Ingredients

6 C. peeled, diced, cooked red potatoes
1/3 C. vinegar or lemon juice
1/3 C. chopped green onions
1/4 C. melted butter
1 Tbs. chopped fresh dill, or to taste
1 tsp. sugar
1 1/2 C. sliced celery
1 1/4 C. sour cream
3/4 C. chopped orange or red pepper

Directions

Combine potatoes, vinegar or lemon juice, onions, melted butter, dill and sugar; toss well. Microwave at high (100%) for 2 minutes or until warm. Cover and let stand 1 hour to blend flavors. Just before serving, stir in celery, sour cream, and chopped pepper. Add salt and pepper to taste.

Yield: 8 servings
