111 MAIN STREET'S SWEET POTATO SOUP
1 large onion, diced
2 large carrots, diced
4 garlic cloves
1 Granny Smith apple, peeled, cored, diced
4 Tbsp. curry powder
5 large sweet potatoes, peeled
4 c. chicken stock
1/2 c. heavy cream
Salt, pepper to taste
Saute first 3 a few min. Add apples. When vegetables are soft, add curry powder and cook 5 min. Add sweet potatoes and stock. Cover and simmer 1 hour until potatoes are soft. Puree. Reheat and stir in remaining.
