Loaded Veggie Avocado Tuna Salad


  1. 3 6-ounce cans wild-caught albacore tuna, drained
  2. 1 large avocado, diced
  3. 2 tablespoons spicy brown mustard (I love Trader Joe's!)
  4. 1/2 medium apple, finely chopped (I used Gala)
  5. 1/2 small red onion, finely diced
  6. 2 celery stalks, finely chopped
  7. 1 medium carrot, finely chopped
  8. 1/2 medium cucumber, de-seeded and chopped
  9. 1 cup baby spinach, chopped
  10. Salt and pepper, to taste


  1. Place drained tuna in a medium bowl. Add avocado and spicy brown mustard and mash together well with a fork.
  2. Add the rest of the ingredients and stir well to combine. Season with salt and pepper to taste.
  3. Serve over spinach, in romaine leaves, or on whole-grain bread.
