{soups-salads-and-salad-dressings} Mediterranean Tortellini (Salad)

 

MEDITERRANEAN TORTELLINI SALAD
MAKES 6 SERVINGS.

1/4 cup toasted pine nuts
1 cup sliced radishes
4 cups spinach
1 tbs Mediterranean herb seasoning blend
2 bags 14 oz each frozen tricolor tortellini
1/2 cup shaved Parmesan cheese
1 cup frozen peas, thawed
6 cups sliced Swiss chard
1 cup Italian dressing

Prepare tortellini according to package directions, rinse under cold water until cool. Drain. In bowl, combine dressing and seasoning blend. Add Swiss chard, spinach, peas, radishes, cheese and nuts to bowl with dressing mixture, toss. Arrange salad on platter, then SERVE...
