BAKED POTATO SOUP

Nothing better than a steaming hot bowl of baked potato soup to fill your tummy on a harsh winter day. This one is the best as far a we are concerned. The tender potatoes and the rich creamy soup, topped with cheddar and bacon. Doesn't get any better. Simply awesome.

READY IN: 1 hour 47 minutes

SERVES: 8-10

UNITS: US

INGREDIENTS

4 large baking potatoes (about 2 3/4 lb.)

2⁄3 cup butter or 2⁄3 cup margarine

2⁄3 cup all-purpose flour

3⁄4-2 teaspoon salt (to taste)

1⁄2-1 teaspoon pepper (to taste)

6 cups milk

1 cup sour cream

1⁄4 cup thinly sliced green onion

10 slices bacon, cooked and crumbled

1 cup shredded cheddar cheese

 

DIRECTIONS

1. Bake potatoes at 350 degrees for 65-75 minutes or until tender; cool completely.

2. Peel and cube potatoes.

3. In a large saucepan, melt butter; stir in flour, salt and pepper until smooth.

4. Gradually add milk.

5. Bring to a boil; cook and stir for 2 minutes or until thickened.

6.. Remove from the heat; whisk in sour cream..

7. Add potatoes and green onions; mix well.

8. Ladle into serving bowls; top with bacon and cheddar cheese.

Baked Potato Soup

What a great and easy recipe! This is the first time that I made homemade potato soup, it was soo easy and delicious. I brought it to a work potluck and it was a huge hit. It was the first time that I brought something and didn't have any to bring back home. Everyone asked me for this recipe. The only thing that I did different is that I didn't use green onions; instead I used some onion flakes. I also added garlic and paprika for more flavor. Thank you for posting this recipe. I thought this was much better than any restaurant that I have been to.

SERVES: 6

INGREDIENTS

12 slices bacon

2⁄3 cup margarine

2⁄3 cup all-purpose flour

7 cups milk

4 large baked potatoes, peeled and cubed

4 green onions, chopped

1 1⁄4 cups shredded cheddar cheese

1 cup sour cream

1 teaspoon salt

1 teaspoon ground black pepper

 

DIRECTIONS

1. Place bacon in a large, deep skillet.

2. Cook over medium heat until browned.

3. Drain, crumble, and set aside.

4. In a stock pot or Dutch oven, melt the margarine over medium heat.

5. Whisk in flour until smooth.

6. Gradually stir in milk, whisking constantly until thickened.

7. Stir in potatoes and onions.

8. Bring to a boil, stirring frequently.

9. Reduce heat, and simmer 10 minutes.

10. Mix in bacon, cheese, sour cream, salt, and pepper.

11. Continue cooking, stirring frequently, until cheese is melted.
