Papa McElhenny's Chicken Salad

 

"Morton Home Cookin: Big Taste From a Small Town", Morton Chamber of Commerce, MS

 

2 chickens, boiled and deboned

3 apples, peeled

4 oranges, peeled

1 1/2 cups red seedless grapes

3 to 4 eggs, boiled

1 cup mayonnaise, more if desired

Salt to taste

Orange juice

 

Chop chicken, apples, oranges, grapes and eggs. Combine with mayonnaise and salt. Squeeze a little orange juice over salad and stir. Store in refrigerator. Good with Ritz crackers.
