Stuffed Pepper Soup
 
Makes 10-12 servings
 
1 1/2 lbs ground beef
2-3 Tbsp margarine
2 1/2 c beef broth
2 (10 3/4 oz) cans tomato soup
1 (15 oz) can diced tomatoes
1 onion, chopped
2 stalks celery, chopped
2 green peppers, chopped
2 cloves garlic, diced
dash sugar
salt and pepper to taste
1 c cooked rice
 
In a stockpot over medium heat, brown beef in margarine; drain well.  Add remaining ingredients except rice; mix well.  Reduce heat to low; cover and simmer for 45 minutes.  Stir in rice and simmer an additional 15 minutes.
