{soups-salads-and-salad-dressings} STRAWBERRY FIELDS SALAD

 

It’s exactly two weeks from the first of my two surgeries.  Two weeks from today, they will remove the unsuccessful fusion done by a different doctor in 2014.  He used screws that were too long and have penetrated veins so a vascular surgeon must be on hand in case of extreme bleeding.  The next day, they will try to rebuild my crooked, bulging discs and spine.  It’s getting real folks, and this is one of those times I wish I was more like my “Winnie the Pooh” mom instead of Eyeore!!!!!!!!!!!!!!!!!!!!  I find myself telling Jim and Sarah how to notify people, etc. just in case.  I don’t want to be an Eyeore.  I want to be Pollyanna!!!!!!!!!!!

Anyhow, over the weekend, I managed to find five new recipes to share with you.  Enjoy!

 

STRAWBERRY FIELDS SALAD

Strawberry Fields Salad recipe is inspired by the one at Wendy's. Full of greens, grilled chicken, strawberries and balsamic dressing.

Total Time: 20 minutes

Ingredients

1 (5 oz) bag Spring Mix greens

1 pint fresh strawberries, thinly sliced

1/2 red onion thinly sliced

1/4 cup dried berries (cranberries or cherries)

1/2 cup Feta cheese crumbles (Not Jodi.  Some other kind please!)

1/2 cup praline pecans

6 slices bacon, cooked and crumbled

2 grilled chicken breasts, sliced (One could also use store bought rotisserie chicken.)

1 bottle Balsamic Salad Dressing (Suggested Marzetti refrigerated dressing in the produce isle.)

 

Instructions

1.. Place spring mix greens into a large bowl or large platter. Remove tops of strawberries and slice thinly. Thinly slice red onions.

2. Pro Tip: When using raw onions, soak the sliced onions in ice water for a few minutes before serving. This will help with the onion tasting too pungent and overpowering the rest of the dish.

3. Add sliced onions to salad and sprinkle with dried berries, Feta cheese crumbles, praline pecans, sliced strawberries, bacon and sliced chicken.

4. Then drizzle balsamic vinaigrette dressing on top (as little or as much as you like.)
