heat to low and simmer 15-20 minutes. 

    4. Meanwhile, make the crema. Combine all ingredients in a food processor and pulse until smooth. Season with salt. 

    5. Arrange the chicken in a bowl. Set your toppings out in separate bowls. 

    6. When ready to serve, add the chicken and hominy to the broth and cook 5 minutes or until the chicken is cooked through. Add rice to bowls, if using. Ladle the chicken and broth over the rice. Have everyone top each bowl as desired.
