                           FESTIVAL RICE SALAD

  2               cups  cooked chilled brown rice
     1/2           cup  king crab -- or lobster
     1/2           cup  slivered ham
     1/2           cup  celery -- finely chopped
  2                     hard cooked eggs -- finely chopped
  1         tablespoon  chives -- chopped
     1/4           cup  parsley -- chopped
  1         tablespoon  olive oil
  1         tablespoon  wine vinegar
     1/2           cup  mayonnaise
                        salt and pepper -- to taste

1.  Combine all ingredients by tossing lightly except oil, vinegar and mayonnaise.  Sprinkle oil and vinegar over mixture.  Add mayonnaise and season to taste.  Refrigerate for several hours for enhanced flavor.
