Grilled Chicken Salad
 
  • Servings: 2
  • Prep Time: 10 minutes
  • Cook Time: 10-15 minutes
  • Total Time: 25 minutes
  • Ingredients:
    2 Bowls Mixed Lettuce, such as romaine, iceberg
    Green Onions
    Tomato Wedges
    2 Boneless, skinless chicken breast halves
    2 Tbsp Melted Butter
    California-style Garlic Salt/parsley
    Montreal or Quebec Chicken Seasoning
    Shredded Cheddar Cheese
    Your Favorite Salad Dressing
    Real Bacon Bits, optional
    Croutons
    Directions:
    Prepare the salad with the lettuce, onions, & tomato wedges, & set in fridge while you cook the chicken.
    Place the chicken breasts on outdoor grill & cook one side about 5 or 6 minutes, or roast in 400° oven. Cook until about half-done.
    Turn chicken over & brush with butter; sprinkle with the two seasonings, & continue cooking until just done, no longer, or it will be dry.
    Remove from heat; lay chicken on cutting board & let set a few minutes for the juices to redistribute.
    Now, cut the chicken breast on an angle into strips & place on the cold salad while chicken is still warm.
    Top with the shredded cheese, your favorite salad dressing (I like either ranch or 1000 Island on mine), croutons & real bacon bits.
    Helpful Tips:
    This is a perfect summer meal.
