Curry-Cranberry Spinach Salad

TOTAL TIME: Prep/Total Time: 10 minutes.

YIELD: 5 servings

Ingredients

·                                 5 cups fresh baby spinach

·                                 1/4 cup pine nuts

·                                 3 tablespoons dried cranberries

·                                 1 tablespoon sesame seeds

·                                 1/4 cup packed brown sugar

·                                 1/4 cup rice vinegar

·                                 1/4 cup olive oil

·                                 1 tablespoon soy sauce

·                                 2 teaspoons dried minced onion

·                                 1/2 teaspoon curry powder

·                                 1/4 teaspoon salt

Directions

·                                 1. In a salad bowl, combine the spinach, pine nuts, cranberries and sesame seeds. In a small bowl, whisk the remaining ingredients. Drizzle over salad and toss to coat. Serve immediately. 

Nutritional Facts: 1 cup: 214 calories, 15g fat (2g saturated fat), 0 cholesterol, 332mg sodium, 19g carbohydrate (14g sugars, 1g fiber), 3g protein.
