{soups-salads-and-salad-dressings} Cheddar and Pea Salad

 

5 cups salad greens
1 medium cucumber, sliced
1 medium tomato, chopped
1 cup cubed cheddar cheese
1/2 cup frozen peas, thawed
2 Tablespoons vegetable oil
1 Tablespoon white vinegar
1/4 teaspoon sugar
1/8 teaspoon onion powder
dash of salt and pepper

In a large bowl, combine the salad greens, cucumber, tomato, cheese and peas.

In a jar with a tight- fitting lid, combine oil, vinegar, sugar, onion powder, salt and pepper; shake well. Drizzle over salad and toss gently. Serve immediately.

Makes 8 servings
