                          FIESTA VEGETABLE SALAD

  1       (0.3 oz.) box  sugar-free lime flavored jello
  1                cup  boiling water
     1/3           cup  fat-free mayonnaise
     3/4           cup  skim milk
  1           teaspoon  prepared horseradish
  1         tablespoon  vinegar
     1/2           cup  celery -- grated or chopped
     1/2           cup  cabbage -- grated or chopped
     1/2           cup  carrots, -- grated or chopped
  2        tablespoons  green pepper -- chopped
  2        tablespoons  pimiento -- chopped

1.  Dissolve gelatin in boiling water, add mayonnaise and stir with wire whip until mayonnaise is dissolved.  Add remaining ingredients.  Mix well.  Refrigerate until set, about 2 to 3 hours.
