Pressure Cooker Chicken Broth

Instant Pot Chicken Broth is like liquid gold. There's no better way to make homemade chicken stock than in the pressure cooker. Instead of using your slow cooker or stove top for hours and hours, pressure cooking homemade bone broth extracts every bit of healthy goodness from your meat and vegetables.

Ingredients

  • 1 pound raw chicken pieces various cuts work, must have bones and skin 
  • 1/2 onion quartered
  • 1 stalk celery chopped
  • 1 carrot chopped
  • 1 whole cloves garlic
  • 1 bay leaf
  • 1 teaspoon whole peppercorns
  • 1 teaspoon kosher salt

Instructions

  • Add all ingredients to pressure cooker. Fill with water and cover with lid. Set to high pressure and cook for 120 minutes.  After the cooking cycle completes, allow the pressure cooker to release pressure naturally. This takes about 30 minutes.
  • Strain broth into a bowl. You can pick some of the meat out and add it to the broth if you wish. Use within 3 days or freeze in an air tight container for future use.

Notes

Makes about 2 quarts.
Remains of cooked whole chicken including any meat, skin, bones work as well. If you are using the carcass from a roasted chicken, consider supplementing with a few pieces of raw chicken, if possible. The raw chicken will create a richer broth. You can use turkey as well.

Ingredients

  • 2 tbsp olive oil
  • 2 pounds beef stew meat
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tbsp kosher salt
  • 1 tbsp fresh thyme
  • 4 cups beef broth
  • 1 pound yukon gold potatoes cut into 1 inch cubes
  • 1 pound carrots peeled and sliced into 1 inch thick pieces
  • 1 1/2 cups peas
  • 2 tbsp corn starch

Instructions

  • Set the Instant Pot to Saute mode then add the oil. When the oil is hot, add half the meat in a single layer and allow it to brown, turning only once, for about 5 minutes. Transfer to a large bowl and add remaining stew meat and allow to brown for about 5 minutes. Transfer to same bowl.
  • Add the onions and allow to brown on Saute mode for about 5 minutes, stirring only occasionally. Add minced garlic and tomato paste, stir, and allow to cook for an additional minute.
  • Add browned meat and any juices from bowl along with Worcestershire sauce, salt, thyme and beef broth. Cover and lock lid. Set to high pressure for 10 minutes.
  • Quick release pressure, then add the potatoes, carrots and peas. Lock lid, and cook on high pressure for another 10 minutes.
  • When stew is done, quick release the pressure. Add a couple tablespoons of the hot broth to a cup and add corn starch to the cup to make a slurry. Once all the corn starch has dissolved, stir the slurry into the stew. The broth should thicken a bit. If you prefer your stew extra thick, you can use a potato masher to mash up some of the vegetables.
  • Add additional salt and some pepper, to taste. Serve with a nice green salad and some hot crusty bread.

This instant pot minestrone soup recipe gets you hearty comfort food in mere minutes!

Ingredients
  • 1/2 lb ground Italian sausage
  • 1/2 lb ground beef
  • 1 onion, diced
  • 8 cloves garlic, minced
  • 1 1/2 cup carrots, sliced
  • 1 Tbsp Italian seaoning
  • Salt and pepper to taste
  • 2 sprigs fresh rosemary
  • 1 14.5oz can fire roasted diced tomatoes, undrained
  • 1 15oz can kidney beans, rinsed and drained
  • 1 15oz can white beans, rinsed and drained
  • 2 bay leaves
  • 4 cups broth (chicken bone or vegetable)
  • 1 cup ditalini pasta
Instructions
  1. Set Instant pot/pressure cooker to saute mode. Add Italian sausage and ground beef. Cook, stirring to crumble until it begins to brown.

  2. Add onion and garlic. Cook for 1-2 minutes, stirring to combine with meat. Add Italian seasoning, salt and pepper. Stir.

  3. Stir in tomatoes with juice, kidney beans, white beans, bay leaves, broth and pasta. Place rosemary sprigs in broth.

  4. Close lid and set to manual high pressure for 5 minutes. After the pressure sets and it cooks for 5 minutes (total about 15 minutes), let pressure naturally release for about 5 minutes. Then, manually release remaining pressure being careful to avoid the steam. 

  5. Top with shaved Parmesan and season with salt and pepper if desired.
