{soups-salads-and-salad-dressings} layer salad - a little different

 

LAYER SALAD
 
1 head lettuce - shredded
1 10 oz package frozen peas - thawed and drained
2 med green peppers - diced
1 med RED onion - chopped
2 - 8 oz cans water chestnuts
3 med carrots - grated
 
Line a 9 X 13 pan or glass bowl with shredded lettuce. Layer remaining ingredients in the order given.
 
TOPPING
2 cups mayo
1 cup sour cream
5 Tbsp Sugar
 
Mix above together and spread evenly over salad to cover. Refrigerate overnight.
Just before serving sprinkle with
 
3/4 pound shredded cheese
3/4 pound cooked and crumbled bacon
 
 
TO SAVE ON CALORIES AND FAT
I use light mayo and sour cream, 6 packets of Equal, LOW FAT CHEESE and BACOS
 
I always use only Hellmann's mayo ( A caterer once told me that the best and to only use that)
 
You will get rave reviews
 
VARIATIONS:
You can add
1  15 oz can crushed pineapple - well drained
and/or
2 4 oz cans sliced well drained mushrooms
