To begin your romantic dinner for two (I know the kid (s) are spending the evening with grandma and grandpa), open up a good bottle of red wine, and as you pour sweetie a glass, look her in the eyes and express your feelings of deep love, then get on with the meal, your both hungry, you can fool around later while sitting in front of the fire place (if you have one) watching Sleepless In Seattle with Tom Hanks as Sam Baldwin and Meg Ryan as Annie Reed.  Man I love that movie (along with An Affair To Remember with Cary Grant and Deborah Kerr)!

Total Time: 10 minutes; Serves 2

 

Ingredients

4 cups baby salad greens

1 carrot, peeled and sliced

2 green onions, chopped

6 strawberries, hulled and sliced

12 fresh raspberries

1 teaspoon minced garlic

1/4 cup chopped walnuts

1/4 cup seasoned almond slices

1/4 cup dried currants

1/4 cup crumbled feta cheese

1/2 cup seasoned croutons

1/2 cup herbed vinaigrette salad dressing, or to taste

 

Directions

In a large bowl, toss together the salad greens, carrot, green onions, strawberries, raspberries, garlic, walnuts, almond slices, currants and feta cheese. Divide between two salad bowls. Top each bowl with some croutons and serve with vinaigrette dressing.

Beef Tenderloin In Mushroom Sauce 100218 Special

Makes: 2 servings; Total Time: Prep/Total Time: 25 minutes.

 

Ingredients

4 tablespoons butter, divided

1 teaspoon canola oil

2 beef tenderloin steaks (1 inch thick and 4 ounces each)

1 cup sliced fresh mushrooms

1 tablespoon chopped green onion

1 tablespoon all-purpose flour

1/8 teaspoon salt

Dash pepper

2/3 cup chicken or beef broth

1/8 teaspoon browning sauce, optional

 

Directions

In a large skillet, heat 2 tablespoons butter and oil over medium-high heat; cook steaks to desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°), 5-6 minutes per side. Remove from pan, reserving drippings; keep warm.

In same pan, heat drippings and remaining butter over medium-high heat; saute mushrooms and green onion until tender. Stir in flour, salt and pepper until blended; gradually stir in broth and, if desired, browning sauce.

Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Serve with steaks.

White Chocolate Strawberry Tiramisu 100218 Valentine's Special

Makes: 15 servings; Total Time: Prep/Total Time: 30 minutes.

 

Ingredients

2 cups heavy whipping cream

1 package (8 ounces) cream cheese, softened

1/2 cup (4 ounces) mascarpone cheese

9 ounces white baking chocolate, melted and cooled

1 cup confectioners' sugar, divided

1 teaspoon vanilla extract

2 packages (3 ounces each) ladyfingers, split

2/3 cup orange juice

4 cups sliced fresh strawberries

Chocolate syrup, optional

Directions

In a large bowl, beat cream until soft peaks form. In another bowl, beat cheeses until light and fluffy. Beat in cooled chocolate, 1/2 cup confectioners' sugar and vanilla. Fold in 2 cups of the whipped cream.

Brush half of the ladyfingers with half of the orange juice; arrange in a 13x9-in. dish. Spread with 2 cups cream cheese mixture; top with half of the strawberries. Brush remaining ladyfingers with remaining orange juice; arrange over berries.

Gently stir remaining confectioners' sugar into remaining cream cheese mixture; fold in remaining whipped cream. Spread over ladyfingers. Top with remaining strawberries. Refrigerate until serving. If desired, drizzle with chocolate syrup before serving.
