"Pumped Up" Potato Salad

This is a really neat way to "pump up" your salad. We wonder why we didn't think of it before now!

Ingredients
6 large white potatoes
12 ounces tuna in water -- drained and flaked
1 cup chopped celery -- (2 stalks)
1/2 cup chopped red bell pepper
1/3 cup chopped scallions -- (1 to 2 scallions)
2 cups mayonnaise
1 tablespoon white vinegar
1 teaspoon dried dill
1/2 teaspoon salt
1/2 teaspoon black pepper

Procedure
1. Place potatoes in a large pot and add just enough water to completely cover them. Bring to a boil and cook 35 to 40 minutes or until potatoes are fork-tender; drain and cool.

2. Peel potatoes and cut into 1-inch chunks; place chunks in a large bowl and add remaining ingredients. Mix until potatoes are completely coated.

3. Cover and chill at least 2 hours before serving.
