{soups-salads-and-salad-dressings} MIXED TOMATO AND HALLOUMI SALAD


The heavy influence of Heirloom tomatoes is big in my heart right now.  They are SO GOOD, I absolutely LOVE them, AND today is Farmer’s Market Day!!!!!  ;-)

I have a fasting blood appointment as soon as I get my face applied, then go eat and go back at 11:45.  THEN I’m going to the Farmer’s Market, and then Aldi’s for the Ice Cream Store.  You all have a great Thursday.  See you tomorrow.  Jodi

Mixed Tomato And Halloumi Salad 

Jodi just LOVES Halloumi cheese.  I love the texture of it fried gently in butter!  Garlic butter even better!

Prep time: 10 minutes

Cook time: 2 minutes

Total time: 12 minutes

Serves: 4



6 or 7 cups mixed tomatoes, halved

250 grams – 9 oz. Halloumi cheese

Extra virgin olive oil for pan frying

Basil leaves



3 Tbsp. extra virgin olive oil

3 Tbsp. lemon juice

1 Tbsp. honey

1 tsp. oregano

1 pinch salt




Mix all the ingredients together and keep aside.


Cut the Halloumi cheese in 1 cm – 1/2 inch thick slices.  Pan fry them for a couple of minutes in a pan with extra virgin olive oil. Keep them on a plate covered with kitchen paper to absorb the excess oil.

Put the halved tomatoes, pan fried Halloumi and basil leaves in a bowl and toss them with the vinaigrette.

Serve immediately.
