BLT EGG SALAD
MAKES 4 SERVINGS.

1/4 tsp each salt and pepper
12 oz cherry tomatoes
2 tsp oil
3 cups French bread, cut into cubes
4 eggs
4 bacon slices
4 cups torn lettuce

Heat broiler. Arrange bread on a baking sheet. Broil until browned. Combine bread, lettuce and oil, toss. Cook bacon in a skillet until crisp. Remove bacon from pan, reserving 1 tbs drippings, crumble bacon. Add tomatoes to drippings in pan. Cook until soft, remove from pan. Break eggs into pan, cook until desired doneness. Arrange 2 cups salad on each of 4 plates, top each with 1 egg. Sprinkle with bacon, salt and pepper, then SERVE...
