Mixed Tomato And Halloumi Salad
Jodi just LOVES Halloumi cheese. I love the texture of it fried gently in butter! Garlic butter even better!

Cook time: 2 minutes

6 or 7 cups mixed tomatoes, halved
250 grams – 9 oz. Halloumi cheese
Extra virgin olive oil for pan frying
3 Tbsp. extra virgin olive oil
3 Tbsp. lemon juice
1 Tbsp. honey
1 tsp. oregano
1 pinch salt
Mix all the ingredients together and keep aside.
Cut the Halloumi cheese in 1 cm – 1/2 inch thick slices. Pan fry them for a couple of minutes in a pan with extra virgin olive oil. Keep them on a plate covered with kitchen paper to absorb the excess oil.
Put the halved tomatoes, pan fried Halloumi and basil leaves in a bowl and toss them with the vinaigrette.
As you waste your breath complaining about life, someone out there is breathing their last.
