                             EASY RICE SALAD

  3               cups  brown or white rice -- cooked
  1                cup  mayonnaise
     1/3           cup  sweet pickle relish
  1        (2 oz.) jar  pimientos -- drained, and diced
  1           teaspoon  prepared mustard
     1/2      teaspoon  salt
     1/4      teaspoon  pepper
  1             medium  onion -- finely chopped
  1       medium stalk  celery -- chopped
  4                     eggs -- hard cooked, chopped

1.  Mix all ingredients.  Cover and refrigerate about 2 hours or until chilled.  Serve on salad greens if desired.
