Canned Tuna - Tuna-Garbanzo Salad
4 servings (serving size: about 2 cups salad and 2 toasts)

    2 quarts water
    1 teaspoon salt
    2 cups (1-inch) cut green beans (about 1/2 pound)
    1/4 cup finely chopped shallots (about 2 medium)
    2 fire-roasted piquillo peppers, chopped
    1 (15-ounce) can chickpeas (garbanzo beans), rinsed and drained
    1 garlic clove, minced
    3 tablespoons light mayonnaise
    2 tablespoons sherry vinegar
    1 teaspoon Spanish smoked paprika
    4 cups arugula
    1 (7.8-ounce) jar premium tuna, packed in oil, drained and flaked
    1/4 cup (1 ounce) grated fresh Parmesan cheese
    8 (1-ounce) slices French bread

    Preheat broiler.
    Bring 2 quarts water and salt to a boil. Add green beans; cook 4 minutes or until beans are crisp-tender. Drain and rinse with cold water; drain. Combine green beans, shallots, peppers, chickpeas, and garlic in a large bowl.
    Combine mayonnaise, vinegar, and paprika in a small bowl, stirring well. Add mayonnaise mixture to bean mixture; toss gently to combine. Arrange 1 cup arugula on each of 4 plates; top each serving with about 1 cup bean mixture. Divide tuna evenly among plates.
    Sprinkle cheese evenly over bread slices; place bread on a baking sheet. Broil 2 minutes or until lightly toasted. Serve toasts with salad.

 Lemon Vinaigrette

    2 tablespoons fresh-squeezed lemon juice (approximately 1 small
          lemon)*
    1/4 cup extra-virgin olive oil
    1/2 teaspoon Dijon-style mustard
    sea salt and pepper to taste

Whisk all ingredients together in a small bowl, or place in a jar and shake vigorously.

Store any leftovers in the refrigerator.

*To get the most juice: use a room temperature lemon and roll it firmly with your palm on the countertop a few times before cutting it.

Yield: 3/8 cup

Variations:
    Lemon Pepper Vinaigrette - add more pepper (about 1/2 teaspoon)
    Herbed Lemon Vinaigrette - add 1 teaspoon chopped fresh herbs or 1/4 teaspoon dried herbs
    Lemon-Paprika Vinaigrette - add 1/2 teaspoon smoked paprika
    Creamy Lemon Dressing - add plain yogurt
    add 1 teaspoon ground flax seed or flax seed oil for the health benefits

Note: Since the amount of juice from lemons varies, I just squeeze the lemon juice into a clear container, then add 2-3 times that amount of oil, add my other ingredients, and whisk together. If the lemon is way too shy on juice, I make up the difference with a little raw apple cider vinegar.

Sweet Asian

    1/3 cup olive oil
    3 Tablespoons apple cider vinegar
    2 teaspoons soy sauce
    2 teaspoons honey
    Pinch of dried ginger or 1/2 tsp fresh zested ginger root (preferable)
    Spices to taste

    Put all ingredients in small jar with lid and shake vigorously. You can also mix in blender or small food processor.

Great with: Sesame chicken (as a marinade and dipping sauce), on a spinach salad with cashews, on cauliflower fried rice.

    3 Tablespoons white wine vinegar
    1 small squirt of Dijon mustard
    1/4 cup olive oil
    1/2 tsp onion powder
    1-2 cloves finely minced garlic
    1/2 tsp each of thyme, basil and oregano
    Salt and pepper to taste

    Pull all ingredients in small jar and shake vigorously.

Great with: any salad or as a marinade.

Creamy Cilantro-Avocado Dressing

Makes: About 1 cup

    1/2 ripe avocado
    3/4 cup packed fresh cilantro
    1/2 cup nonfat plain yogurt
    2 scallions, chopped
    1 clove garlic, quartered
    1 tablespoon lime juice
    1/2 teaspoon sugar
    1/2 teaspoon salt

    Place avocado, cilantro, yogurt, scallions, garlic, lime juice, sugar and salt in a blender; blend until smooth.

Tips & Notes
    Make Ahead Tip: Cover and refrigerate leftover dressing for up to 3 days.

Creamy Blue Cheese Dressing

Makes: 1 1/4 cups

    1/3 cup reduced-fat mayonnaise
    1/3 cup nonfat buttermilk, or nonfat milk
    1/3 cup nonfat plain yogurt
    2 tablespoons tarragon vinegar, or white vinegar
    1 tablespoon Dijon mustard, mustard
    1/2 teaspoon salt
    1/2 teaspoon freshly ground pepper
    1/4 cup crumbled blue cheese, (1 ounce)

    Whisk mayonnaise, buttermilk (or milk), yogurt, vinegar, mustard, salt and pepper in a medium bowl until smooth. Add cheese and stir, mashing with a spoon until the cheese is incorporated.

Tips & Notes
    Make Ahead Tip: Cover and refrigerate for up to 1 week. Stir before using.

Makes: 1 cup

    1/2 cup buttermilk
    1/4 cup reduced-fat mayonnaise
    2 tablespoons champagne, or white-wine vinegar
    1/2 teaspoon granulated garlic
    1/2 teaspoon salt
    1/2 teaspoon pepper
    1/3 cup chopped fresh herbs, such as chives, tarragon, basil or dill

    Whisk buttermilk, mayonnaise, champagne (or white-wine) vinegar, garlic, salt and pepper in a small bowl until smooth. Stir in herbs.

Creamy Fish Chowder Recipe



WE were tired of the same old vegetable soup and I had on hand some fish that needed to be cooked, so this was the creation of our favorite fish chowder. Occasionally, I enhance it still further by adding another vegetable, such as corn or peas, to add to color and nutrition.





    Prep: 10 min.
    Cook: 30 min.
    Yield: 2-4 Servings


Ingredients


    1/3 cup chopped onion
    1 tablespoon butter
    2 cups chicken broth
    1-1/2 cups diced potatoes
    1/2 teaspoon salt
    1/2 teaspoon pepper
    2 tablespoons all-purpose flour
    2 tablespoons mashed potato flakes
    2 cups milk
    1/2 pound cod or haddock fillets, cut into 1/2-inch pieces
    2 tablespoons minced fresh parsley


Directions

    In a large saucepan, saute onion in butter until tender. Add the broth, potatoes, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 20 minutes or until potatoes are tender.
    In a bowl, combine the flour, potato flakes and milk until smooth. Stir into the potato mixture. Bring to a boil. Reduce heat; add fish and parsley. Cover and simmer for 5-10 minutes or until fish is opaque. Yield: 3-1/2 cups.

Favorite Fish Chowder Recipe


Economics had a lot to do with what we ate when I was growing up in New Hampshire during the Depression. Money may have been scarce, but fish was plentiful and affordable, so that's how we began eating this dish. When meat rationing came along in World War II, fish chowder again became a staple in our household. Fortunately, my family loved it...it still is one of my favorites!




    Prep: 10 min.
    Cook: 25 min.
    Yield: 16 Servings


Ingredients


    1 large onion, chopped
    1/2 cup butter, cubed
    4 cups water
    6 cups cubed peeled potatoes
    2 pounds cod fillets, cut into large chunks
    3 tablespoons lemon juice
    2 cups milk
    2 cans (12 ounces each) evaporated milk
    2-1/2 teaspoons salt
    2 teaspoons pepper
    Minced fresh parsley


Directions

    In a Dutch oven, saute onion in butter. Add water and bring to a boil. Add potatoes; cook for 10 minutes. Add fish and lemon juice; reduce heat and simmer for 10 minutes. Add milk, evaporated milk, salt and pepper. Sprinkle with parsley. Yield: 4 quarts.

Nutritional Facts 1 serving (1 cup) equals 192 calories, 8 g fat (5 g saturated fat), 48 mg cholesterol, 496 mg sodium, 16 g carbohydrate, 1 g fiber, 12 g protein.

New England Fish Chowder Recipe


This recipe was handed down by my mother, although I have changed it a bit. This really reflects our region, since New England is famous for its fish.

    Prep: 20 min.
    Cook: 25 min.
    Yield: 16-18 Servings


Ingredients


    1/2 cup butter, divided
    3 medium onions, sliced
    5 medium potatoes, peeled and diced
    4 teaspoons salt
    1/2 teaspoon pepper
    3 cups boiling water
    2 pounds haddock, cut into large chunks
    4 cups milk
    1 can (12 ounces) evaporated milk
    Additional salt and pepper, optional


Directions

    In a soup kettle, melt 1/4 cup butter over medium heat. Saute onions until tender but not browned. Add the potatoes, salt, pepper and water. Top with fish. Simmer, covered, 25 minutes or until potatoes are fork-tender.
    In a large saucepan, heat milk over medium heat until bubbles form around side of saucepan. Stir in evaporated milk and remaining butter; add to fish mixture. Season with additional salt and pepper if desired. Heat through. Yield: about 4-1/2 quarts.

Nutritional Facts 1 serving (1 cup) equals 193 calories, 9 g fat (5 g saturated fat), 57 mg cholesterol, 659 mg sodium, 15 g carbohydrate, 1 g fiber, 14 g protein.

Ingredients

    1 can (28 ounces) Hunt's® Diced Tomatoes, undrained
    1 can (15 ounces) tomato sauce
    1/2 cup chopped onion
    1/2 teaspoon garlic powder
    1/2 teaspoon celery salt
    1/4 teaspoon dried thyme
    1/8 to 1/4 teaspoon cayenne pepper
    2 bay leaves
    1 package (16 ounces) frozen mixed vegetables
    1 pound cod, cut into 3/4-inch pieces


Directions

    In a soup kettle, combine the first eight ingredients; cover and simmer for 10 minutes. Add vegetables; cover and simmer for 10 minutes.
    Add fish; cover and simmer for 8-10 minutes or until the fish flakes easily with a fork. Discard bay leaves. Yield: 8 servings (2 quarts).
