Chicken and herb salad with onion mayonnaise chicken breast

Ingredients
For the salad
1 ready-cooked chicken breast, roughly chopped
handful fresh sage
handful fresh coriander
handful fresh parsley
handful fresh mint
handful fresh dill
handful fresh basil
For the onion mayonnaise
3 free-range egg yolks
2 tbsp caramelised onions from a jar
½ tsp white wine vinegar
salt and freshly ground black pepper
150ml/5fl oz olive oil


Method
1. For the salad, mix together the chicken and herbs in a clean bowl, and set aside.
2. For the onion mayonnaise, place the egg yolks, onion and white wine vinegar into a food processor and blend until smooth. Season, to taste, with salt and freshly ground black pepper. Once it looks slightly thickened begin to gradually add in the olive oil, blending constantly.
3. To serve, mix the onion mayonnaise into the salad.
